carrot & corn soup || how to prepare carrot and sweet corn soup

Carrot corn soup || carrot sweet corn soup with step by step pics and tips, today's special recipe is carrot & corn soup. Soup is liquid food prepared using vegetables, meat and even lentils. Today's my carrot & corn soup is sweet and tasty prepared using winter veggie carrot as main ingredient. Adding sweet corn made this soup super delicious creamy with rich texture. Surely you will love this hot piping soup in this winter season, it is soulful and very comforting gives good fresh and relief feeling when you have it hot. I learned this recipe in my starting days of cooking, after doing lots of changes now i fixed to this version which hubby loves a lot 😍. We can prepare many soups like spring onion carrot badam soup with easily available ingredients at home.

By this time you are all aware that i am part of this lovely group where we bloggers share recipe for theme suggested by a person in alphabetical order every week. This week 'Sasmitha' who blogs at First timer cook suggested to prepare recipe using winter veggie as main ingredients. She is very talented chef  who shares recipes from different traditional and fusion recipes. I love her photography and fusion recipes a lot. Ingredients

For grinding

carrot - 1
sweet corn - 1/2 cup
onion - 1 small
ginger - 1 inch

For soup 

carrot - 1 small
sweet corn - 1/4 cup
garlic - 2 
pepper powder - 1/2 tsp(adjust)
butter - 1 tsp
coriander leaves - 1 tsp
corn flour - 1/2 tsp
salt as per taste

Instructions

1) Add cubed carrots, roughly chopped onions and ginger into pressure cooker. To this add pinch of salt and 1 big glass water and pressure cook it for 3 whistles.






2) Let the pressure comes down, strain veggies and grind it into smooth paste. Do not discard veggie stock.





3)  chop carrot and garlic into small pieces, heat a pan with tsp of  butter and garlic fry till it changes color. Then add carrot and sweet corn fry it by adding salt.






4) fry the above till carrot becomes smooth then add carrot & corn paste, veggie stock and 1/2 glass of water then boil it on medium to high flames for 5 minutes.






5) Add pepper powder (i used roughly powdered pepper) and salt to the above mix well.



6) Mix corn flour in little water and add it the above boil it for few more minutes, switch of the flames and garnish it with coriander leaves.(** check tips)



That's it hot piping carrot and corn soup is ready to serve 😋.



Tips

** If you want it spicy add green chilli in pressure cooker.

** You  can add oregano and herbs as per your taste.

** You can skip adding corn flour, adding corn flour gives thick texture to soup.

** i added roughly powdered peppers, it gives good spicy taste to soup as we are not adding any other ingredient for spicy.

** You can also add pudina / mint leaves for garnishing .
