Tomato bath || Karnataka style tomato pulao

Karnataka Style Tomato bath is one pot rice item which is very easy, tasty and filling. Today I am sharing Karnataka's popular tomato bath, we can call it as tomato rice or tomato bath or tomato pulao. I prepare this in 2 ways with and without adding masala's. Today I am sharing one of my favorite way, which is very aromatic with grounded masalas added in it. We can have this rice item as it is or with any raita like pomegranate raita(video). This tomato bath recipe saves many of  us when we have nothing to prepare at home and when you are in hurry or when you are back from journey's.

This week theme was suggested by Archana, who blogs at "Themadscientist'skitchen", i like her write up a lot.   Karnataka Style - Tomato Bath

Preparation time - 20 minutes
cook time : 10 min
Serves : 2 
Category : Rice Item / Regional 
Recipe Cuisine: South Indian
Main ingredients : Tomato, rice

Ingredients 

Rice - 1 cup
oil - 1 tsp
ghee - 1 tsp
mustard seeds - 1/2 tsp
cumin seeds - 1 tsp
curry leaves - 1 sprig
green chilli - 1
onion - 1
ripened tomatoes - 3 
red chilli powder - 1/2 tsp(adjust)
green peas - 1/4 cup(optional)
coriander leaves - 1 tsp
garam masala powder - 1/2 tsp

To grind 

coriander seeds - 1 tsp
fresh coconut - 1/2 cup
clove - 1
cinnamon stick - 1 inch
ginger - 1 tsp
garlic - 2 pods
red chillies -2
pudina - few strands (I did not added, as it is not available right now)

Instructions

1) Wash 1 cup of rice under water and soak it for 15 to 20 min.

2) In a small  mixer grind add all the ingredients mentioned "To grind" add some water and grind to fine paste. 

3)Now in a wide pressure cooker add 1 tsp of oil, 1 tsp of ghee when it heat then add mustard seeds. when it starts crackling add cumin seeds, later add curry leaves and fry well.

4) Then add green chillies fry well, later add finely chopped onions, salt and fry well.

5) When onions starts changing color then add fresh peas then fry it for few minutes. 

6) Now add finely chopped tomatoes cook it well on low to medium flames till it becomes mushy.

7) Now add red chilli powder, garam masala powder, adjust salt if need mix everything well.

8) Now add prepared masala paste and mix well.

9.a)If you are using normal rice -  add 2 glasses of water for 1 glass rice.  
9.b) If you are using basmati rice - add 1&1/2 glass of water for 1 glass basmati rice. 
Add water depending on the rice you are using.  boil the above  till you get bubbles on water.

10) Add soaked rice and finely chopped coriander leaves to the above mix. 

11.a) Cook rice for few seconds then close the pressure cooker and pressure cook it 3 whistles.
11.b) If you are using basmati rice pressure cook it for 1 whistle and reduced flames to low for a minute then switch off the flames. 

12) Let the pressure comes down naturally and then open the lid. mix everything well for once without breaking rice.

That's it our Karnataka Style tomato bath recipe is ready. Served it some raita and enjoy with your friends and family.

Tips:

** You can prepare this using sona masoori rice or using basmati rice, add water accordingly.

**Adding peas is optional, if available add it surely to get good taste.

White Sauce Shell Pasta || White Sauce pasta - it is very creamy, cheesy, aromatic and melt in mouth pasta recipe which is loaded with veggies. Sauce that is filled in shell pasta just burst in our mouth, you just cannot stop eating it. Many people think that preparing restaurant style Mexican recipes, Chinese recipes and other food recipes are very difficult to prepare at home. So they skip preparing at home and just order from outside. Trust me it is very very easy to prepare those restaurant style recipes at home. Coming to our recipe, pasta is one of favorite food to kids,  yes I am coming to your point not only kids everyone love's it 😍😍. This is the best way to make your kids to have veggies, as we can add veggies like carrot, capsicum, sweet corn, mushrooms, broccoli. This is perfect as starter in kids parties, they will just love and love to have it 💓. Do not blame that this pasta contains butter and loaded with cheese 😬, I personally feel it's okay to have all these on cheat days. Eat well in correct portions and do workouts💪, and let your kids enjoy all the taste. The main point is always use good quality pasta, today I used durum wheat semolina pasta and did not used any maida to prepare sauce. So do not worry just enjoy this creamy and cheesy pasta with your friends and family.

                                                     White Sauce Pasta 

Preparation time - 15 minutes
Cook Time - 20 minutes
Serves : 2 persons
Course : main
Recipe Cuisine: Italian
Main ingredients : shell pasta

Ingredients

To cook pasta

shell pasta - 1 cup( I used durum wheat semolina pasta)
oil - 1 tsp
salt - 1 tsp
water - 4 cups(adjust)

To saute veggies 

You can use veggies of your choice which I mentioned early, here I am using 

onion - 1
capsicum - 1/2
carrot -1 small or 1/2 large
sweet corn - 1/4 cup
finely chopped garlic - 2 tsp
olive oil - 1 to 2 tsp ( you can use normal vegetable oil)
pepper powder - 1/2 tsp

To prepare white sauce

butter - 3 tsp
whole wheat flour - 3 tsp
milk -2 cups(adjust)
pepper powder - 1 tsp
red chilli flakes - 1 tsp
mixed herb - 1&1/2 tsp
grated cheese - 1/2 cup (adjust according to ur taste)
salt as per taste

Instructions(will share step by step pics soon)

1) Boil 4 cups of water by adding 1 tsp of oil and 1 tsp of salt.

2)When water starts boiling add shell pasta(you can use any shape pasta) and mix everything well.

3) When pasta cooks 90% switch off flames and drain water completely and keep it aside. Do not throw pasta boiled water, we can use it in preparing sauce.

4) Now saute veggies, for this add 1 tsp of olive oil in a pan(you can use vegetable oil too) add finely chopped garlic and fry well till it starts changes color.

5) Now add all the veggies, 1/2 tsp of salt and mix it well. Add 1/2 tsp of pepper powder and fry it well, do not over cook veggies. Just fry till its raw smell goes away, you can skip adding pepper powder here. Veggies absorb that strong aroma of pepper if you add it while frying veggies. 

6) Keep fried veggies aside and prepare white sauce. For this add 3 tsp of butter when it melts add 3 tsp of whole wheat flour(you can use maida instead of wheat flour) and mix everything well till it starts changing color.

7) Now add milk little by little and mix well till you get thick sauce. Make sure that there is no lumps in sauce, If sauce is too thick use pasta cooked water. 

8) Now add grated cheese and mix everything well, our white sauce is ready now.

9) Now add salt, red chilli flakes, mixed herbs, pepper powder and mix everything well. 

10) Now add fried veggies and boiled shell pasta in sauce and mix everything well. Cook it on low flames for 3 to 4 min 

11) If you feel sauce is very thick you can add some more pasta boiled water. 

12) That's it our pasta is ready to serve.

How to serve white sauce pasta?

Spread one layer of prepared white sauce pasta on plate now add grated cheese then again spread remaining hot white sauce pasta. Sprinkle some red chilli flakes,  pepper powder and some mixed herbs. That's it our White pasta is ready to serve, serve it hot and enjoy with your friends and family.


Tips 

** Use good brand wheat pasta, to make it more healthy.

** Instead of olive oil you can use normal vegetable oil.

** Use equal portions of  butter and whole wheat flour..

** If your okay with maida you can replace whole wheat flour with maida.

** Do not overcook pasta, boil 90% . After boiling 5 min check pasta by cutting if you see white color then switch off the flames.

** As I used wheat flour we did not get white color to sauce.

 Ribbon Murukku || Ribbon Pakoda is very tasty, crispy snack which is perfect to much anytime. As Diwali is around we prepare many sweet and snack recipe, try this tasty and easy to prepare Ribbon murukku. Today I am sharing bakery style ribbon murukku, trust me you do not stop munching these murukku if you  taste it once. We prepare this murukku in different ways, the ribbon murukku which I am sharing is fail proof recipe, surely you will feel more taste than the ribbon murukku which we get in bakery. These murukku is perfect evening snack, we just need a cup of tea. Sudden guest came to home while preparing this ribbon murukku, I served them this ribbon murukku with some masala chai and enjoyed it with my green tea 😍. These ribbon murukku is travel friendly snack too, as it taste crispy for long time we can pack this for long journey's happily.                                                            Ribbon Murukku 

Preparation time - 15 minutes

Serves : 1 bowl

Main ingredients : Rice flour

Ingredients

Rice flour - 1 cup
gram flour/ besan / senaga pindi - 1/2 cup
roasted gram dal /putnalu  - 1/2 cup
cumin seeds - 1 tsp
sesame seeds - 2 tsp
red chilli powder - 1 tsp(adjust)
asafoetida - 1/2 tsp
butter - 2 tsp
oil - to deep fry 
salt - as per taste 

Instructions ( will share step by step pics soon)

1) Sieve rice flour and gram flour and keep it aside.

2) Take roasted gram dal in a small mixer jar to this add cumin seeds grind it finely and take it into cup.

3) Add oil in a wide pan to deep fry murukku, heat it on medium flames.

4) Take rice flour, gram flour and powdered roasted gram dal, salt, red chilli powder, sesame seeds, melted butter, hing/ asafoetida and mix everything well to smooth dough by adding water little by little.

5) Add 2 tsp of hot oil to the above dough mix it well, this gives good crispy texture to murukku. Divide dough into equal portion and keep it aside.

6) Take murukku machine, insert ribbon murukku plate apply oil inside the machine. 

7) Insert dough the murukku machine, check oil heat by dropping some dough if it comes up quickly then our oil is ready to prepare murukku.

8) Now press murukku machine circularly and fry it few seconds then turn it other side and fry till becomes crispy on medium flames. (** Check tips)

9) Take prepared murukku in a plate, fill dough again and repeat the same process.

10) Do not fry murukku till it changes color completely, remove it from oil when it starts changing color and when it becomes crisp.

That's it our Ribbon murukku is ready, let it cool to room temperature then store it in airtight and dry container. 


Tips

** Sieve the ingredients before using, or make sure it is lumps free.

** Grind roasted gram dal/putnalu and cumin seeds finely. otherwise cumin seeds will stuck in machine while pressing murukku. 

** Adding sesame seeds is optional, but it gives good crunchy taste to murukku.

** Do not add water all at a time, prepare some dough.

** Store it in air tight and dry container to keep it crispy for long time.
