pan fried mediterranean veggies

Today's post is very very simple and easy pan fry Mediterranean veggies. I used broccoli, eggplant, carrot, baby potatoes, capsicum, onions. Some information regarding  mediterranean diet - it is a diet inspired by the eating habits of Italy and Greece in 1960's. The principal aspects of this diet includes proportionally high consumption of olive oil, fruits, vegetables, moderate to high consumption of fish, moderate consumption of dairy products. A traditional mediterranean diet consisting of large quantities of fresh fruits,vegetables, nuts, fish and olive oil coupled with physical activity which can reduce risk of serious mental and physical health problems (information from wiki).

As i d't have oven i pan fried these veggies, you can roast these veggies in oven to get crispy texture. The taste of this fry depends on olive oil, herbs and pepper powder we use. I used oregano, pepper powder and red chilli flakes. No need to fry it like our regular curries. Fry onion, broccoli, capscium, eggplant  first then fry potato and carrot as it take more time to cook. Eggplant - half
capsicum - half
baby potatoes - 3
broccoli - 1/2 cup florets
carrot - 1 
onions -2
olive oil- 2 to 3 tsp
salt as per taste
pepper powder - 1 tsp
red chilli flakes - 1 tsp
oregano - 1 tsp
garlic - 4


1) wash all veggies and cut into cubes as shown below.

2) Take the above veggies into bowl add crushed garlic,olive oil, salt, oregano, red chilli flakes, pepper powder and saute everything well. Now stir fry eggplant, capsicum, onion, garlic take into plate then fry remaining veggies. At last saute all veggies once and take it into plate.

That's it pan fried mediterranean veggies are ready to serve. You can serve it as side dish or we can have as it is. I know if it is roasted then we will love it , still trust me it came out very tasty.
