Masala Khichdi || Vegetable Khichdi || How to prepare one pot masala khichdi

Masala Khichdi is very tasty and healthy one pot rice variety. We can give it porridge consistency or pulao. Masala vegetable khichdi is combination of rice, moon dal, available vegetables and spices. It is soulful food which is nutritious  healthy food,  gives good relief when suffering from fever and digestive problems. It is very smooth and easy going food for kids, we can feed them by adding gheeit will melt in mouth easily. This is very protein rich food for kids, as it contains mung lentils, rice and vegetables we can skip masala when preparing for kids. 



    This is one of my life saving recipe, which I preparing weekly once or whenever I'm alone at home, as it is very easy to prepare and easy to have it and moreover no need to wash more dishes 🤗. Khichdi is prepared without veggies which is called as pongal in Tamil Nadu with some variation. It can be be prepared in many ways, but 2 famous ways are cooking rice, lentils and veggies in pressure cooker or first cook rice and lentils and then add in cooked veggie mix. I always prefer one pot way as its easy. 
   
                 Masala Khichdi

Preparation Time : 10 minutes
Cook Time : 15 minutes
Serves : 1 bowl

Ingredients 

Rice - 11/2 glass
Moong dal - 1 glass
ghee  - 3 tsp
Cumin seeds - 1 tsp
Elachi - 2
Cloves - 1
Cinnamon stick - 1 inch(I Dint used)
Bay leaf - 2 (I did not used)
Green chillies - 4
Ginger - 1 inch
Curry leaves - 1 sprig
Coriander leaves - 1 tsp
Garam masala powder - 1 tsp
Red chilli powder - 1 tsp(adjust)
Turmeric powder - 1/2 tsp
Onions - 2
Tomato - 1 big or 2 small
Potato - 1
Carrot - 1
Water - 7glass(**check tips)
Salt as per taste

Instructions

1) Wash rice and Moong dal in water 2 times and soak it for 15 min in enough water. 


2) Meanwhile cut vegetables and keep it ready. 



3) Add oil/ ghee in pressure  cooker  then add cumin seeds, elachi,cloves, Cinnamon stick  and fry everything well. 




4) Now add green chillies, ginger and onions, fry everything well by adding salt till onions changes color. 



5) Now add tomato pieces, mix everything well and fry till tomatoes become smooth. 



6) Now add chopped veggies mixeverything well and cook it on low flames by closing lid for few minutes. 



7) Now add turmeric powder, red chilli powder, garam masala powder adjust salt and mix everything well. 


8) Now add soaked Moong dal and rice mix everything well on low flames for a minute. 



9) Now add 7 glasses of water mix everything well and let it boil till you get bubbles on water. (**check tips)



10) Now close the pressure cooker lid and cook to for 4 whistles and let the cooker till it leaves pressure. (** check tips)



That's it tasty, smooth and mouthmelting masala vegetable khichdi is ready to serve. Garnish it with coriander leaves and add ghee serve hot and enjoy with your family. 



Note

* You can add vegetables like cauliflower, beans, capsicum, fresh peas(matar) as per availability. 

Tips

** Soaking rice and lentils give smooth texture to khichdi. 

** If you want to get pulao consistency then add
 (rice, dal): water 1:2, or if you want smooth and thick consistency add 1:4  

** You can use oil or ghee, using ghee gives extra taste and flavor to the khichdi.

** Do not closing lid immediately after adding water, it leaks lots of water out while getting whistles. Boil till you see bubbles on water then close pressure cooker. 

** Khichdi tastes great when we serve hot, add ghee while serving to get yummy taste. 

** Khichdi becomes thick wehen it cool. 

** Do not remove pressure cooker lid immediately, let the pressure comes down, so that you will get smooth texture.

Roasted Masala Chickpeas, masala coated kabuli Chana fry, how to prepare spicy and crispy kabuli chana roast

Today's recipe is very crispy, crunchy and spicy roasted Masala coated chickpeas. It is very easy to prepare but takes some time. Have to take care while frying this masala chickpeas, as it may brust while frying. As I got experienced with this 😉.  We use gram flour/ senaga pindi and rice flour with spices to coat kabuli chana. This is best evening snack, we can also prepare masala chat by adding onions and lemon juice. I soaked more kabuli chana for curry, so prepared this masala chickpeas with some soaked chickpeas. 



                   Roasted Masala Chickpeas

Soak Time : Overnight/8 hrs
Dry time : 3 to 4 hrs
Cook Time : 20 minutes

Ingredients

Kabuli Chana/ Kabuli sanagalu - 1 cup
Gram flour/ senaga pindi - 3 tsp
Rice flour - 2 tsp
Red chilli powder - 1 1/2 tsp(adjust)
Dry Mango powder - 1/2 tsp(optional)
Oil - to deep fry
Salt as per taste

Instructions

1) wash and soak kabuli chana dal in enough water overnight. 


2) wash it again in water, take it into pressure cooker add 1/2 cup of water, pinch of salt cook it for 1 whistle. Let the pressure goes comes down completely. 


3) Strain water completely and spread it on dry cloth for 3 to 4 hrs. 


4) After drying kabuli chana looks like below. 


5) Add gram flour/ senaga pindi, rice flour, red chilli powder, salt, dry Mango powder to the dried kabuli chana. 


6) Sprinkle very little amount of water and mix everything well, so that masala coat Chana well. 


7) keep it aside for 5 minutes,  meanwhile heat oil in Kadai to deep fry. Make sure that the masala coated well, each kabuli chana is separate. 


8) Once oil gets heat, spread masala coated kabuli Chana in oil carefully. Fry Chana in batches, do not rush. (**check tips)


9) Fry it well till it changes color on medium to low flames, remember there is chance of bursting Chana so fry it carefully. ( when I am frying one Chana bursting)


10) Take the above in tissue paper/plate and continue the same for remaining and take it into plate. Let it cool to room temperature and store it in air tight container. 


Note

* You can also sprinkle chaat masala after roasting Chana. 

Tips

** Take care while frying masala coated kabuli Chana as there is a chance of bursting, be careful. 

** Soak kabuli chana overnight or 8 hrs is compulsory. 

** Do not cook Chana long time, it must be cooked but not mashed. 

** Fried Chana taste yummy if it is spicy, add red chilli powder accordingly. 

** Do not fry kabuli chana all at a time, fry it in batches, so that it will cook well. 

** After cooking kabuli chana, dry it so that Chana will stay crunchy for long time. Otherwise Chana will become smooth.
