Today i am explaining the simple and easy to prepare kabuli chana curry recipe with easily available ingredients from our pantry. Kabuli chana is contain high fiber, it is good for digestion. It is protien rich and healthy, good to use it in our regular recipes. It is gravy based curry which goes well with flavored rice like jeera rice(video) ghee rice, carrot rice, pudina rice. I always love to have it with roti's or paratha's like garlic lachha paratha, plain lachha parathas with some raita like pomegranate raita 😋. Do subscribe my youtube channel for video recipes.

Ingredients
2)Heat a pan add coriander seeds, fry it well on low flames. When it starts changing color(it takes not more than minute), then add all remaining spices mentioned in chole masala list in ingredients. Fry everything well, take into plate and let it cool. Grind all fried spices to fine powder and keep it aside.

Kabuli chana curry
Preparation time - 20 to 30 minutes

Ingredients
kabuli chana - 1 cup
onion - 2 big
tomatoes - 2 small or 1 big
cashew nuts/ kaju - 5
coriander leaves - 2 tsp
oil - 4 tsp
cumin seeds -1 tsp
salt - as per taste
ginger - 1 inch
red chili powder - 1 tsp
turmeric powder -1/4 tsp
kasuri methi - 1/2 tsp(optional)
fresh cream - 2 tsp (optional, i used milk malai /pala megada)
For chole masala
corinader seeds - 1 tsp
cumin seeds - 1 tsp
elachi -2
cloves -4
cinnamon stick - 1 inch
bay leaf - 1
pepper corns - 5
mace / javithri - 1
fennel seeds / saunf - 1 tsp
Instructions
1) Wash twice and soak kabuli chana 8 hours or over night. Pressure cook it by adding 2 glasses of water and 1 tsp of salt. Boil kabuli chana for 5 whistles on high flames and 3 whistle on low flames.(** check tips)
3) Heat a pan add 4 tsp of oil, add 1 tsp of cumin seeds fry well, then add finely chopped onions mix well till it changes color. Now add ginger paste(you can also add ginger garlic paste too) fry well.
4) Now add 2 tsp prepared chole masala(adjust) or ready made chole masala or garam masala(i taste different), red chili powder, turmeric powder and salt mix everything well.
5) Finely chop onions and keep it aside, add chopped tomatoes & cashew nuts/ kaju in a mixer jar and grind it fine paste.
6) Add prepared tomato & kaju puree cook it on low flames, till oil oozes out.
7) Now add boiled kabuli chana and its water mix well.
8) close the lid and boil it for 5 minutes, you can see the oil that oozes out on curry.
9) If you feel gravy is too thick add some more water, kasuri methi , cream or milk malai and mix well.
10) Add 1/2 cup of water and boil till gravy becomes thick, at last add coriander leaves that's it our kabuli chana curry is ready.
Serve it with some onions and lemons pieces. I served this as sides for jeera rice(video).
Tips
** Make sure that kabuli chana boiled well, you can add pinch of cooking soda. Kabuli chana cook smoothly by adding cooking soda, i did not used it.
** You can add ginger garlic paste too.
** You can used ready made chole masala or you can also add garam masala.
** you can skip adding cream or milk malai.

DeleteI love how you've made the chole spice powder at home. Sometime back had bought the ready made one and it has no flavour whatsoever. Going to follow your recipe to make some at home. As for the Kabuli Chana Curry, I love to have with some parathas.
