Paneer vegetable kebabs

Paneer vegetable kebab  is very tasty snack or appetizer which is perfect as evening snacks, as starter and perfect for parties and get togethers. Kebabs are popular Middle Eastern food made by meat, vegetables which are skewered with chunks meat or veggies grilled over an open flames. Today I am sharing kebab recipe by adding paneer and veggies like carrot, beans, sweet corn and potatoes. Instead deep frying I pan fried it like tikki's as I used boiled veggies. They tasted crispy from outside and smooth from inside. You can deep fry or shallow fry these kebabs as per your choice. We can have these kebabs with green chutney, ketchups of your choice.


Event : Shhhhh Secretly cooking challenge

Taking this tasty and healthy paneer vegetable kebabs to "Shhhhh Secretly cooking challenge" fb group started by Priya, and taken further till date by Mayuri di, I bookmarked her baked apple to try soon. Do check her space for wonderful recipes. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it.

                                     


This month theme is "Kebab Time" suggested by Sujata di, she is very talented and senior chef, recently I bookmarked Veg galouti kabab and  hazelnut chocolate sandesh to try some time. And this month my paired with Jaya Shree di, I like her Karnataka recipes a lot. I gave potato and ginger as secret ingredients, she prepared tasty and yummy veg shami kebabs. In turn she gave coriander powder and ginger chillies using those as few of main ingredients I prepared these kebabs.

                                 Paneer vegetable kebab 

Preparation time : 10 minutes
Cook Time : 20 minutes
Serves : 10 kebabs

Main ingredients : paneer

Ingredients

Shredded paneer - 1 cup
potatoes - 2
carrot - 1
beans - 4
sweet corn kernels - 1/4 cups
green chillies - 2 tsp (finely chopped)
finely chopped coriander leaves - 2 tsp
coriander powder -1/2 tsp
cumin powder - 1/2 tsp
black pepper powder - 1/2 tsp
red chilli powder - 1/2 tsp(adjust)
corn flour - 3 tsp
Bread crumbs - optional (I dint used)
salt - as per taste
oil - to pan fry

Instructions

1) Boil all the veggies for 4 whistles by adding 1/2 cup of water and 1/2 tsp of salt.

2) Let the pressure comes down naturally then removes veggies out and let it outside for 15 min, so that veggies become bit dry. (** this is important step, if veggies are wet then you do not get shape to kebabs and they becomes very smooth)

3) Now mash all veggies finely, later add all the spices, salt, corn flour, green chillies, coriander leaves, shredded paneer and mix everything well in a bowl.

4) If you feel above dough very smooth then you can add 1/4 cup of bread crumbs for binding.

5) Now apply some oil to your hands pinch some dough and give it tikki's shape.

6) Heat pan by adding 2 to 3 tsp of oil of fry these kebabs on low to medium flames till they changes color on both sides.

7) Repeat the same process for remaining and take it into plate. 

That's it our paneer vegetable kebabs are ready, serve hot with cup of tea and enjoy with your family :)

Masala maramaralu || karam borugulu || spicy puffed rice

 Masala maramaralu || karam borugulu || spicy puffed rice is very popular snack in Andhra and in many places of India and called with different names like masala murmura in Hindi, masala mandakki in Kannada and masala pori in Tamil. It is very easy to prepare with easily available ingredients. It is perfect tea time snack and popular snack for journey's and picnics. We can also add some onions, grated carrot, cucumber and lemon in masala puffed rice while serving, which is also called churumuri in Kannada, Jhal muri in Hindi. I am big fan of Jhal muri which we get in trains mainly while travelling North side. As they use mustard oil in it, that flavors makes you feel hungry while travelling, will share that recipe soon 😊. I loved my friend Kalyani's  microwaved masala peanuts which is also perfect snack for journey's and picnics. 

              Masala Borugulu

Preparation time - 10minutes
cook time : 15 min
Serves : 2 persons

Recipe Cuisine: Indian
Main ingredients : Puffed rice

Ingredients

puffed rice - 2 bowls
oil - 3 tsp
mustard seeds - 1/2 tsp
cumin seeds - 1 tsp
groundnuts - 2 tsp
roasted chana dal / putnalu - 2 tsp
dry shredded coconut pieces - 2 tsp
curry leaves - 2 sprigs
red chilli - 3
green chilli - 5
turmeric powder - 1/2 tsp
red chilli powder - 1 tsp
salt - as per taste
garlic - 5(optional, I did not used)

Instructions

1) Heat wide bowl add 2 TSP of  oil, 1/4 tsp of turmeric powder and puffed rice for a minute on medium flames till it becomes crispy and take it into bowl.

2) Now heat 3 tsp of oil and then fry groundnuts till it changes color and then take it into cup.

3) Now add  crushed garlic (if you want to use) fry till it changes color then add mustard seeds. When it starts crackling add cumin seeds and fry till you get nice aroma.

4) Later add green chillies, red chillies, curry leaves and fry it well. 

5) later add fried chana dal, fried ground nuts, shredded coconut pieces and fry it well. 

6) Switch off the flames and add red chilli powder, salt and mix everything.

7) Now add this mixture in fried puffed rice and mix everything well.(** If need add some boiled oil )

Tips

** Fry green chillies well so that they do not taste spicy while eating and also increase its shell life.

** Adding garlic is optional but it gives nice aroma and taste.

** If you want you can also add sev/omapodifried corn flakesfried dalmooth, my uncle also loves to add some masala peanuts in it. 

** As we already added green and red chillies, add red chilli powder accordingly.

** Let the mixture cool to room temperature and then store it in air tight container so that puffed rice stay crispy for long time.

** Do not over fry puffed rice, as they become more crispy and thick.

** In order to keep this mixture crispy for long time frying puffed rice is important.

Crunchy pasta cracker || Spicy tea time snack fried pasta || Kurkure pasta

 Crunchy pasta cracker with step by step pics and tips, this is very tasty, very crunchy and easy to prepare pasta recipe. This is perfect tea time snack which stay crunchy for long time. We can prepare this pasta with different spices today I am using some Italian herbs and cheese powder. This pasta crackers taste yummy as it is or with any dips like cheese dip. I am big fan of pasta that too cheesy and creamy pastas with more Italian flavors. My previous post is also kids favorite and tea time snack with lots of Italian spices that is capsicum rings with Italian flavors. We can add simple spices like red chilli powder and chaat masala too if you do not have Italian spices.

Taking this crunchy and tasty pasta crackers recipe to  FoodieMondayBloghop fb group's #303PastaPlease theme. By this time you are all aware that I am part of this lovely group where we bloggers share recipe for theme suggested by a person in alphabetical order every week. This week theme was suggested by "Priya Iyer" who blogs at "thephotowali".  I love all her recipes, they are very tasty, unique, traditional from different regions. I bookmarked her latest basil cream sauce pasta, pasta arrabiatta to try soon. 

                          

                                 Crunchy Pasta crackers

Preparation time - 10 minutes
cook time : 15 min
Serves : 250 grams
Category : snacks/ fritters  
Recipe Cuisine: Indian
Main ingredients : spiral pasta

Ingredients

Spiral pasta - 250gms 
oil - to deep fry + 1 tsp 
salt - as per taste
rice flour - 2 tsp
corn flour - 1 tsp
red chilli powder - 1/2 tsp 
cheese powder - 1 tsp 
oregano mix - 1 tsp
pepper powder - 1/4 tsp 
garlic powder - 1/4 tsp(optional)

Instructions

1) Boil 3 to cups of water in a bowl by adding 1/2 tsp of salt and 1 tsp of oil.

2) When water starts boiling add pasta cook it medium to high flames. Cook 70 % that is when you cut the pasta you can see white lining.

 


3) Drain pasta and let it cool to room temperature. Later sprinkle rice flour, corn flour and mix everything well and let it set for 5 to 10 min.


4) Mean while heat oil to deep fry.  

5) Take all the spice powders in a cup, mix everything well and keep it aside.

6) Now deep fry pasta in batches on low to medium flames, when it starts changing color take into bowl. 
Tip:
* You will crackling sound while frying do not be scared 😄. 
* Do not over fry pasta as they will turn hard. Just fry till they changes color. 

 


7) Repeat the same process for remaining and take it into bowl. Immediately add prepared spice mix and cheese powder and mix everything well when it is hot.

Tips

** You can use any variety pasta as per your availability.

** Use spices of your choice or simply add red chilli powder and chaat masala.

** Add spices and cheese powder when pasta is hot.

** You can use homemade cheese powder or store bought as per availability.

** Instead of rice flour and corn flour you can add all purpose flour.

** Do not over fry pasta, they will turn hard and unable to eat.

Homemade bread crumbs || How to prepare bread crumbs at home without using oven

 Homemade bread crumbs without using oven are prepared by processing bread into fine powder. It is easy to prepare bread crumbs instead of purchasing. Bread crumbs acts as binding agent for many snack items, we can also prepared bread crumbs with left over bread pieces easily.          Bread crumbs are used for coating and binding, this will hold the shape and gives good crunchy taste. For example for capsicum rings or onion rings etc. after dipping capsicum/ onion in batter we coat it with bread crumbs. For potato lollipops we mix bread crumbs in potato mix, so depending on the type of recipe we can bread crumbs as binding or coating. We can use fresh bread crumbs or roasted bread crumbs depending the recipe. The texture of fresh bread crumbs is coarse and roasted bread crumbs will be fine powder.


We can prepare roasted bread crumbs in two different ways

1) By roasted bread and then grinding

2) By grinding and then roasting

You can also prepare bread gulab jamun by using fresh bread crumbs. You can also any variety bread of your choice like brown bread, milk bread, multi grain bread.

Preparation time - 10 minutes
cook time : 10 min
Serves : 250 gms appro

Ingredients 

 Bread slices - 5

Instructions 

Way 1\

1)Dry fry bread slices on pan in low to medium flames till it changes both sides evenly and becomes hard.

2) Repeat the same process for remaining and keep it aside to cool to room temperature.

3) Later cut roasted bread crumbs into pieces and grind it to fine powder and take it into bowl.

4) Let the bread crumbs cool, later store it it into airtight container for further use. For better use store it refrigerator and can use more than 3 months. ** check tips

1) Firstly cut bread into pieces and grind it to fine powder.

2) Now dry fry above bread crumbs in pan till changes its color evenly.

3) Later switch off flames and cool it to room temperature. 

4) Later store it in dry air tight container as mentioned in way 1

That's it our bread crumbs are ready, use it in your recipes accordingly for stuffing or roasting or in any other ways.


Tips

** In order to increase the shell life of this homemade bread crumbs store it in dry and cool place. 

** Use dry and air tight container for storing

** Dry fry bread(way 1) or bread crumbs(way 2) without burning.
