Spring Onion_Carrot_Badam_soup, Healthy and Tasty soup

Today's recipe is healthy and tasty soup must need in this season. This is my first soup post, I submitted it for soup contest in #MMC fb group. This soup gives very fresh taste of spring onion. Soaked badam is used to get rich thickness and taste to the soup. In order to make more healthy I used grated carrot. Adding a pinch of  pepper powder in soup makes soup healthy it gives spicy with pungent flavour. Have it hot and feel fresh and healthy😋😍.

    Spring Onion_Carrot_Badam_Soup

Preparation Time : 10 minutes
Cook Time : 15 minutes
Serves : 1 bowl

Ingredients 

Spring  Onion whites - 1/2 cup
Spring onion greens - 1/2 cup
Grated carrot - 1 cup
Soaked badam - 7
Green chilli - 1/2
Garlic cloves - 2
Butter - 1 tsp
Pepper powder - 1/4 tsp
Water - 11/2 to 2 glasses
Salt as per taste

Instructions

1) Soak badam in water minimum 3 to 4 hrs. Take a pan heat it for a second then add  1 tsp of Butter and chopped garlic cloves. Fry till its raw smell goes away. 



2) Now add chopped spring onion whites, greens and green chilli fry it by adding salt. Spring onions fry quickly, fry it on medium-low flames. 



3) Now add grated carrot to the above mix everything well and cook. 



4) Once the veggies become smooth add 1/2 glass of water and let it boil. 




5) Let the cooked veggies cool. Mean while remove badam skin, take mixer jar add cooked veggies and badam. 


6) Finely grind the above to smooth paste. 


7) Add above paste into pan and 1 glass of water,boil till you get thick consistency. 


8) Atlast add black pepper powder to the above and mix everything well and switch off the flames. 


Yummy and tasty Spring Onion_Carrot_Badam_soup is ready. Serve when it hot and feel fresh and healthy 😋🍵. 

Note

* Adjust water as per your consistency. 

* You can also chopp badam while grinding paste. 

Tips

** Soaked badam is very good for health. And also it gives good taste and thickness to the soup. 

** Grated carrot cook quickly, you can also add boiled carrot too. 

** Add very less quantity of black pepper powder otherwise soups taste and flavour will change.

Sweet Pongal, Temple style sweet pongal, Chakkara Pongal, Sakkarai Pongal

  Happy Bhogi, hope you are all enjoying festival with your family😍❤️. Today's recipe is sweet pongal which is very divine in taste and very aromatic. We can also call this sweet apongal as Chakkara Pongal, Sakkarai pongal. Today I prepared sweet pongal using jaggery, we can also prepare it using sugar. We can also offer this sweet pongal on Durga pooja's,vara Lakshmi pooja's. I used edible camphor to get temple prasadam taste. We can also use clove and grated nutmeg too, to get perfect temple flavour. Very small amount of edible camphor(pachha karpuram) is used. Edible camphor(pachaa karpuram) is differ from normal camphor, so take care while adding. 




  I use milk for preparing this sweet pongal which gives very good taste to pongal. Feel free to add ghee, as taste of pongal depends on the amount of ghee we add.

               Sweet Pongal

Preparation Time : 10 minutes

Main ingredients : Rice, 
Moong dal/pesarapappu, Jaggery

Ingredients

Rice - 1 glass
Moongdal/Pesara pappu - 1/2 glass
Jaggery - 1 cup
Water - 3 glasses
Milk - 2 glasses
Ghee - 1/4 cup
Camphor - 1/2 pinch
Elachi Powder - 1 tsp
Cashew nuts - 12
Raisins - 12 

Instructions

1) Take a pan add 1/2  glass of Moong dal and fry it on low flames. 


2) Now add 1 glass of rice and dry fry both. 


3) Fry the above till you get nice aroma. Do not burn it. 


4) Now wash the above fried in water well. 


5) Take the above washed into pressure cooker and add 3 glasses of water. 


6) And 2 glasses of milk  mix everything well. 


7) Let the above boil for 2 minutes in high low. 


8) And then close the pressure cooker and cook it for 4 whistles. And rest it till the pressure goes. 


9) Mash the above rice and Moong dal with ladle to get smooth texture. 


10) Now cut the jaggery and add 1/2 glass of water. 


9) Heat the jaggery just to dissolve it in water and strain it using strainer, in order to remove the impurities from jaggery. Add elachi powder,        jaggery syrup to the above mashed rice and lentils mixture. 


10) Also add 1/2 pinch edible camphor to above and mix everything well. The mixture will thickens quickly. Then add hot water or milk and mix it well. 


11) Take a pan add 2 tsp of ghee add cashew nuts fry till it changes color. 


12) Now add raisins fry it become fluffy.


13) Add the above fried nuts, raisins and ghee to the sweet pongal and mix everything well. 


Tasty and delicious Sweet Pongal  is ready. 


    Offer Pongal to Lord Sun and enjoy this Kite Festival with your friends and family. 



Note

* You can also use grated nutmeg and clove to get more divine taste and flavour. 

* You can skip adding milk. 

* Adjust jaggery quantity as per your taste. 

Tips

** Do not close the pressure cooker lid immediately after adding water and milk. Let it boil for 2 minutes and then close it. This process will stops the draining of water from cooker while getting whistle. 

** Adding milk will give good taste and texture. 

** Important point to remember is add edible camphor not ordinary camphor. And very very little amount of edible camphor is added by crushing it with your fingures.

** If you feel your sweet pongal very thick then add hot milk or water and adjust consistency. I prefer adding hot or boiled milk. 

** If you want to have it like dessert then keep it in refrigerator for atleast 2 hr and serve it sool. 

** You can increase or decrease ghee quantity as per your taste. But remember adding good amount of ghee gives you delicious taste and texture to sweet pongal.
