Dahi Sandwich || Hung curd Sandwich

Dahi sandwich or Hung curd Sandwich is tasty sandwich recipes which we can prepare easily at home. These sandwiches are very creamy and loaded with veggies. We can have it as breakfast and evening snacks, it is very filling, tasty and healthy too. For this we can use homemade or store bought hung curd.


 Event : Shhhhh Secretly cooking challenge

Taking this creamy and healthy hung curd Sandwich recipe to shhh cooking secretly challenges. This month theme "No cook recipes" suggested by Renu, do check her space for more interesting recipes. This month I am paired with Preethi di, I gave lemon juice and pepper as secret ingredients,  she prepared healthy and tasty Whole black urad dal salad . Inturn Preethi di gave butter and cabbage as secret ingredients. Both the ingredients gave good taste to my sandwiches.


                              

                 Dahi Sandwich 
      
Preparation Time : 15 minutes
Serves : 4 sandwich 
Category : snack
Recipe Cuisine: Indian
Main ingredients : bread, curd

Ingredients 

Bread slices -6

Hung curd - 1 cup 

Butter - 2 to 3 tsp adjust

Onion - 1

Grated cucumber - 1/4 cup 

Grated Carrot - 1/4 cup 

Finely chopped cabbage -1/4 cup 

* You can also add capsicum 

pepper powder -as per taste 

Salt - as per taste

 you can also add green chilli or red chilli powder according to your taste.

Process 

1) place muslin cloth on wide bowl and add curd. Strain water, tie it and leave it for 2 hrs. If you are using hung curd skip this step. 

Note: you can also keep this tied curd inside refrigerator.

2) Finely chop onions and take it into bowl. 

3) Grate cabbage and carrot and add it to above bowl.

4) Grate cucumber and keep it aside for few minutes. Now squeeze excess water and add it above bowl.

5) Add salt  to the veggies and keep it aside.

6)Cut bread sides (if u want you can keep it) and apply butter to one side of bread and keep side.

7) squeeze excess water from veggies if you find any. 

8) Now add prepared hung curd and pepper powder to veggies and mix everything well.

9) spread veg mixture on bread slices and cut it into desired shape. 

That's it our creamy and tasty hung curd sandwiches are ready to serve .

Paneer Do Pyaza, restaurant style paneer do pyaza

 Paneer do pyaza || Restaurant style paneer do pyaza at home. Paneer and onions cooked in creamy tomato mixture tastes super yummy, we can pair it with naans, roti's or even with any flavored rice items. Any recipe prepared using paneer is my favorite, yes I hear you, its yours favorite too right?? 😉. Whenever I go restaurants I always order paneer item then I search other recipe for pairing. I tasted different types of paneer do pyaza recipes, today I am sharing the recipe which I tasted first @Talcher, Odisha restaurant. Do means two and pyaza means onions, paneer and onions are two main ingredients in this recipe. Are you thinking whats special in my recipe?? Its the way of adding onions. We can add onion petals or small onions to prepare this paneer do payaza. I am using small variety onions, you can use sambar onions or onions petals.  I had this with simple and tasty sweet corn pulao.

Taking this creamy and tasty Paneer do pyaza recipe  to "Shhhhh Secretly cooking challenge" fb group started by Priya, and taken further till date by Mayuri di ND Renu. I liked curried chickpea stuffed sweet potatoes recipe shared by Mayuri di. I also saved Renu's steamed broccoli vadi recipe to try soon. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it.


 This month theme restaurant style recipes was suggested by me. I paired with Radha Rajagopalan, she gave turmeric powder and tomato as secret ingredients. In turn I gave pepper and cream as two secret ingredients.Radha prepared this healthy and tasty panera style broccoli cheddar soup.

                        Paneer Do Pyaza 

Preparation time : 15 minutes
Cook Time : 20 minutes
Serves : 2 persons
Category : Paneer recipes 
Recipe Cuisine: Indian 
Main ingredients : paneer, onion

Ingredients

Small variety onions - 6

(You can use onions petals or sambar onions)

Paneer - 200 gms

Tomato  - 2

Cashew nuts - 12

Oil - 3tsp

Butter - 1 tsp

Cardamom - 1

Clove - 1

Cinnamon stick - 1/2 inch

Cumin seeds - 1 tsp

Ginger garlic paste - 1tsp

Finely chopped onions - 1 cup

Salt - as per taste 

Turmeric powder - 1/4 tsp

Chilli powder - 1 tsp(adjust)

Coriander powder - 1/2 tsp

Garam masala - 1/2 tsp

Fresh cream - 1/2 cup

Kasuri methi - 1 tsp


Instructions 

1) Peel onion skin x cut at the top of small onions. 

2) Fry these onions in 1 tsp of oil on low flames till they changes color. Later take fried onions in plate and keep it aside.

3) Grind chopped tomatoes and cashew nuts to fine paste by adding little water and keep it aside.

4) Heat butter and oil in a wide pan, to this add cumin seeds fry it for few seconds. Later add remaining spices and fry till you get nice aroma. 

5)Now add finely chopped onions, fry it on low to medium flames till it changes color.

6) Now add tomato and cashew nuts gravy to the above. 

7) when gravy becomes thick add salt, chili powder, coriander powder, turmeric powder and mix everything well.

8) Now add required amount of water and  cook gravy for a minute. 

9) Later add paneer pieces, fried onions to the gravy and mix everything well.

10) Cook the above for 5 to 10 minutes till gravy becomes bit thick. Paneer and onions absorb gravy by this time and oil also oozes out.

11) Atlast latest add garam masala, kasuri methi, fresh cream and mix everything well. 

That's it our paneer do pyaza is ready to serve.Serve hot and enjoy with friends and family. 




Tips

** Instead of small onions, you can add onion petals or sambar onions.

** You can fry onions in butter to get good taste.

** Adjust chili powder as per your taste.

Poornam bobbatlu || Pooranam holigalu || puran poli || Poornam bakshalu

Poornam holigalu || Poornam bakshalu || Puran poli with pics and tips. Happy Diwali - 2021 to all friends and family 🎆🎇Poornam bakshalu is Indian flatbread prepared by using different stuffings. Puran poli is also popularly known as bobbatlu or bakshalu in Telugu, holige in Kannada and poli in Tamil. This is one of the main sweet recipe prepared on special occasions in South India. Mainly in my home town Adoni it is prepared on special occasions like Ganesh festival, Vara Lakshmi pooja,Diwali, Lakshmamavayya jathara, functions like marriages, naming ceremony etc.., We can prepare different varieties of poli like puran poli, coconut poli, vegetable poli, karam poli, sooji poli. In all these Puran poli is very popularly, which is prepared by using sweet dal stuffing called as poornam in Telugu. We can prepare dough using all purpose flour or wheat flour or chiroti rava. Today I am using chiroti rava to prepare dough instead of maida. Let's start recipe..

This month theme "Diwali Dhamaka" was suggested by admins Mayuri & Renu. I bookmarked Mayuri di's kalakand and Renu's milk powder chocolate ladoo  recipes to try for coming Diwali. I am paired with Kalyani who blogs at "Sizzlingtastebuds", do check her space for different varieties of recipes from different regions. I gave saunf and powdered sugar as secret ingredients, she prepared air fryer makhana chivda recipe.In turn Kalyani gave me chiroti rava and toor dal as secret ing, both ingredients helped me to get tasty bobbatlu.

                             Poornam Bobbatlu

Soak time : 3 to 4 hours 
Preparation time : 20 minutes
Cook Time : 30 minutes
Serves : 15 poli
Category :Sweets/ Desserts
Recipe Cuisine: Indian 
Main ingredients : Chiroti rava, dal & jaggery

Ingredients

For dough 

Chiroti rava - 2 cups

salt - 1 pinch

turmeric powder - 1/4 to 1/2 tsp

oil - 1/2 cup(adjust)

For stuffing 

toor dal - 1 cup

chana dal -  1 cup

grated jaggery - 1&1/2 cup to 2 cup(adjust as per your taste)

elachi powder - 2 tsp

 Others:

ghee - 1/2 cup to fry poli 

Instructions

Dough Preparation

1) Take chiroti rava in a wide bowl to this add salt, turmeric powder and mix everything well.

2) Now sprinkle water little by little and mix everything well till get smooth dough.

3) Now add 1/4 cup of oil and knead it well till dough absorbs oil, later add remaining oil and rest it for 2 to 4 hrs by closing lid.  


 

 Stuffing/ poornam preparation 

1) Wash & soak both toor dal and chana dal in enough water for 1 hr.

2) Now take dal in pressure cooker and add 4 cups of water(for 2 cups of dal add 4 cups of water )  and pressure cook it for 2 whistles.

3) Let the pressure comes down naturally, strain dal and remove water completely. Let it cool to room temperature and becomes bit dry .

4) Now grind cooked dal by adding jaggery to smooth paste and take it into bowl. 

5) If prepared poornam is thick then add elachi powder and mix everything well and keep it aside to cool.

6) Otherwise take prepared poornam/puran in kadai, cook it on low to medium flames by adding elachi powder till it becomes thick and then let it cool. 

7) Now pinch some dal mixture, mold it as round ball and keep it aside.

Poli preparation  

1) Take poli paper which we used to prepare poli or butter paper or banana leaf or any thick cover like oil covers. Add some ghee or oil on it and spread it well, also apply ghee or oil to your hands.

2) Now pinch lemon size dough, spread it like small poori. Then place prepared dal stuffing/puran/pooram and close it without having any pleats as shown.


3) Now press the above with your fingers all the corner and give it round shape as shown.

4) Take the above prepared poli cover in one hand and reverse it on our hand and then spread it on hot tawa. If you are using butter paper or banana leaf then directly place it on tawa leave it for a second and then remove banana leaf. 

5) Add ghee on and around poli and fry it for few seconds, later turn it other side and fry till it changes color both sides.

6) Puran poli is ready, take it into plate. Repeat the same process for remaining, serve it hot by adding lots of ghee on it 😋😍.
 

Tips

** Instead of chiroti rava you can also use maida.

** you can also use either toor dal or chana dal.

** Make sure that puran or poornam is thick.

**Inorder to get delicious bobbatlu use ghee to fry poli.

Jalapeno cheese dip || Cheesy and super yummy jalapeno dip

 Jalapeno Cheese Dip || cheesy jalapeno dip is super tasty and lip smacking dip recipe which is very easy to prepare. Jalapeno is very hot chilli pepper, used in Mexican cooking. Jalapeno is originated from Mexica - Xalapa(Jalapa) .  And its name Jalapeno is given by Spanish, it is widely used in many countries and now a days it is available in many grocery stores. I regularly use jalapenos in my pizzas, sand witches and burgers. Few days we ordered Pizza with jalapeno cheese dip, hubby loved it a lot. So I thought to try it at home in my style. It came out very tasty, wish you will love it. We had this Jalapeno cheese dip it some French fries 😋.


                                       Jalapeno Cheese Dip

Preparation time - 10minutes
cook time : 15 min
Serves : 2 persons
Category : Chutneys / dips
Recipe Cuisine: Mexican
Main ingredients : Jalapeno, cheese

Ingredients

butter - 2 tsp
wheat flour - 2 tsp
milk - 3/4 cup
Jalapeno - 3 tsp
processed cheese - 1/2 cup
cheese slice - 1
garlic - 3
salt - as per taste
red chilli powder - 1/2 tsp
black pepper - 1 tsp

Instructions

1) Heat 2 tsp of butter in a pan, later add 2 tsp of wheat flour and fry till it changes color.

2) Now add milk and mix everything well, make sure that there is no lumps in milk.

3) Now add finely chopped garlic and mix well. If you do not  like strong garlic smell and taste, then you can fry it in butter.

4) Then add finely grated processed cheese, cheese slice and mix well. Mix everything well so that cheese d't stick to pan.

5) Now switch off the flames, then add required amount of salt, pepper powder, red chilli powder and mix everything well.(already salt there in cheese so be careful while adding salt).

6) Later add very finely chopped jalapenos and mix well. 

options: If you want you can grind the above mixture to fine                      paste or blend it using hand blender to get smooth paste 
              texture. 

That's it our Jalapeno Cheese dip is ready, serve it with any snacks or pizza or bread sticks or Nachos or chips .........

Kakarakaya Pulusu || Andhra style bitter gourd gravy

 Kakarakaya Pulusu || Andhra style bitter gourd curry with step by step pics and tips. It is very tasty and healthy recipe with less bitterness, its spicy and aromatic. I am not big fan of bitter gourd in my childhood but d't know how it became one of my favorite veggie now 😃😍. We can have this kakarakaya pulusu with rice and roti's. We can prepare this bitter gourd pulusu in different ways --

 1)by deep frying bitter gourd 

2) by shallow frying bitter gourd

3) by cooking bitter gourd directly ..

 Today I am sharing 3rd way by cooking directly with onions & tomatoes. In this way we will feel very little bitter taste, if you d't want to taste bitterness then deep fry bitter gourd pieces. Instead of deep frying I soaked bitter gourd pieces in buttermilk for 30 min, check recipes for more tips. We can adjust this pulusu/ gravy consistency as per your wish. Hubby was on trip so I prepared it bit thick, as I have to finish it by myself . stuffed bitter gourd is my all time favorite recipe which I love to have it as side dish for rasam rice, sambar rice and curd rice. I bookmarked her karela ka bartha recipe to try. This month I am paired with "Priya Iyer" who blogs at "thephotowali". She shares healthy recipes from different regions, I bookmarked her latest basil cream sauce pasta to try soon. Priya gave tamarind & jaggery as secret ingredients, in turn I gave methi leaves & turmeric as two secret ingredients.she prepared tasty and delicious methi malai paneer, do check out her space.


                  Kakarakaya Pulusu/ Andhra Bitter gourd gravy  

Preparation time : 20 minutes
Cook Time : 20 minutes
Serves : 2
Category : Dal/Sambar/Rasam/Pulusu/kuzhambu/pulusu
Recipe Cuisine: Andhra 
Main ingredients : Bitter gourd

Ingredients

Bitter gourd - 2 (medium size)
Onions - 2
Tomatoes -1 (large)
buttermilk - 3 cups 
curry leaves - 1 sprig
coriander leaves - 3 tsp(finely chopped)
dry coconut powder/paste - 1/2 cup
tamarind - small lemon size
jaggery - 1 tsp
coriander powder - 1 tsp
cumin powder - 1/2 tsp
red chilli powder - 1 tsp(adjust)
turmeric powder - 1/4 + 1/4 tsp
fenugreek seeds - 1/4 tsp
cumin seeds - 1tsp
garlic - 10 pods

Instructions

1) Take buttermilk in a wide bowl, to this add 1/4 tsp of turmeric powder, pinch of salt and mix everything well.

2)Later lightly peel out bitter gourd skin, cut it into rounds. If you feel bitter gourd seeds hard remove it. Then soak bitter gourd pieces in above buttermilk mixture and leave it for 30 minutes.


3) Mean while we will start gravy preparation, grind dry coconut to fine powder and keep it aside. If you are using dry coconut powder skip this step. Soak tamarind in hot water and keep it aside.

4) Heat 3 tsp of oil in a wide pan to this add garlic pods and fry it on low flames. When it starts changing  color add fenugreek seeds and cumin seeds. Fry till you get nice aroma.


5) Now add curry leaves, roughly chopped onions fry it on low flames till it changes color. Later add chopped tomatoes and mix it well, cook it for  5 minutes or till tomatoes becomes mushy by closing lid.


6) Meanwhile drain out buttermilk and squeeze buttermilk from bitter gourd. Add bitter gourd pieces in above onion tomatoes mixture and mix everything well. Cook this on low to medium flames till bitter gourd becomes smooth. 


7) Now add tamarind juice in above mixture and mix everything well.

8) Now add jaggery powder and mix everything well. Jaggery cut off  bitterness so d't forgot to add jaggery. 


9) Now add dry coconut powder, coriander powder, cumin powder, red chilli powder and turmeric powder and mix everything well.


10) Adjust water according to your consistency and mix well. Finally add finely chopped coriander leaves and cook it on low flames till gravy becomes thick.

That's it our kakarakaya pulusu/ Bitter gourd gravy is ready to serve. Serve it with hot steamed rice, dollop of ghee and papads. 


Tips

** Soaking bitter gourd in butter milk will cut off its bitterness.

** If you want you can deep fry or shallow fry bitter gourd pieces.

** Adjust gravy thickness according to your wish. 

** You can add dry coconut powder or dry coconut paste.

** Jaggery cut off bitterness and gives good taste, so d't skip adding it. 

** Do not use bitter gourd seeds, if they are hard.
