Sabja masala buttermilk, sabja masala chaas, sabja majjiga, how to prepare buttermilk using sabja seeds

Sabja masala buttermilk is very healthy drink in this summer season. It is easy to prepare with less ingredients. There are many health benifits of using sabja seeds like it reduces body heat and makes cool which is must in this summer season. It reduces weight, controls blood sugar levels, relieves constipation and bloating problem, protect liver and it is rich in vit A and so many. And we are familiar with benifits of buttermilk, I try to use this sabja seeds in some or other ways daily. I use sabja seeds in lemon juice, Mango falooda,  strawberry falooda , in roofa afza. Also check Mango lassi. We can also have it with coconut water if you are body is very heat. 


        Sabja masala buttermilk

Ingredients

Sabja seeds - 2 tsp(big)
Curd -1 cup Green chilli - 1 small or 1/2 large Coriander leaves - 1 tsp(chopped) Cumin powder - 1 tsp or cumin seeds - 1 tsp Lemon - 1/2  Ice cubes - 3(I Dint used) Water - 1 glass(adjust) Salt as per taste
Instructions
1) Soak sabja seeds in water for 20  minutes  


2) Meanwhile prepare masala buttermilk. Take curd in a mixer jar add green chilli, coriander leaves, ginger and salt into it. If you want to use ice cubes add here.. (**check tips)



3) Blend the above for a minute. 


4) Take the above into bowl and add cumin powder or crushed cumin seeds and lemon juice. 


5) Now add soaked sabja seeds to the above. 


6) Mix the above well by adding 1 glass of water, adjust salt accordingly if needed.

Tips
** You can use sweet or bit sour curd according to your taste. But masala buttermilk taste great if we use bit sour curd. 
** You can also add ice cubes while blending curd. 
** you can add jeera powder or crushed jeera. Today I used fried and crushed jeera. 
** Do not squeeze green portion of lemon juice  it will change taste. 
** You can also garnish it with pudina leaves. Today pudina is not available at home so I did not used. 

** Adjust water, chilli, salt and lemon juice according to your quantity.

Mamidikaya pappu, raw mango dal, mavinakayi thovvi, Manga paruppu

Today's recipe is seasonal, tangy and tasty Mango dal. It is know  as mamidikaya pappu in Telugu, mavinakayi thovvi in Kannada, Manga paruppu in Tamil. Dal and Rasam  are must in South Indian meals. Dal can be prepared with different combination like tomato dal/pappu, Menthi akku pappu  thotakura pappu, chintachiguru pappu... Mamidikaya pappu is one of the popular and famous dal recipe in Andhra. As summer season starts our Mango recipes too started. Mango dal tastes different in each home in different regions. But it taste very yummy.  The way which I am sharing today is my mom's recipe, which I learned from her.  



             Mamidikaya pappu

Preparation Time : 10 minutes
Cook Time : 20 minutes
Serves : 4

Main ingredient: Mango, toor dal

Ingredients 

Mango - 1 small  or 1/2 large 
Toor dal - 1 cup
Water - 2  cups + 1 cup
Green chilli - 2
Turmeric powder - 1/4 tsp
Red chilli powder - 1 tsp
Salt as per taste
Coriander leaves- 2 tsp(chopped)

For tempering

Ghee - 2 tsp or oil - 2tsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1 tsp
Hing - 1 pinch
Curry leaves - 1 sprig
Red chilli - 1

Instructions 

1) clean and soak toor dal for 15 min. (**check tips)



2) Later take it into pressure cooker add 2 cups of water and cook it for 3 to 4 whistles. (**check tips)



3) Let the pressure comes down in cooker, meanwhile peel mango skin  remove seed and cut into pieces. (** check tips)



4) Heat a pan with a pinch of oil then add mango pieces and fry it on low flames by closing lid. 



5) Once mango pieces becomes bit smooth add green chilli, salt fry it again for a minute, then add 1/2 cup water turmeric, red chilli powder, coriander and curry  leaves. 



6) Cook till everything mixes well as shown below. 



7) Mash cooked toor dal and add to the above. If you want you can add dal without mashing. (**check tips)



8) Mix the above well by adding 1/4 cup of water(or adjust water accordingly) and let it boil for few minutes on low flames. 



9) Meanwhile heat Ghee or oil in a pan add mustard seeds when it starts spluttering then add cumin seeds, red chilli, hing and curry leaves fry everything well. 




10) Mix dal well add chopped coriander leaves and switch off the flames. 

Add tempering to the cook dal and serve it hot. 


Today we had this tangy and tasty mamidikaya pappu with hot steamed rice, spicy coconut powder, cabbage curry and curd 😋😋. 


Note

* we can add onions, also use garlic in tempering. 

* We can also use moong dal instead of toor dal. 

* Adjust water according to consistency you wish. 

* Adjust chilli according to your taste. 


Tips

** You can skip soaking if no time. Then cook dal in medium flames for 5 minutes and then cook in high flames for 3 whistles. 

** Donot cook mango pieces too smooth, mango dal tastes good when we get mango pieces while eating. 

** If you do not like Mango bites then cook Mango in cooker for 1 whistle after boiling dal. 

** If your Mango is not tangy then we can add pinch of tamarind juice. 


** You can skip red chilli and use only green chilli too to get yellow color dal. 

** using  Ghee for tempering gives good taste to dal. You can also use oil too.
