Biri Manda Pitha || Biri Gaja || Odisha - Biri Manda Pitha

 Biri Manda Pitha || Biri Gaja is Odisha's popular savory version pitha recipe. This is steamed rice flour dumpling stuffed with savory urad dal paste.  Pithas are varieties of food similar to pancakes, fritters, dumpling which can be sweet and savory. As I mentioned in my early posts, my hubby posted in Khurda road, Odisha at starting and he worked for 10 years there. I too stayed many years in Odisha, at first I stayed in Talcher, were I had many Odisha friends. Where I got chance to taste & learn many Odisha recipes. Jaganth temple food is our all time favorite, I just like the aroma of food that is served in temples. We have different pitha recipes like arisa pitha, manda pitha, enduri pitha, poda pitha, chakuli pitha and many more. kakra pithaaloo palanga sabaji, chenna poda is our favorite recipes, kakara pitha is the first Odisha recipe I tasted and I still prepare this for breakfast or as evening snack. Coming to our biri manda pitha it is very tasty recipe prepared for breakfast or as evening snack. This is savory version pitha in which urad dal masala paste is steamed in rice flour dumplings. At first I tasted this Biri manda pitha in my neighbors house @Talcher, Odisha. I learned many recipes from my neighbor friends and they learned many South Indian recipes from me. Though I am not in contact with them I remember them whenever prepare Odisha recipes, wish my recipes are reaching them 😍.




Event : Shhhhh Secretly cooking challenge

Taking this cool cool mango matka kulfi to "Shhhhh Secretly cooking challenge" fb group started by Priya, and taken further till date by Mayuri di, I bookmarked her baked apple to try soon. Do check her space for wonderful recipes. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it.

                              


This month theme "ODIA Pitha Series" was suggested by Sasmitha who blogs at "firsttimercook", I bookmarked her choco swirl patishapta to try.  This month I  am paired with Shobha di, she is very talented chef who blogs at "shobhasfoodmazaa". I gave her paneer and ghee as two secret ingredients, she prepared this delicious enduri pitha ,do check out. In turn she shared cumin seeds and ginger as secret ingredients, using these ingredients I prepared this biri manda pitha recipe. 

                                     Biri Manda Pitha 

Preparation time : 20 minutes
Cook Time : 20 minutes
Serves : 12 biri manda pitha's

Main ingredients : Rice flour, urad dal

Ingredients

To prepare rice dough

Rice flour -1 cup

water - 1 & 1/2 cup

salt - as per taste

oil - 1 tsp

Urad dal masala paste

urad dal - 1/2 cup

green chillies - 2

finely chopped ginger - 1 tsp

cumin seeds - 1/2 tsp

finely chopped coriander leaves - 1 tsp

salt - as per taste

Instructions 

1) Wash urad dal for twice & soak it in enough water for 2 hours.

2) Heat 1 & 1/2 cup of water in pan to this add 1/2 tsp of salt or as per your taste, 1 tsp of oil and boil it. Then add rice flour mix it well without forming any lumps.

3) Switch off the flames and let it cool for some time.

4) Meanwhile grind soaked urad dal to fine paste by adding very less water and take it into bowl.

5) Add cumin seeds, finely chopped ginger, finely chopped green chillies, required amount of salt in urad dal paste and mix everything well and keep it aside.



6) When rice dough is bit hot mix it well and prepare smooth dough. Now pinch some dough and prepare lemon size equal balls.

7) Now flatten rice ball, press in middle with your thumb and prepare bowl shape by press its with your fingers as shown below. You can press two edges or 4 sides as per your wish.

                            

8) For steaming I electric rice cooker, add some water in rice bowl. Place steamer close the lid & switch it on, let it heat till we do stuffing. If you using idli steamer, add some water and boil it on low flames.


9) Now fill urad dal paste in rice dumpling using spoon and keep it in steamer. Steam these dumpling till for 10 minutes or till urad dal cooks well. Insert tooth pick in urad dal mixture if it comes out clearly then our biri gaja is ready. 


10) Switch off power/stove and let it set for few minutes. 

That's it our biri manda pitha is ready, serve hot with any chutney's  or as it is and enjoy with our friends and family :)



Tips

** Make sure that rice dough is lumps free, if you feel it hard sprinkle some hot water and press well to prepare smooth dough.

** In order to get perfect shape, rice dough should be smooth.

** Urad dal paste should be thick like wada batter.

** You can also add onion in urad dal paste.

Aloo Palak ki Sabzi - Odisha recipe , Aloo Palanga Saaga Bhaja

Aloo Palanga Saaga Bhaja or Palanga Saaga Bhaja is authentic Odisha's  cuisine, called as Aloo Palak ki Sabzi in hindi. It is very simple to prepare just like we Andhra people prepare palak minapa vadiyala kura. But Odisha people use mustard oil and panch phoron. Panch phoron mean 5 spices - cumin, brown mustard, Fenugreek, Nigella and fennel (saunf) seeds for tempering. Using panch phoron and mustard oil gives aromatic flavour and taste to the curry.

I am not fan of mustard oil so I  used normal vegetable oil and mustard and cumin in tempering. This sabzi is very tasty and healthy, we can have it with rice or roti's. Odisha people use urad dal badi in many curries.



  Hubby worked many years in Odisha (Khurda Road), I too stayed few years there, I love Odisha temple food alot, it's taste, flavour is very divine, heavenly and unique. Everyone who visit Puri Jaganath temple must eat "Mahaprasada" inside temple as it is treated as "Anna Brahma" . They serve food in pots, which makes food divine. Puri Jaganath Rath Yatra is popular in Odisha where lakhs of people participate in it.  Check the link for more information about Rath Yatra. I learned cooking when I was in Odisha 😍,  Sooji Kakara Pitha is my all time favorite. Cheena poda, Kanika, Veg chop, Ghugni chaat, Dalma, Tomato dates chutney... are some of my favourite Odisha food which I like it. Taking this recipe to Shhhhh Secretly Cooking Challenge fb group.  This month we are preparing Odisha recipes, my partner for this month is Shobha Keshwani di, she blogs at shobhasfoodmazaa, visit her place for yummy, tasty veg and non-veg recipes.  Shobha di gave spinach/palak and onion as 2 secret ingredients and I gave tomato, ginger for her😍. 


             
              Palanga Saaga Bhaja

Preparation Time : 15 minutes
Cook Time : 15 minutes
Serves : 3 people 
Category : Currys / Regional 
Recipe Cuisine: Odisha
Main ingredient: Spinach/palak

Ingredients 

Spinach/palak - 1 bunch
Potatoes - 2 
Urad dal badi - 12 to 15
Onion - 2 
Oil/mustard oil - 3 tsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1 tsp
Red chilli - 1
Green chilli - 1
Curry leaves - 1 sprig
Turmeric powder - 1 pinch
Red chilli powder - 1/2 tsp (adjust)
Garlic - 3 to 4 cloves(I did not added)
Salt as per taste

Instructions

1) Clean spinach under water, chop it finely. Remove potatoes skin, cut it into cubes and keep it in water. Also roughly chop onions and keep it aside. 



2) Heat a pan with normal oil or mustard oil fry Urad dal badi  till it changes color and keep it aside. 




3) In the same pan add mustard seeds once it splutters add cumin seeds fry it. Then add red and green chillies, curry leaves fry everything well. 



4) Now add roughly chopped onions and pinch of salt fry till it changes color. 



5) Now add potato cubes to the above, mix it once close the lid and cook till potatoes becomes smooth. 


 
6) Then add turmeric, red chilli powder adjust salt and mix everything well. 



7) Add chopped spinach to the above, mix it once. Close the lid and cook it on low to medium flames till spinach becomes smooth. 





8) crush fried urad dal badi with Ur fingers, add it to the above curry and mix everything once. 




That's it tasty, healthy nd crunchy Aloo Palanga Saaga Bhaja is ready to serve. I had it with hot steamed rice. 





Tips

** Use mustard oil if available to get good taste and aroma to the curry. 

** Adjust red chilli powder according to your taste. 

** Use panch phoron for tempering if available. 

** Add fried urad dal badi at last so that we can enjoy the crunchy taste of badi. 

** We can also use pumpkin instead(or along with) of potatoes.

Besan Ladoo, How to prepare Besan ladoo at home easily

Today is very special day to me, my blog completed 1 year with 122 recipes including this recipe. Days are moving very fastly, many ups and down in my journey, I am very happy that I am continuing my dream successfully with all your best wishes, support and encouragement. Do shower ur wishes lke this, surely will try to post healthy and tasty recipes, so that you can prepare our traditional, restaurant style recipes at home and enjoy with your family. On this special occasion I am posting one of my favorite sweet besan Ladoo. 



   Besan Ladoo is North Indian sweet delicacy which is prepared easily at home with less ingredients and in less time. These delectable ladoo's are prepared using gram flour/besan/senaga pindi as main ingredient. Taste of these ladoo's depends on ghee, gram flour must be fried in low flames till you get nice aroma. Instead of sugar you can use sweeteners  so that you can enjoy these sweet without any guilt. Few ways are there to prepare this besan Ladoo, the one I am explaining is regularly prepare by me at home. If you have sudden guests and you want to serve something sweet, then surely besan Ladoo is the best choice. Your guests will love to have it, as besan Ladoo is very delicious, aromatic and mouth melting sweet😋. 



                   Besan Ladoo


Preparation Time : 5 minutes
Cook Time : 15 - 20minutes
Serves : 7 ladoos's
Category : Sweets/ Desserts
Recipe Cuisine: North Indian
Main ingredients : Besan/ Gram flour

Ingredients 

Besan / gram flour / sanaga pindi - 1 glass
Sugar - 1/2 glass
Ghee - more than 1/2 glass
Elachi - 2
Cashew nuts - 10
Badam - 10
Pistachios - 4(optional)
Turmeric powder - 1/2 pinch

Instructions

1) Sieve besan in a dry plate. 




2) Add cashew nuts, badam in mixer jar grind it to fine powder, and take it into cup. 




3) Take sugar and elachi in the same mixer jar and grind it to fine powder. 





4) Heat a bowl with half of ghee. 



5) Add sieved gram flour/ besan to the above ghee. 



6) On low flames mix the flour well. 


7) Roast the above well without forming any lumps, fry it continously so that gram flour do not get burn at the bottom. Continue frying till you get nice aroma and besan changes color(check both pics). Point to remember is - - fry besan on low flames. 



8) Switch off the flames, remove Kadai from stove Now add Kaju nd badam powder and a small pinch of turmeric powder. 



9) Add 1/2 glass of powdered sugar to the above and mix everything well.







10) mould some flour and check it as shown below. 


11)Now add melted ghee little by little to the small portion of above mixture.





12) Collect flour in small portions and mould ladoo's. Repeat the process for remaining flour mixture.





Garnish ladoo's with sliced pistachios or chopped badam/ cashew nuts. That's it scrumptious  mouth melting and aromatic besan Ladoo is ready to serve😋😍.  Store it in air tight container, you can enjoy it more than 15 days.


Note

* Adjust sugar according to your taste. 

* You can skip adding turmeric powder. 

* You can also skip cashew nd badam powder. 

Tips

** Important point to remember is fry gram flour/ besan on low flames. 

** Stir it continously in order to avoid burning flour at the bottom. 

** Measure sugar after powdering, as quantity of sugar will increase after grinding. 

** Add ghee little by little while moulding ladoo's. 

** You can also add fried cashew nuts while moulding ladoo's.
