Udupi Saaru || Udupi style tomato rasam || How to prepare udupi style tomato charu

Udupi Sarru || Udupi tomato saaru || Udupi style tomato saaru with step by step pics and tips. It is tasty and aromatic saaru recipe from udupi Brahmin cuisines. My father is from Udupi, he loves this saaru/ rasam / charu a lot, we use fresh scrapped coconut a lot in our daily recipes. Are you thinking what special in udupi saaru? the answer is its aromatic flavors from rasam powder, curry & coriander leaves added while boiling rasam, taste of jaggery and coconut oil and scrapped / grated coconut added at last. If you want to skip adding coconut and jaggery in this rasam then surely you miss that udupi saaru taste. In temple rasam, they do not add tomatoes, our saaru taste same as served in temples. For South Indian people rasam is one recipe we never say no to it. If Homemade rasam powder is ready, you can prepare drumstick rasam, tomato rasam easily. Pepper rasam is very tasty and healthy recipe which heals cold and gives good relief too. Lemon rasam is very easy to prepare rasam that can be prepared easily without any rasam powder too, check out lemon rasam in youtube.


Taking this aromatic and tasty udupi saaru to Shhhhh Secretly Cooking Challenge fb group started by Priya of Priyas Versatile Recipes and taken further till date by Mayuri di who blogs at Mayuris jikoni. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it. This week theme suggested by Jayashree Trao, she is very talented chef and also author of cookery e-books found on Amazon.  I bookmarked her watermelon rind salad recipe to try in this summer. This week i am paired with Anu kollon, she gave me fenugreek and coconut as two ingredients, with that i prepared this udupi saaru. In return i gave her coconut and green chillies.                                                                 Udupi saaru 

Preparation time : 15 min
Cook Time : 30 minutes
Serves : 1 bowl

Ingredients

To prepare saarina podi / for rasam powder

coriander seeds - 2 tsp
cumin seeds - 1 tsp
fenugreek seeds/ menthulu - 1/4 tsp
red chillies - 5
curry leaves - 1 sprig
coconut oil - 1 tsp

To prepare udupi rasam

cooked toor dal - 1 cup
Tomato - 2
green chillies - 3
turmeric powder - 1/4 tsp
curry leaves - 1 sprigs
coriander leaves - 3 tsp(chopped)
scrapped/grated fresh coconut - 1/4 cup
tamarind - small lemon size
salt a per taste
jaggery - 1/2 tsp

For tempering

coconut oil / ghee - 1 tsp
mustard seeds - 1/2 tsp
cumin seeds - 1 tsp
curry leaves - 1 sprig
red chili - 1
hing - 1 pinch

Instructions

1) Soak toor dal for 30 minutes and cook it for 5 to 6 whistle and mash it well. Also soak tamarind in water, chop tomatoes and green chillies keep it aside.

2) Heat a pat, add 1 tsp coconut oil add coriander seeds fry it on low to medium flames. When it starts changing color add fenugreek, cumin seeds fry for a second, now add red chili and curry leaves. Fry everything well and take it into plate. let it cool for room temperature.




3) Take the above in mixer jar and grind it to fine powder.



4) let's start rasam now , add 1/2 tsp of coconut oil in a pan, then add tomatoes, green chili, curry leaves, coriander leaves fry it on low to medium flames till tomatoes becomes bit smooth, now add 1 glass water boil water till tomatoes float up.



5) Now add boiled and mashed toor dal boil for some time then add tamarind pulp to boil it for 3 minutes on medium flames. 



6)  add 11.2 glass water(adjust accordingly), above prepared 3 tsp of saaru podi / rasam powder , 1/2 tsp jaggery boil rasam till you get nice foam on it. 

                                                  


7) At last add chopped coriander leaves and scrapped fresh coconut boil for a minute and switch off the flames.


8) Heat a tempering bowl with 1 tsp of coconut oil / ghee, add all ingredients mentioned in tempering one after other fry it on low flames.


9) Add above tempering  in rasam.

  That's it our Udupi special rasam/ saaru is ready to serve. Serve hot with hot steamed rice. We had this saaru with rice and potato curry, it tasted very yummy.

                  

Tips

** Adding coconut and jaggery is optional but i prefer to add it, to get exact rasam recipe.

** You can store saaru podi / rasam powder in air tight container, we can use to in joggu avalaki and in other curry recipes too.

** Do not boil rasam for long time.

** Add correct amount of tamarind juice, to get good rasam taste.

** Add saaru podi according to your taste.

Lemon Rasam || నిమ్మకయ చారు || South Indian lentil based lemon soup

Lemon Rasam with step by step pics, tips and video. Lemon Rasam is also know as నిమ్మకాయ చారు / nimmakaya charu  in Telugu, elumichikai rasam in Tamil. It is South Indian lentil based soup which is lite on tummy and very soothing too. We have this lemon rasam with hot steamed rice with some veggie fry and papads. It is very easy to prepare this rasam, we can prepare this rasam in different ways.

 Today i am sharing the one which we regularly prepare at home. I learned this recipe from my pedamma Kasturi, i did same changes, she pressure cook dal , tomatoes and chili, i do it separately. Lemon Rasam is thin and watery, we can have it as soup too. We can add onions and ginger in this rasam, i do not add any rasam powder in this lemon rasam, if you want you can add it. This lemon rasam is not spicy, as we are using lemon, no need to add tamarind. This rasam is perfect for bachelors, working people as you can prepare it in jiffy.                                                    Lemon Rasam || Nimmakaya charu  

Preparation time  - 5 minutes
cook Time : 15 minutes
Serves :1 bowl
Category : Rasam

Ingredients

Cooked toor dal - 3/4 cup
Lemon - 11/2 small or 4 tsp  
oil -  1/2 tsp
Tomatoes -2 
green chillies - 4
curry leaves - 1 sprig
coriander leaves - 2 tsp chopped
salt as per taste
turmeric powder - 1/4 tsp

For tempering

oil / ghee- 1 tsp
mustard seeds - 1/2 tsp
cumin seeds - 1 tsp
red chili - 1
curry leaves - 1 sprig
hing - 1 pinch


Instructions

1) Wash and soak toor dal / kandi pappu for 30 minutes. Then pressure it for 5 whistles by adding turmeric powder and 1/2 tsp oil. Chop tomatoes, green chillies and keep it aside.



                              

2) Take a kadai / pan add 1 tsp of oil add tomatoes, green chili fry once, add some curry leaves and coriander leaves.


3) Now add salt and turmeric powder and let tomato cook well.



4) Now add 1 big glass of water to the above and boil for some time tomatoes boil well.


5) Add cooked and mashed toor dal to the above boiled tomato mixture and add 1 glass of water. Add salt if need, boil it for 3 to 5 minutes or till you get good foam on rasam. Here you can also add Rasam Powder ,i did not added.




6) Our basic rasam is ready, keep it aside. It's time to add tempering. Take small tempering bowl add 1 tsp of oil/ ghee. let it heat for a second then add mustard seeds, when it starts crackling add cumin seeds, red chili, curry leaves and hing. Mix everything well and add tempering immediately in rasam.


7) Squeeze lemon juice in  the above tempered rasam and mix everything well. Add remaining coriander leaves to it.(**Check tips)



That's it very tasty, aromatic and lemony taste rasam is ready to serve. I prepared banana stem curry / arati doota kura(some edited version of it
), fried some urad dal fritters / urad dal badi / మినప వాడియాలు, cooked toor dal / mudda pappu, curd and banana. Do we need anything more than this 😍😋. 


Tips

** You can use both toor dal and moong dal .

** You can add rasam powder, ginger in it.

** This lemon rasam will be thin and watery, then only it taste good.

** You can use ghee for tempering.

** Main tips is do not add lemon while boiling rasam and do not preheat it , as rasam will become bitter.

** Do not add lemon juice all at once.

Coming to our cake , it is very tasty and easy to prepare cake recipe. You require only 4 ingredients to prepare this cake. In this lock down period it is tough to get cakes on special occasions, try this cake surely your family will love it. If you are beginners then this is the perfect cake recipe for you. Check out tips, surely it will help you to get perfect cake.
Let's start recipe.....


Today i am using bourbon biscuits you can use any chocolate cream biscuits of your choice. As it contain cream and sugar on it, i did not added any extra sugar in it. I used eno, you can use 1 tsp of baking powder instead of eno.  You can use dry fruits of your choice or you can simply skip it to make it 3 ingredient bourbon biscuit cake. I am baking this in a wide pan , you can also bake it in pressure cooker by removing gasket and whistle or even in oven.

Preparation time - 15 minutes
cook Time : 45 minutes
Serves : 1 cake

Ingredients

Bourbon biscuits - 2 packs
milk - 3/4 glass approx
eno - 1
almonds - 10



Instructions

1) Preheat a wide pan or a pressure cooker and adding some salt and by placing stand. (i missed my stand somewhere while transferring, so i am using small old plate). Preheat for 10 minutes on medium to high flames by closing lid. 



2) Take a mixer jar, cut biscuits into pieces and grind it to fine powder.





3) Take a baking vessel/ tray grease it with oil , place baking paper on it and keep it aside.


4) Take biscuit powder into bowl add milk little by little and mix it well using whisk, spoon or hand blender.


5) Batter should not be very thick or thin, it should in poring consistency.



                           

6) now add 1/2 part of finely chopped almonds (you  can use nuts of your choice) and mix well. 
 


7) now add eno powder , now add 1 tsp of milk. Foam will generate, you mix it well for once and immediately pour it in baking tray.



7) Tap the tray twice (so that bubbles do not form) and place it in preheated pan and bake it on medium to high flames for 5 minutes and on low flames for 30 minutes.

                    

                   

8) After 30 minutes open the lid, insert tooth pick or sharp side of knife, if it comes out easily without sticking any batter it means our cake is ready. 


9) You can see the gap between cake and tray, it is baked perfectly.


 10) Scratch the edges of cake with knife carefully and place plate on it and reverse the tin. Tap on tray our cake will come out easily. remove the baking paper on it.



That's it fluffy, spongy and delicious bourbon cake is ready to serve. Enjoy it with your friends and family.

 
Tips

** You can use any bourbon variety cream biscuit.

** Instead of eno, you can use 1 tsp baking powder. 

** You can skip adding almonds or you can add cashew nuts, raisins, walnuts, choco chips of your choice. 

** Before starting cake preparation preheat pan or pressure cooker or oven. Otherwise cake will take long time to bake and you do not get the perfect texture. 

** Do not mix milk all at once, add little by little. As batter may became too thin.

 ** Use non fruit flavor of eno.

 ** Do not mix batter long time after adding eno, transfer immediately after mixing it, in order to get fluffy texture. 

** Do not bake on high heat, bake on medium flames for 5 minutes and later on low flames for 25 to 30 minutes.

 **Do not open lid to check in middle, your cake will goes down in the middle. 

** If cake does not bake in 30 minutes that means that your pan is preheated properly, just bake it on medium to high flames for 10 more minutes, surely it will bake.

 ** Do not insert spoon or wide knife to check just insert tooth pic or sharp edge of knife, so that cake texture will remain same without big holes on it. 

** use sharp knife to scratch cake, do not force it, it will come out easily.
