Veg chow mein, veg chow mein noodles, how to prepare street style veg chow mein

Today's recipe Veg chow mein noodles is favourite to everyone. Their is no age limit from kids to elders, noodles is most loved street food. Veg chow mein is a Chinese style dish of noodles shredded with vegetable. I and my hubby loves Ganesh restaurant (@Khurdha) veg Chowmein alot😋, after transferring we never had it again, so thought to have it once in this winter season 🤗. It's aromatic with sauces used and healthy too as we use lots of veggies in it. And the main thing is is very easy to prepare, only thing to take care is boiling of noodles.  No probs I will explain how to cook it 🤗.  We can use veggies like carrot, capsicum, cabbage, French beans, mushrooms spring onion bulbs(whites) and greens. Sauces like soya,red chilli, green chilli and tomato ketch up. Adding ketchup gives sweet tangy taste. Adding black pepper powder at end enhances taste and flavour 😋😋. 



   If  any of the mentioned veggies missing no problem still you can prepare. You can also prepare noodles with the sauces available with you, in order to get perfect street style taste have to add the sauces mentioned above. Yes, you can do variations 😊. These sauce cost less, purchase once and use it many times for Cabbage manchurian, noodles etc.,Today I missed adding corn flour and vinegar as they are not available in my pantry right now (still no compromise in taste😋😍). But I will mention how to use it 🤗. Buy good brand sauce and noodles so that you will get good taste. Prepare this yummy and tasty noodles at  home and make your kids and family happy. This is best recipe to prepare for your guest as it very easy to prepare (in 30 min) and guests to love it 😍🤗. 



                   Veg chow mein 

Preparation Time : 10 minutes
Cook Time : 20  minutes
Serves : 1 big bowl

Main ingredients : Noodles

Ingredients 

For cooking noodles

Veg  rice noodles - 1/2 pack (use any good brand)

Water - 7 cups(or to immerse noodles) + 2 cups 
Salt - 2 tsp
Oil - 1 tsp

Veggies I  used

Carrot  - 1 thinly sliced 

Capsicum - 2 (small size) thinly sliced 
Cabbage - 1 cup shredded 
Spring onion stem(greens)- 1/2 bunch choppped
Onion - 1 large, roughly chopped
Garlic - 7, finely chopped
Green chilli - 2, slit 

Sauce I used


Red chilli sauce - 2 tsp

Green chilli sauce - 2 tsp
Tomato ketchup - 1 tsp
Soya sauce - 2 tsp
Corn flour - 1 tsp(I Dint added)
Vinegar - 1 tsp(I Dint added)

Others


Oil - 3 tsp

Salt as per taste
Black pepper powder - 1 tsp

Instructions 

1) Roughly chop onion and cut garlic into small cubes and keep all sauces ready.



2) Now clean veggies under water. Cut it as shown below. 



3) Firstly boil noodles, take a pan add nearly 5 to 7 cups of water in a Kadai and add salt and oil. 



4) Let the above water boil on high flames till you get bubbles. 



5) Now drop noddles into rolling water carefully. 



6) Cook the above 3 minutes on high flames. 



7) Switch off the flames when 80% of noodles cooked means when we press noodles with fingers smoothly it must break as shown below. That's the ight time to stop cooking noodles. 



8) Take a bowl keep strainer on it and drop noodles in it. 



9) Add 2 cups of water on noddles + 1 tsp of oil let it set aside.




10) Keep veggies and sauce ready. Heat a Kadai by adding oil and then add garlic pieces  fry it for a second. 



11) Now add roughly chopped onion, green chillies and half part of  spring onion stem(greens) fry it well. 



12) Now add carrot and capsicum give it a stir fry for a minute on high flame. 



13) Now add shredded Cabbage to the above give it quick saute maintain high flames. 




14) stir fry the above veggies just it shrinks its size, do not overcook. (* check tip)



15) Then add the mentioned sauces one after other.



16) Add salt, saute the above well quickly so that veggies coat with sauces well. At this point you can add vinegar and corn flour(mix corn flour powder in 3 tsp of water). 



17) Reduce the flames and add cooked noodles to the above. 



18) Saute the above well in the high flames. Do not mix it roughly just saute it(*check tips) so that veggies and noddles mix well. 



19) At end add black pepper powder and adjust salt if need. Give a quick saute and switch off the flames. 



Yummy, tasty, lipsmacking veg Chow mein noodles are ready to serve😋😋. Garnish veg chow mein noddles with remaining spring onion greens(stem) and serve it with tomato and green chilli sauce and enjoy your day with your loved once. 



Note

* We can use any noodles available in your place. 

* We can also use mushrooms and french beans as per availability. 

Tips

**  Maintaining veggies shape is not compulsory but it gives good texture  and fry properly. 

** Add 1 tsp of oil after straining noodles to avoid noodles sticking. 

** If you feel noodles are over cooked and adding oil too not working then spread noodles in plate and keep under fan. We all learn things by doing mistakes so no need to worry just find the way to fix it smartly 😉😍. 

** Do not overcook veggies, chow mein taste good when veggies are crunchy in taste. 

** Saute chow mein on high flames. 

** Donot burn sauces it will change (spoil) taste.   

** Adjust salt accordingly as we added salt while boiling noodles and soya sauce too contains salt. So take care while adding salt. 


** Adjust quantity of sauce accordingly as per your taste. You can also add only soya sauce and tomato ketchup too. 

** If you do not have chill sauce, you can add kissan chilli tomato ketchup too. This is just an option(taste may vary a bit).

Green Tomato chutney ||No Onion - No Garlic Raw Tomato Chutney || Andhra style Pachi Tomato Chutney

Chutney is the main dish in South Indian menu. Green tomato chutney is one of  the chutney varieties which is prepared using raw/ unripe tomatoes. Also famously known as Pachi Tomato chutney in Andhra. Today's chutney is my second No Onion - No Garlic recipe. As I prepared this for idli's when I was fasting. It is tangy and spicy in taste. We can have it with steamed rice, idli, dosas, pesarattu. But I love to have it with hot steamed rice with dollop of ghee 😋. Generally we prepare riped/red tomato chutney by frying ingredients like mustard and Methi seeds, but for this green chutney we use groundnuts and sesame seeds and fresh scraped/grated coconut which is very healthy. There are many nutritional benifits of using green tomatoes, it rich in antioxidants and Vitamin C. So let's get this benifits and stay healthy 🤗. 




  We can also use onions and garlic as per your wish. Little amount of Peanuts are used otherwise the tangy taste will reduced and tastes like normal peanut chutney. Adding sesame seeds adds taste to the chutney and also healthy. We can also add a pinch of tamarind. Chutney taste yummy when it is spicy so adjust chilli quantity accordingly.  Using Ghee for tempering will gives good taste. 
  
    Green Tomato Chutney       
Preparation Time : 10 minutes
Cook Time : 20 minutes
Serves : 4 people

Main ingredient: Green tomato

Ingredients

Green/ unripe tomatoes - 4
Peanuts - 2 tsp
Sesame seeds - 2 tsp
Fresh coconut - 2 tsp
Green chilli - 4
Red chilli - 1
Coriander leaves - 1 tsp
Oil - 1 tsp
Salt as per taste

For tempering

Oil/ Ghee - 1 tsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1 tsp 
Red chilli - 1 
Curry leaves - 1 sprig
Hing - 1 pinch

Instructions

1) Clean tomatoes and cut into pieces. 



2) Take a pan dry fry groundnuts till it changes color and take it into plate and let it cool. 



3) In the same pan add sesame seeds and fry it on low flame still it chances color and start splutters and take it into plate. It make take few seconds, so take care. 



4) Slit green chillies in middle and add 1 tsp of oil to the above pan. Fry green and red chilli and take it into plate. 



 5) In the same pan add chopped green tomatoes,  salt and fry it on medium flames. 


6) Meanwhile remove groundnuts skin and grind all the fried ingredients and coconut. 


7)  Grind the above coarsely without adding water. 



8) Check the tomatoes, it will become soft and mushy.  Let it cool for few minutes. 



9) Add coriander leaves and above cooked tamatoes into mixer jar. 



10) Grind the above coarsely without adding water. 



11) It's time for tempering, Take a pan add oil/ Ghee let it heat for a second then add mustard seeds once it splutters add cumin seeds fry it for a second then add curry leaves  red chilli and hing fry it and switch off the flames. 



 Add tempering into green tomato chutney and mix everything well. That's it tangy, spicy and tasty green tomato chutney is ready to serve 😋😋. 



Note

* You can also add onion and garlic. Add onion and garlic at step - 5, fry it for a second then add tomatoes. 

Tips

** Chutney taste good when its tangy and spicy. So add groundnuts less, adjust chilli according to your taste. 

** Also grind chutney coarsely without adding water. As taste chutney good if it is thick and not that much smooth. 

** Do not add too much coriander leaves while grinding otherwise it will change taste.
