Ragi is also known as finger millet or red millet in English. Ragi peanut ladoo is healthy sweet recipe prepared using jaggery. Ragi is rich source of fiber and helps lower cholestral levels. Ragi is best food for cooling the body. My mom use to prepare ragi malt with homemade ragi powder. In our today's recipe we are using peanuts and almonds along with ragi flour. Jaggery boosts resistance against infections which is good for our health in this season.

Ingredients
Ragi flour - 2 cups
Peanuts - 1 cup
Almonds - 1/2 cp
Jaggery - 11/2 cups
Elachi - 5
Ghee - 1 cup
Cashew nuts - 12
Instructions to prepare Ragi Peanut Ladoo
1) Take a pan add peanuts.
2) Fry peanuts on medium - low flames till it turns brown and take it into plate and let it cool.
3) In the same pan add 4 tsp of ghee, then add cashew nuts fry it on low flames till it changes color and take it into plate.
4) Now add ragi flour in the remaining ghee .
5) Fry the above ragi flour in low flames till it changes color and take it into plate.
6) Remove the peanut skin.
7) Take a mixer jar add peanuts, almonds and elachi grind it into coarse powder. Take a bowl add fried ragi flour and peanut almond powder mix it well.
8) Take a pan add grated jagerry along with 1/4 cup of water. (increase jaggery as per your quantity).
9) Let the jaggery melt then strain it in another pan inorder to remove impurities. Add 1tsp of ghee and heat the syrup till you get soft ball consistency.(Drop little syrup in cup of water if the syrup form ball consistency then its right time to mix flour).
9) Then add the syrup into flour mix it well using ladle.
10) Add fried cashew nuts to the above and mix everything well.
11) Start moulding ladoos by adding little amount of ghee.
12) Apply ghee to your palms take good amount of flour and satrt moulding ladoos.
13) Some creative thought while moulding ladoos😉🤗.
Yummy, tasty and healthy Ragi peanut ladoos are ready to serve😋😋.
Store ladoos in air tight container to increase ragi ladoo shell life.
Note
◆ You can also add Sesame seeds and dry coconut. Dry fry both and grind coarsely along with peanuts and almonds.
◆You can also increase the quantity of almonds as per your availability.
Tips
● If you delay moulding ladoos, the flour become dry.
● To increase the shell life of ragi peanut ladoos prepare soft ball consistency of jaggery syrup.
● Grease your palm with ghee while moulding ragi peanut ladoo.
