Poha Upma||Atukulu Upma||Aval Upma

Poha is made from paddy,it also known as pressed rice or flattened rice.Aval upma/Poha Upma/Atukula upma is one of the easiest and quick fix breakfast recipe.Its much loved indian breakfast food in different parts of India.Sometimes even i had it as lunch and dinner also(when i plan for diet).We can make many sweet nd hot(snack)recipes.Sweet or hot any item done with poha taste good , and it is easily digestible.There are two types of Poha-- thin & thicker,thin Poha used for chudwa and thick Poha used for upma,lemon rice,pulihogare etc..north indian use to eat poha with potatoes .I will post all varieties of poha very soon.
Talking about calories,there are 270calories in 1cup of poha.If you are planning for diet use Poha items in our diet to reduce the calories.



Let's start the recipe..

   
 Prep Time : 5 mins

Ingredients needed:


 Aval /Poha (flattened rice)- 1 cup

 Onion - 1
 Green chilli -2 finely chopped
 Ginger - 1/2 tsp finely chopped
 Turmeric powder - a pinch
 peanuts - 2 tbsp
 Channadal-1/2 tsp
 Uraddal-1/2 tsp
 Lemon juice - 1/2 tsp

   For the seasoning:


  Oil -2 tbsp

  Mustard seeds - 1 tsp
  Cumin seeds/jeera - 3/4 tsp
  Hing - pinch(optional)
  Curry leaves - a sprig




   For garnishing:


 Finely chopped coriander leaves -1 tbsp


Process:


*Take a poha in a bowl and add water.Soak it for 3-4 minutes and then wash the poha once like  rice.Drain the water and keep it aside,d't Squeeze the poha alot it will mash.Just press the poha  to take excess water out.




*Dry roast peanuts and keep it aside.If u have roasted peanuts skip this step.


Method:


1.Take a pan add 2tsp of oil,add mustard seed when it splutter s add cumin seeds, chanadal,uraddal,hing,green chillies and curry leaves fry it.


2.Now add chopped onions,ginger,turmeric powder and salt.Fry the onions until it cook.




3.Add poha/atukulu/aval,roasted peanuts and mix well.close the lid , cook for 2-3 minutes and remove from flame.


4.Add few drops of lemon juice,mix it well.


5.Garnish with coriander leaves.




Poha upma is ready..



Note:


You can use fresh grated coconut.


You can roast the groundnuts while adding chanadal nd uraddal.But I prefer to fry  groundnuts seperately.

Poha Chivda || అటుకుల మిక్చర్ || how to prepare poha chivda in 15 minutes

Poha chivda || అటుకుల మిక్చర్  || poha mixture with detailed video and tips. Hai friends how are you all ? hope you are all safe and healthy. Poha chivda is very crispy, tasty and healthy snack prepared by adding different nuts. We have 2 different varieties of poha - thick & thin, today i am preparing chivda using thin poha. We can also prepare chivda using thick by deep frying, i will share that recipe soon. Coming to our thin poha chivda, i used almonds, cashews and raisins to make to more healthy. We can store this poha chivda fresh more than a month when it is stored in airtight container. In this lockdown period everyone staying at home and craving for snack all time. We can prepare this poha in 15 minutes easily, there are many varieties of poha chivda today i am sharing the one which i prepare regularly. Green chillies added in it are fried well, i added saunf which enhances its taste, you can skip it.

                                                         Poha Chivda 

cook Time : 15 minutes
Serves : 300 gms

Main ingredients : thin poha

Ingredients

thin poha - 200gms
oil - 4 tsp
groundnuts - 2 tsp
roasted chana dal / putnalu - 2tsp
dry coconut slices - 2 tsp
cashew nuts - 12
almonds - 12
raisins / kismis - 12g
green chilli - 4
red chilli - 4
curry leaves -1 sprig
turmeric powder - 1/4 tsp
mustard seeds - 1/2 tsp
cumin seeds - 1 tsp
fennels seeds - 1 tsp /saunf - 1 tsp(optional)
salt as per taste
sugar - 1 tsp(optional)
hing - 1 pinch

Instructions

1) Dry fry poha for a minute and take it into plate.

2) Heat oil in a pan, add groundnuts fry it, when it starts changing color add roasted chana dal fry for few seconds.

3) then add cashews, almonds, raisins, fry well.

4)now add green chillies, red chillies fry it well. Then add mustard, cumin and fennel seeds fry well. Later add  curry leaves, turmeric powder, salt fry everything well.

5) Switch off the flames and add fried poha and saute everything well.

6)At last add sugar, saute everything well. Let the chivda cool completely.

our chivda is ready store it in airtight container, this will stay fresh and crispy more than a month.

  
Tips

** Do not burn poha, just fry till it becomes crisp or for a minute.

** Fry all nuts and tempering on low to medium flames, do not burn it.

** Adding saunf / fennel seeds is optional but it gives good taste to chivda.

** You can skip sugar or you can add sugar powder instead of sugar.

** Do not store poha when it is hot, let it cool completely then store it. 

** Store it in dry and airtight container only.

Poha Badam Laddu using jaggery, Aval Badam Laddu, Atukulu Badam Ladoo

Wish you happy new year to all, Hope this new year will brings you all good health, wealth, joy, fun and happy 😍. Eat healthy and stay healthy and always keep smiling😊. This year my first post is sweet - Ladoo - Poha Badam Laddu. Which is healthy, crunchy and tasty and very easy to prepare.  Here we use thick poha to prepae this poha badam laddu. As i mentioned badam yes i love to add badam in many recipes , as it is not only healthy but also adds good taste to the laddu. I am using powdered palm jaggery which is very healthy. Adding good amount of ghee to mould this ladoo also gives divine taste and increases the shell life of Poha Badam Laddu. Regularly I prepare this ladoo for Krishna Ashtami festival. 


  
          Atukulu Badam Laddu

Preparation Time : 10 minutes
Cook Time : 15  minutes
Serves : 7 ladoos

Recipe Cuisine: Indian 
Main ingredients : Poha, Badam

Ingredients

Poha/Atukulu/Aval - 1 cup
Badam - 25
Powdered palm Jaggery - 3/4 cup
Elachi powder - 1 tsp
Ghee - 1/2 cup
Cashew nuts - 7
Raisins - 7
Milk - very little(I Dint used)

Instructions

1) Take a pan add poha dry fry till it become crispy and changes color then take it into plate and let it cool. 


2)  In the same pan add 2 tsp of ghee let it heat for a second then add cashew nuts, raisins fry it till changes color and raisins turns fluffy. And take it into cup. 


3) Take a mixer jar add fried Poha/atukulu and badam. 


4) Grind the above to fine powder. 


5) Now add elachi powder and powdered jaggery to the above. 


6) Grind the above to fine powder. 


7) Take the above powder into plate add fried cashew nuts and raisins along with ghee. 


8) start moulding ladoo by adding little amount of ghee. If you not able to mould ladoo then add some more ghee.


9) Add more ghee and mould ladoo. 


Yummy, tasty and healthy Poha Badam ladoo's are ready😋😋😍. 


Note

◆ Instead of jaggery you can also use sugar. 

◆ You d't like adding more ghee while moulding ladoo's. You can use little amount of milk. 

◆ You can skip adding nuts and raisins. 

Tips

● Important point is to use ghee to mould ladoo to get divine taste. 

● In order to increase shell life of poha badam ladoo use ghee instead of milk to mould ladoo's. 

● You can store it for more than 1 week if you are moulding ladoo using ghee.  If you are using milk then use it within 3 days otherwise you can got smell and taste also changes.

Atukula Payasam || Avalakki Payasa || Aval Payasam || Poha Kheer

Today's recipe is Atukula Payasam, traditional Indian recipe which tastes divine and easy to prepare. Atukulu in telugu is also known as avalakki in Kannada, aval in Tamil, poha in Hindi and flattened rice in english. We can get 2 varietes of flattened rice (thick and thin). We use thick poha to prepare this payasam. Poha is  Lord Krishna's favorite. My Amma daily offers avalakki and sakkiri (poha + sugar) as Prasadam in daily Pooja.  It is very easy to prepare n 20 minutes.

How to prepare Atukula Payasam

Preparation Time :  5 minutes  
Cook Time : 15 minutes
Serves : 1 bowl
Category : Desserts/Sweets
Recipe Cuisine:  Indian
Main ingredients : Atukulu/flattened rice

Ingredients 

Atukulu/ flattened rice - 1 glass
Jaggery - 1/2 glass
Water - 1/2 glass
Milk - 4 glasses
Ghee - 2 tsp
Cashew nuts - 4 (halves)
Raisins - 10
Elachi - 1/2 tsp



Instructions to prepare Aval Pasysam

1) Take a pan add 2 tsp of ghee add cashew nuts and raisins. 



2) Fry it till cashews changes to golden color and raisins becomes fluffy. And take it into plate. 



3) Add flattened rice in the same pan. 



4) Fry the above till changes to golden color and becomes crispy. 



5) Add 3 glasses of milk and let it cook on low flame, till poha becomes smooth. 



6) Take another pan add 1/2 glass jaggery along with 1/2 glass water let jaggery dissolve in water. Switch off the flames. 



7) Now filter the above jaggery syrup with strainer to remove the impurities. 


8)Add remaining  milk mix it well, our poha is cooked smoothly, add the above filtered jaggery syrup into milk mix it well and cook 1/2 a minute on low flame and switch off the flames. 



9) Add elachi powder, fried cashews and raisins to the above, mix it well and serve it into bowl. 



Yummy and divine atukulu payasam is ready😋😋

Note

◆ You can use sugar instead of jaggery. 

◆ You can also use coconut milk instead of milk. 

Tip

● Do not boil milk long time after adding jaggery, as milk will curdle because of jaggery. 

● If you are serving payasam after long time, then add some milk before serving as payasam will become thick.
