Vegetable oats upma is soulful, tasty and diabetic friendly upma recipe. This oats upma is loaded with veggies, we can prepare this upma dry or mushy(gooey texture). I always like smoother version upma's, as they are filling. And it's Riddhesh's favourite too. This oats upma is not only diabetic friendly but also kids friendly too as it is easy to eat and good for digestion. When I will tell that I prepared oats for baby some of friends tell me not to use oats for kids, as they will loose weight. Oats is good for kids too, as they contains good amount of fibre and carbohydrates and good for gut health. I regularly give oats in some or other forms to my son like oats Pongal, smoothies, oats bisibelebath, oats and nuts ladoo etc,. We can add veggies like peas, carrots, beans. I even add potatoes while preparing for my son. I will share this recipe video in my YT very soon..
Some personal talk....
I have taken some break from blog as I was very busy with my son. And we joined in our new dream house last year Aug-2024 😍. Shifting, arranging things with lots of health issues was very challenging to come back, though I have many recipes in back up. And Riddhesh needs 24*7 attention, he do not allow me to do any work, he always want me to play with him. Yes I know it's common with kids but my kid is bit more(every mom's feeling🤪). But happy that baby learning many things very fastly,some are - he mastered in recognising capital and small alphabets at the age 1.6. Now telling 0 to 100,12 colors, shapes and singing rhymes , om bhurbuvastavaha shloka nd other small slokas , sa ri ga ma pa da ni sa's, he can arrange India map, he loves puzzles . He can arrange 26 pieces alphabets puzzles set of 7 different shapes(182 pieces) on his own and many more.. now you know why I am not sharing videos and blogs☺️. And last year November hubby fell down at home and his wrist bone fractured, he undergone surgery for that and he is on medical leave 😔. My full attention is on my boys...
When I was thinking to come back, my blogger friends too started come back with new themes in group shhhh secretly cooking. This month theme is " Diabetic friendly" suggested by Preethi di. And I am paired with Jayashree di who blogs at "Evergreendishes". She gave me onion and green chilli as and in turn I gave moong dal and urad dal as secret ingredients.

Vegetable Oats upma

Ingredients
Oats - 1 cup
Onion - 1
Tomato - 1
Green chilli- 2
Ginger - 1 inch
Coriander leaves -1 tsp
Curry leaves -1 spring
Carrot - 1
Beans - 3
Peas - 1/4 cup
Oil -2 tsp
Salt - as per taste
Chilli powder - 1/4 tsp (optional)
Water - 3.5 cups
Process:
1) Heat 2 tsp of oil in a wide pan now add mustard seeds when it starts splutter then add jeera fry it for few seconds.
2) Now add green chilli, curry leaves fry it for few seconds. Later add onions fry till it changes color, then add chopped tomatoes and mix everything and fry it few seconds.
3) Later add all veggies, salt, red chilli powder(optional) and cook till veggies become smooth by closing lid.
4) Now add oats and fry it for few seconds.
5) To get smooth gooey texture add 3 to 3.5 cup of boiled water and cook in low to medium flames.
6) Finally add finely chopped coriander leaves and mix everything and switch off the flames.
