Veggie and dry fruit salad with yogurt dressing || Vegetable & dry fruit salad with lemon yogurt dressing

Veggie and dry fruit salad with yogurt dressing recipe with step by step pics, youtube video and tips. Vegetable and dry fruit salad is one of our favorite salad at home. It is creamy, nutty and aromatic with the flavors of Indian spices in it. Believe me it is very filling, nutritious and gives cooling effect to your tummy instantly, i surely can say that you will love to have it regularly after tasting it once.

Whenever i feel my morning breakfast or even my lunch is heavy i prepare this salad. And not only that i love to have it anytime with or without yogurt dressing. We you prepare different salad dressings , yogurt dressing is one of my all time favorite and no need to tell how yummy it taste during summer sizzling hot times. This veggies and dry fruit salad includes different veggies like carrot,cucumber, bell pepper/ capsicum,cabbage, onion, tomato(you can include other veggies of your choice). Dry fruits which i used are just almonds, dry apricot and raisins. You can also add walnuts as per availability, fried peanuts added in it gives good crunchy taste and aroma. Coming to yogurt dressing, i added pepper powder and cumin powder . You can herbs, even olive oil for extra taste. We use all raw veggies in this salad, you do not feel raw kind of taste because of yogurt creamy texture. Taking this healthy, tasty and nutritious vegetable and dry fruit salad with yogurt dressing to Shhhhh Secretly Cooking Challenge fb group started by Priya of Priyas Versatile Recipes and taken further till date by Mayuri di who blogs at Mayuris jikoni. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we both share 2 secret ingredients among us and prepare recipe using it and all other members will guess it. This month theme suggested by Kalyani Sri, who blogs at Sizzlingtastebuds, do check her space for wonderful recipes, bookmarked her sugar free lemon iced tea to try soon. This month i am paired with Priya VijayaKrishnan who blogs at "SweetSpicyTasty", do check her space for traditiaonal tamil nadu recipes and recipes from different regions. Bookmarked her jain falafel recipe to try soon. Priya gave me coriander leaves and peanuts as two secret ingredients, with which i prepared this salad recipe. Both the ingredients added good taste and aroma to my salad. In turn i gave her pepper powder and lemon juice, Priya prepared sweet corn salad - vegan recipe. Do check her space for tasty recipes.

                          Vegetable and dry fruit salad with yogurt dressing 

Preparation time : 20 min
Cook Time : 15 minutes
Serves : 1 bowl
Category : Salad

Main ingredient: vegetables, dry fruits and yogurt

Ingredients

Onion - 1
tomato - 1
carrot -1 
cucumber - 1 
cabbage - 1/2 cup
capsicum - 3/4 (you can use red , yellow bell pepper's if available)
sweet corn - 1/2 cup
lemon juice - 2 tsp 
Almonds - 10
dry apricot - 4
kismis - 10
peanuts - 1/4 cup


For yogurt dressing

yogurt - 1 cup
salt as per taste
pepper powder - 1 tsp(adjust)
roasted cumin powder - 1/2 tsp
honey - 1 & 1/2 tsp

Instructions

1) Take a cotton cloth or muslin cloth pour yogurt/curd tie it and hang it for 30 minutes to removes excess water from curd.


                   

2) Boil sweet corn in excess water for few minute. Do not overcook, sweetcorn taste well when it is crunchy.



3) Take a pan fry 1.4 cup of ground nuts till it changes and keep it aside.



4) clean veggies in water, cut all the veggies into thin equal strips(julienne cut) and take it into bowl. Add pinch of salt and lemon juice saute everything well, close the lid and keep it aside.

                                     





5) finely chop almonds,dry apricot and keep it aside.



6) remove groundnuts skin and crush it coarsely and keep it aside.


7) Yogurt will be thick now, remove it from cloth and take it into bowl. Add pepper powder, roasted cumin powder, salt, honey and mix everything well.


8) Add chopped dry fruits(almonds, dry apricot, raisins) mix well.


9) Now add finely chopped vegetables, saute everything well. 

                                       

10) Adjust pepper powder and salt according to your taste. At last add crushed peanut and finely saute everything well. 


Our salad is ready, keep salad in fridge for an hour and serve chilled. Decorate salad as per your taste and enjoy.


Tips

** Add veggies according to your taste and availability.

**You can skip dry fruits of your choice, you can also add walnuts .

** Use thick and sweet curd to get creamy texture and good taste.

** You can skip adding honey.

** Serve it cool or as it. 

** You can also add Italian herbs, red chili flakes in it.

Strawberry Choco Chip Cake || Eggless, no oven, no sugar , no maida strawberry choco chip and nuts cake

Today's recipe is for coming Christmas it's a cake - Strawberry choco chip cake / Strawberry choco chip and nuts cake. It is eggless, no oven, no butter, no sugar, no maida cake prepared using whole wheat flour , brown sugar, strawberries, choco chips, dates and lots of nuts. It is very aromatic, healthy, soft, fluffy with crunchy nutty taste. I prepared this cake in wide kadai, do not feel that you do not have oven to prepare cakes. It is easy to prepare cakes in kadai and pressure cooker. Follow all step clearly, surely you will get fluffy, spongy and super delicious cake. Surely your family love this cake, as it is prepared without maida, sugar and butter you can have it without guilt feeling :) .

If you are okay with using APF and sugar you can replace it with whole wheat flour and brown sugar. If you do not have choco chips no need to worry just replace it with nuts. I added strawberry paste in batter which gives nice flavor to cake. I spread dates, nuts and choco chips as one layer instead of mixing them in batter this gave good even crunchy taste while eating every piece of cake 😋.



This is perfect cake for christmas, birthdays, new year and for any special occasions at home. So surely try this healthy, delectable and tasty cake at home easily and enjoy your special days with your family members.

I mainly love her write up, she not only explain the recipe but also give full information about recipe and its origins, which i am trying to adopt in my blog :) . i loved many recipes and bookmarked leopard patch spot breadchocolate-phirni to prepare soon. 
                               

  



                                  Strawberry choco chip and nuts cake 

Preparation time - 15 minutes
Bake Time : 40 - 50 minutes
Serves : 1 cake
Category : Cake
Recipe Cuisine: Indian 
Main ingredients : Strawberry, whole wheat flour

Ingredients

whole wheat flour - 1 1/2 cup
strawberries - 12
oil - 1/2 cup
brown sugar - 3/4 th cup
thick curd - 1/2 cup
milk - 1 small cup(adjust)
cashew nuts - 10
almonds - 10
raisins - 10
dates - 3
choco chip - 2 tsp
baking powder - 1 tsp
baking soda - 1/2 tsp
cinnamon powder - a pinch
sugar powder - 1 tsp
vanilla extract - 1/4 tsp

others

salt - 1 cup
toothpick - 1
stand or small plate -1 


Instructions

1) Heat kadai by adding salt and by placing stand on medium flames till we prepare batter.

                                                          

2) sieve whole wheat flour, baking soda and baking powder, cinnamon powder and keep it aside.

         

3) chop cashew nuts, almonds, raisins and dates and keep it aside.


4) In a large bowl add brown sugar, curd,vanilla extract and mix everything well. Grind 4 strawberries to fine paste and add it to the above with oil. Mix everything well using whisk or ladle till.




5) Add sieved flours to the above mix well by adding little by little milk till you get thick flowing batter consistency.

                                                 





6) dust half tsp of wheat flour on chopped nuts and some choco chips mix it well and chop strawberries.(check tips) Grease cake mould with oil / butter and place butter paper on it and spread half part of cake batter in mould.




7) now spread dusted nuts on the above, later add remaining batter on the nuts and tap it well then arrange chopped strawberries and choco chips on it as shown below or use your own creativity in decorating cake :). But do remember that only 3/4th of mould you have to add.(** check tips)



8) check the heat, place the above cake mould in kadai, close the lid and bake on medium to high flames or 5 minutes , then bake it on low flames for 40 minutes by closing lid.(**check tips for baking in pressure cooker).


9)After 35 to 40 minutes open lid and insert toothpick inside cake, if it came out clearly then switch off flames and let the cake cool otherwise again bake it for some more time.


10) once cake cooled completely to room temperature, scratch the sides of mold and place plate on it and reverse the plate. Tap on cake mould it will come out easily then remove butter paper.(i did not used butter paper as not available at present)


That's it our strawberry choco chips and nuts cake is ready.


At last dust some sugar powder on cake using tea strainer and decorate it with nuts and raisins.



Our super delicious, spongy, fluffy and healthy strawberry cake is ready, enjoy this christmas with your family and friends.... 😍🍓🎄🎅🤶.

Tips

** Remember to preheat kadai for 15 min on medium flames, so that cake will cook on time. 

** instead of wheat flour, brown sugar you can use maida and sugar.

** Add nuts of your choice make sure to dust it some flour so that it wont sink in batter.

** Do not fill the mould completely only 3/t4h of mould is used to add batter, as it will become fluffy while baking.

** If you are using pressure cooker then make sure to remove cookers whistle and gasket.(below pic is my Rava chocolate cake small portion of batter i baked in pressure cooker).


           

** Do not heat kadai/ cooker too long time or on high flames as cake will become hard.

** Do not be panic if you are cake is ready after 40 minute, just bake it for some more time by increasing its flame very bit.

** Adding cinnamon powder is optional but it gives very nice aroma to cake. You can also skip adding cinnamon powder.

** Do not open lid in middle while baking as you do not get fluffy cake.

** You fresh and thick curd.
