Jack fruit seeds masala vada, jack fruit seeds fritters.

Today's recipe is jack fruit seed masala vada || Jack fruit seed fritters. These vada tastes crunchy, nutty , aromatic and  crispy from outside and smooth from inside. Jack fruit is also known as panasa pandu in Telugu, palakottai in Tamil, halasina hannu in Kannada, khatal in Hindi. It is best tea time snack prepared using jack fruit seeds , chana dal (chanaga pappu).  It is variation of masala vada that we prepare with chana dal. We can also have this fritters as side dish in lunch. We can have it with any chutney's or with ketchup too.  Jack fruit seed is high in protein, nutritious, good for skin and it also promotes hair growth. So do not throw these seeds, we can prepare curry, fry, Crispy jack fruit seed snacks, also add it in sambar too.




                      Jack Fruit seed vada

Ingredients

Jack fruit seeds - 20
Split chickpeas / Chana dal/ chanaga pappu - 1 cup
Onion - 1
Green chilli -2
Red chilli -3
Ginger - 1 inch
Curry leaves - 1 sprig
Coriander leaves - 2  tsp
cumin seeds - 1/2 tsp
salt as per taste
hing - 1 pinch
oil - to deep fry

Instructions

1)  Soak chana dal in water for 1 hour. Peel the outer hard skin of jack fruit wash it in water and pressure cook for 4 whistles, take it into plate and let it cool.




2) Finely chop onions, green chilli, ginger , curry leaves and take it into bowl.



3) Now grind boiled jack fruit seeds smoothly without adding water and take it into above bowl.



4) Now add soaked chana dal ( keep some dal aside), red chilli, cumin seeds and hing to the same mixer jar by adding very little water ( if required )and grind it to coarse paste and into the above bowl.





5) Mix the above well by adding required amount of salt.



6) Heat oil in a pan to deep fry, then deep your hands in water collect some dough and press with fingers gently and drop into oil . 






7) Fry vada both sides till it changes color, take it into plate and continue the same process for remaining batter.


That's it crispy, yummy and tasty jack fruit vada / fritters are ready to serve.  


Tips

**  Jack fruit seeds outer skin will be very hard like nylon so be careful while removing it.

** First grind jack fruit seeds and then chana dal , Keep some chana dal aside and mix it in batter it  gives crunchy taste to vada.

** Do not add more water while grinding, it will absorb more oil while frying.

** Fry vada on low flames otherwise it may not cook inside but changes outer color fastly.

** Adjust red and green chillies according to your taste.
