Momos Chutney, Sikkim Momos Chutney, how to prepare Sikkim's red chili dipping sauce for momos

Hi friends, how are you all ? i am back after short break with hot and fiery "momos chutney" || "Sikkim momos chutney" || "red chili dipping sauce for momos". I tasted veg momos @Bhubaneswar with this hot and spicy momos chutney. I liked chutney more than momos at first, so i tried it in my starting days of cooking. Other than momos we can also have this momos sauce with other snacks like tikki's, chaats and even with dosa's(i liked it 😋).  This chutney tastes very spicy when we have it at restaurants, so we can adjust its spicy taste at home by adding sugar so that kids too will enjoy it. This momos chutney taste spicy, sweet, tangy and pungent. We can prepare this momos chutney in many variations, red chili is the main ingredient to get spicy taste and we can also add sugar to cut down spicy, finely chopped ginger - garlic pieces in middle, for sourness we use vinegar or lemon juice and adding soya sauce adds different Chinese taste to the chutney/sauce. 



  Taking this delectable and mouth melting "Momos Chutney" to Shhhhh Secretly Cooking Challenge fb group started by Priya of Priyas Versatile Recipes and taken further till date by Mayuri she blogs at Mayuris jikoni.  Here admins will select one Indian state in alphabetical order. And they pick pairs for theme, pairs will share 2 ingredients, using that ingredients we will prepare recipe and post it in group album. Other group members will guess the secret ingredient.          
                                                                                                                                         

 For August month we bloggers posting Sikkim recipes. Sikkim is a state in northeastern India, it is smallest state after Goa. Momos is very popular Nepalese treat in Sikkim, thupka, seal roti, gundruk is some of the popular dishes in Sikkim(information from wiki).  For this Sikkim cuisine  i am paired with Priya Iyer, she blogs at "https://thephotowali.wordpress.com", do visit her space for super delicious, very tasty recipes from different regions. I love her writing, photography a lot and always tries to adopt it. she is the person who helped me to join in this talented group :). Priya is multi talented, very talented chef, content writer, editor, she write reviews and she love photography and travelling. I gave peanuts and garlic as 2 secret ingredients, with that she prepared very tasty "Momos Achar || Peanuts chutney" for momos.  In return Priya gave me soya sauce and lemon juice with that i prepared this spicy and tasty "momos chutney".  Adding these 2 ingredients gave lipsmacking taste to momos chutney. Let's start recipe...

                                  Momos Chutney


Preparation Time: 5 minutes
Cook Time : 15  minutes
Serves : 4 people

Ingredients

tomatoes - 3
water - 2 glasses
red chili -5
oil - 1 tsp
ginger pieces - 1 tsp
garlic - 4
soya sauce - 1 tsp
lemon juice - 1 tsp
sugar - a pinch(optional i did not added)
salt - as per taste

Instructions

1) Wash tomatoes and slightly cut the skin using knife as shown below. 



2) Add 2 glasses of water in a pan/kadai add red chilies and tomatoes boil it for 5 minutes or till tomatoes starts peeling its chutney.




3) Removes above tomatoes and red chili out from water let it cool  then peel tomatoes skin and grind it fine paste.




4) Heat a pan with 1 tsp of oil add finely chopped ginger garlic pieces fry till it changes color then add soya sauce fry it on low flames without burning.





5) Now add tomato chili paste to the above add salt and fry it well then add lemon juice or vinegar to the above and mix everything well.





That's it super spicy, hot and fiery momos chutney is ready😋 to serve with momos. Store it in air tight container and enoy it.

Tips

** Add a pinch of sugar to cut down spicy or when serving kids.

** Adjust red chillies according to your taste.

** Add salt carefully as soya sauce contains salt.

** Instead of lemon juice you can also add vinegar.

Pundi || Undi || How to prepare Mangalorean Pundi recipe

Today's special recipe is Pundi or Undi or Pundi Gatti, rice dumpling from Udupi - Mangalore cuisines. It is prepared using rice rava most probably idli rava. We can have it with coconut chutney or with any Kara (spicy )chutney's. I had it with ripped red chilli chutney it tasted very yummy. We can have it as breakfast or as evening snack. It is very tasty and easy to prepare, we can prepare it with idli rava or by soaking and grinding rice, today I used idli rava.  



I checked recipe from hereI tasted it once in udupi, thinking to try it from many days. But now I got chance to prepare for #209ThindiYenu theme in #FoodieMondayBloghop fb group. This week theme is suggested by me 😍, I suggested to prepare any Karnataka breakfast recipe, waiting for all yummy recipes from my blogger friends. #FMBH fb group is such a lovely platform with very talented and wonderful chef's every member in group are very friendly, learning many things from them. I am getting chance to learn many different recipes from different regions, so I am feeling very lucky to be part of this group.    
                     

                           Pundi || Undi 




Preparation Time : 5 minutes
Cook Time : 10 minutes
Steam time : 15 minutes
Serves : 12

Recipe Cuisine:  Karnataka
Main ingredients : Idli rava

Ingredients 


IIdli Rava - 1 cup
Water - 3 cups
Oil - 2 tsp
Mustard - 1/2 tsp
Urad dal--1/2 tsp
Red chilli - 2
Curry leaves - 1 sprig
Hing - 1 pinch
Fresh coconut - 1/2 cup
salt - as per taste

Instructions


1) Heat a pan with 2 tsp of oil add mustard seeds once it starts sputtering add urad dal fry till it starts changing color then add curry leaves and red chilli, hing fry everything well. 





2) Now add idli rava to the above, mix everything well and fry the rava till it starts changing color and you get nice aroma. 









3) Add fresh coconut, salt to the above and fry once. 





4) Add 3 cups of water to the above and mix everything well, cook on medium to low flames till rava absorbs water and become thick. 









5) Meanwhile heat some water in idli stand or in steamer. Let the above cool for some time and take small amount of above, mold it like small ladoo and press it centre with thumb. 


6) Steam it for 15 minutes or till cook well on medium flames  by closing lid and then switch off flames. 


That's it yummy and tasty rice dumplings/pundi/undi is ready to serve. Serve hot with any chutney's or spicy pickles. 



Tips

** Instead of idli rava you can also use rice. Wash rice, drain water and grind it to fine powder and use it. 

** Do not boil rava on high flames, as rava absorbs water quickly and do not cook well. 

** Boiling rava is the main step in this recipe. If rava touches your finger after boiling, then cook it some more time. 

** Do not let rava cool to roon temperature as rava will becomes hard. 

** Serve it hot to enjoy its taste.

Oats and nuts Ladoo, Oats ladoo using different nuts

Happy EID to all friends 💐 and advance  Happy Raksha Bandan to all friends & family 🎕. Today's recipe is healthy, tasty, chewy and easily prepared "Oats & Nuts Ladoo". It is protein rich and low fat ladoo, prepared with oats , nuts and brown sugar. We can prepare it using jaggery , sugar or brown sugar. It does not take more ghee to mold ladoo's , we can add any nuts available at home. Pack it in your family lunch box, they even can have it as snack.  Lots of health benefits of using oats like, it is good for weight loss, controls sugar, rich in fiber etc.. it is prepared very easily with 3 simple steps -- frying, grinding and molding. 



 I used almonds, cashew nuts, ground nuts, dry coconut to prepare these ladoo's. You can also add nuts of your choice also include poppy and sesame seeds to make it more healthy. Use 1 tsp of ground nuts for 1 cup of oats, as ground nuts dominates other nuts tastes. You can grind oats to coarsely of fine powder depending on your taste.

                     Oats & Nuts Ladoo

Preparation Time : 5 minutes
Cook Time : 15 minutes
Serves : 8 ladoo's

Main ingredients : Oats , nuts

Ingredients


oats - 1 1/2 cup
almonds - 15
cashew nuts - 15
ground nuts - 1 tsp
dry coconut - 2 tsp
brown sugar - 1/2 cup (adjust) 
elachi - 3 or elachi powder - 1/2 tsp
ghee - 2 tsp

Instructions

1) Take a pan add oats dry fry till it changes color on low - medium flames then take it into plate.


2) Then add almonds dry fry till changes color and take it into plate.



3) Now dry fry cashew nuts and ground nuts till changes and take it into plate.




4) Once ground nuts becomes cool remove its skin. Now fry dry coconut for few second and take it into plate. Let all the fried ingredients cool for few minutes.





5) Now take the above fried oats and nuts into mixer jar, add brown sugar and elachi and grind it into fine powder.




6) Take the above powder into bowl add 2 tsp of ghee, mix everything well and start molding ladoo's.




That's it healthy, tasty and protein rich Oats & Nut's Ladoo is ready to serve. Store it in dry air tight container , you can pack this ladoo's for journey or in lunch boxes.



Tips

** You can use jaggery or sugar or brown sugar to prepare this ladoos.

** Do not add more ghee as it will leave ghee after some time.

** You can use any nuts according to taste and availability.

** Do not add more quantity of ground nuts as it dominates the taste of other ingredients.

** Adjust quantity of nuts, oats and sweetness according to your taste and availability.
