Veggie and dry fruit salad with yogurt dressing || Vegetable & dry fruit salad with lemon yogurt dressing

Veggie and dry fruit salad with yogurt dressing recipe with step by step pics, youtube video and tips. Vegetable and dry fruit salad is one of our favorite salad at home. It is creamy, nutty and aromatic with the flavors of Indian spices in it. Believe me it is very filling, nutritious and gives cooling effect to your tummy instantly, i surely can say that you will love to have it regularly after tasting it once.

Whenever i feel my morning breakfast or even my lunch is heavy i prepare this salad. And not only that i love to have it anytime with or without yogurt dressing. We you prepare different salad dressings , yogurt dressing is one of my all time favorite and no need to tell how yummy it taste during summer sizzling hot times. During summers(in any season according to your taste)just keep it in refrigerator for sometime and have it 😋. Do check out my latest youtube videos recipes..

This veggies and dry fruit salad includes different veggies like carrot,cucumber, bell pepper/ capsicum,cabbage, onion, tomato(you can include other veggies of your choice). Dry fruits which i used are just almonds, dry apricot and raisins. You can also add walnuts as per availability, fried peanuts added in it gives good crunchy taste and aroma. Coming to yogurt dressing, i added pepper powder and cumin powder . You can herbs, even olive oil for extra taste. We use all raw veggies in this salad, you do not feel raw kind of taste because of yogurt creamy texture. Taking this healthy, tasty and nutritious vegetable and dry fruit salad with yogurt dressing to Shhhhh Secretly Cooking Challenge fb group started by Priya of Priyas Versatile Recipes and taken further till date by Mayuri di who blogs at Mayuris jikoni. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we both share 2 secret ingredients among us and prepare recipe using it and all other members will guess it. This month theme suggested by Kalyani Sri, who blogs at Sizzlingtastebuds, do check her space for wonderful recipes, bookmarked her sugar free lemon iced tea to try soon. This month i am paired with Priya VijayaKrishnan who blogs at "SweetSpicyTasty", do check her space for traditiaonal tamil nadu recipes and recipes from different regions. Bookmarked her jain falafel recipe to try soon. Priya gave me coriander leaves and peanuts as two secret ingredients, with which i prepared this salad recipe. Both the ingredients added good taste and aroma to my salad. In turn i gave her pepper powder and lemon juice, Priya prepared sweet corn salad - vegan recipe. Do check her space for tasty recipes.

                          Vegetable and dry fruit salad with yogurt dressing 

Preparation time : 20 min
Cook Time : 15 minutes
Serves : 1 bowl
Category : Salad

Main ingredient: vegetables, dry fruits and yogurt

Ingredients

Onion - 1
tomato - 1
carrot -1 
cucumber - 1 
cabbage - 1/2 cup
capsicum - 3/4 (you can use red , yellow bell pepper's if available)
sweet corn - 1/2 cup
lemon juice - 2 tsp 
Almonds - 10
dry apricot - 4
kismis - 10
peanuts - 1/4 cup


For yogurt dressing

yogurt - 1 cup
salt as per taste
pepper powder - 1 tsp(adjust)
roasted cumin powder - 1/2 tsp
honey - 1 & 1/2 tsp

Instructions

1) Take a cotton cloth or muslin cloth pour yogurt/curd tie it and hang it for 30 minutes to removes excess water from curd.


                   

2) Boil sweet corn in excess water for few minute. Do not overcook, sweetcorn taste well when it is crunchy.



3) Take a pan fry 1.4 cup of ground nuts till it changes and keep it aside.



4) clean veggies in water, cut all the veggies into thin equal strips(julienne cut) and take it into bowl. Add pinch of salt and lemon juice saute everything well, close the lid and keep it aside.

                                     





5) finely chop almonds,dry apricot and keep it aside.



6) remove groundnuts skin and crush it coarsely and keep it aside.


7) Yogurt will be thick now, remove it from cloth and take it into bowl. Add pepper powder, roasted cumin powder, salt, honey and mix everything well.


8) Add chopped dry fruits(almonds, dry apricot, raisins) mix well.


9) Now add finely chopped vegetables, saute everything well. 

                                       

10) Adjust pepper powder and salt according to your taste. At last add crushed peanut and finely saute everything well. 


Our salad is ready, keep salad in fridge for an hour and serve chilled. Decorate salad as per your taste and enjoy.


Tips

** Add veggies according to your taste and availability.

**You can skip dry fruits of your choice, you can also add walnuts .

** Use thick and sweet curd to get creamy texture and good taste.

** You can skip adding honey.

** Serve it cool or as it. 

** You can also add Italian herbs, red chili flakes in it.

Oats and Dalia Upma || how to prepare oats & dalia vegetable upma

Oats dalia upma with step by step pics and tips. It is very tasty and healthy upma prepared using broken wheat(dalia), oats and vegetables. It is weight loss recipe prepared in a healthy way. I used carrot, beans and fresh green peas to make it more healthy, upma tasted bit creamy because of oats. I added onion today if you want to have it on vrat skip onion and add potato (optional). Adding lemon juice and fresh coconut gives good taste. You can serve it with any chutney's or any chutney podi's like Milagai Podi / Idli Dosa podiPeanut / ground nut powderAndhra kobbari karam podiCurry leaf powder






Taking this healthy oats dalia upma to FoodieMondayBloghop fb groups #233NutriBrekke theme. By this time you are all aware that i am part of this lovely group where we bloggers share recipe for theme suggested by a person in alphabetical order every week. This week theme is suggested by "Sujata Roy di"  who blogs at batterupwithsujata . We bloggers sharing different recipes using gourds like bitter gourd, ivy gourd, snake gourd, ridge gourd, bottle gourd. Many of us do not like these gourd recipes, but trust me we can prepare many tasty recipes with these gourds. Coming to Sujata di, she shares many traditional (Bengali cuisine) and authentic recipes. I can surely call her as "Sandesh Queen" as she prepare many sandesh varieties like sugar free pineapple sandeshhazelnut chocolate sandesh which i am planning to prepare.                     Oats & Dalia Upma  

Preparation time - 10 minutes
cook Time : 15 minutes
Serves : 1 bowl

Ingredients


Oats - 1 small glass
dalia / broken wheat / godumanuka - 1 small glass
water - 4 and half  glasses (adjust)
onion - 1 
carrot -1 
beans - 3
peas - 1/4 cup
green chillies - 4
ginger - 1 inch
curry leaves -1 sprig
coriander leaves - 1 tsp
salt as per taste
oil- 2 tsp
mustard seeds - 1/2 tsp
cumin seeds - 1 /2 tsp
urad dal - 1/2 tsp
chana dal - 1/2 tsp
Lemon  juice - 3 tsp (half lemon)
fresh grated coconut - 2tsp

Instructions

1) Finely chop onion, veggies, green chilli, ginger and keep it aside.




2) Dry fry oats on low medium flames till it turn crispy and keep it aside.



3) Heat a oil in kadai add mustard seeds when it starts crackle add urad and chana dal when it starts changing color add cumin seeds, curry leaves fry it well.



4) Add green chillies , ginger fry well. Then add onions, pinch of salt and fry till it changes color.



5) Now add carrot , beans, peas fry it well and let it cook by closing lid till veggies becomes smooth.


6) Now add 4 and half glasses of water and required amount of salt and let it boil.



7) Now add dalia little by little and mix well.



8) Let the above cook for few second and then add oats, mix everything well and close the lid.




9) Cook till water absorbs, then switch off the flames. Add fresh grated coconut, coriander leaves, lemon juice and mix everything well.





Thats it healthy and tasty oats & dalia upma is ready to serve.



Tips

** You can also  add capsicum or veggies of your choice.

** If you feel upma becomes very thick after adding oats then add some more water. AS water quantity depends on type of oats you used.

Baingan Ki Lonje || Uttar Pradesh famous brinjal curry

Wish you all a very "Happy New Year 2020" to all friends and family.  Today's recipe is from Uttar Pradesh cuisine - Baingan Ki Lonje. It is UP style brinjal curry which is very delectable with its unique flavours and taste. It is spicy, aromatic with spices added in it and sour from lemon juice added. I really loved this variety brinjal recipe as it is easy to prepare and different brinjal recipe i ever tasted. Onions are fried by adding sugar till they are caramelized and they are grinded with other fried spices. We cut brinjal from middle along with stem then apply onion masala and fry it both sides, today i fried brinjals first then applied masala paste and fried again. This makes brinjal cook well from stem. Finally we add lemon juice on fried brinjal. This adds very unique and awesome taste. 



 Taking this tasty "brinjal curry"  to Shhhhh Secretly Cooking Challenge fb group started by Priya of Priyas Versatile Recipes and taken further till date by Mayuri she blogs at Mayuris jikoni.  Here admins will select one Indian state in alphabetical order. And they pick pairs for theme, pairs will share 2 ingredients, using that ingredients we will prepare recipe and post it in group album. Other group members will guess the secret ingredient.This month we bloggers are preparing Uttar Pradesh cuisines, for this month i am paired with Kalyani she blogs at "sizzlingtastebuds.com".  Kalyani is wonderful and talented chef, she had been blogging from 2011.  Do check her lovely site , where you can get many varieties of food. We can get traditional, regional and authentic recipes, you can also get many baking recipes too. I loved her baking style, i tried her  Quick Multigrain Almond bread . For Up cuisine she gave me onions and cloves as secret ingredients, in turn i gave shalgam and jeera as secret ingredients with that she prepared benares special aloo shalgam matar ki sabzi. I checked this baingan ki lonje recipe from here with some chances.


                           







  

                                Uttar Pradesh - Baingan Ki Lonje

Preparation time - 10 minutes
cook Time : 15 minutes
Serves : 2

Recipe Cuisine: Uttar Pradesh

Ingredients

Brinjal - 2
lemon juice - 2 tsp
coriander leaves - 1 tsp(finely chopped)
ghee/oil - 2 tsp 

to grind 

onion - 2
sugar - 1 tsp
salt a pinch
red chilli -3
cumin seeds - 1/4 tsp
elachi - 2
cloves -2 
cinnamon stick - 1/2 inch
peppercorn -2
oil - 1 tsp

Instructions

1) Heat a pan dry roast all spices except onions without adding any oil and take it into plate.


2) Heat a tsp of oil fry onions by adding salt and sugar till onions changes color and caramelized then let it cool.


3) cut brinjal into two half from middle along with stem and immerse in enough water.



4) Add 1 tsp of oil in wide kadai fry brinjal both the sides till they cook well.


5) Grind fried spices and onions to fine paste without adding water.(If need add very little water)


6) Now spread onion masala paste on middle part of brinjal, add ghee/oil in the same pan and place masala coated side brinjal and fry it well. Now reverse the brinjal fry for a minute, switch off the flames and add lemon juice both the gently and garnish with coriander leaves.




That's it our Uttar Pradesh style baingan ki lonje is ready to serve. I had it with veg rice, with lemon pieces, onion 😋.


Tips

** I fried brinjal's twice first without adding masala, later after applying. This made outer portion of brinjal (skin )crisp.

** Adding lemon juice gives very taste to curry.

** Keep brinjal in water after cutting so that it won't change its color.
