Kakarakaya karam podi, bitter gourd spicy powder, diabetic friendly bitter gourd karam podi

Kakarakaya karam podi - Bitter gourd spicy powder with step by step pics and tips. Kakarakaya karam podi is spicy, less bitter, super tasty and very aromatic. Karakaya in telugu is also called as pavakkai in Tamil, karela in Hindi and hagalakayi in Kannada. Many of us hate bitter gourd to the core i am also one in that once , but you know i changed long back after eating my katsu doddamma bitter gourd curry. This bitter gourd karam podi is for them who hates it, as it is not bitter like curries, so you can have it happily. Taste of this karam podi depends on two things, 1- quantity of ingredients, 2 - how you are frying, so take care of these things.  If you take less quantity of bitter gourd and add other ingredients more (viceversa) then you do not get the perfect taste. This podi is tastes spicy and makes your house very aromatic with its flavors. Trust me this is the best way to start eating bitter gourd. As bitter gourd is very helpful for diabetic patients, boots immune system, lowers bad cholesterol levels. I just love to have this hot steamed rice with dollop of ghee, it also goes well with idli, dosa, upma and other breakfast too. This   stuffed bitter gourd curry is also very tasty check it out.

She suggested us to share condiment recipes that lesser known. So i decided to share this recipe, because kids and many of us d't like eating bitter gourd because of its bitter taste.            Kakarakaya Karam Podi / Bitter Gourd spicy powder 

Preparation time - 10 minutes
cook Time : 15 minutes
Serves : 1 cake

Ingredients

bitter gourd - 250 gms
coriander seeds - 2 tsp
urad dal - 2 tsp
chana dal - 2 tsp
mustard seeds - 1/4 tsp
cumin seeds / jeera - 1 tsp
fried groundnut seeds - 1 tsp
sesame seeds - 1 tsp(i did not added)
garlic pods - 12
red chillies - 12 adjust
tamarind - small amla size
curry leaves - 1 sprig
jaggery powder - 1/2 tsp
salt as per taste

Instructions

1) Clean bitter gourd under water and tap it with kitchen towel and grate it using grater. Do not peel its skin and do not discard seeds. (**check tips)



2) Add 2 pinches of salt to the grated bitter gourd and keep it aside for 30 minutes and start frying other ingredients.


3) Take a wide and heavy bottomed pan first fry coriander seeds on medium flames when it starts changing color add mustard and cumin seeds fry a second and take it into plate.



4) Now fry urad and chana dal on medium flames till they changes color and take into above plate. If you do not have fried groundnut seeds fry here, if you want to add sesame seeds then fry here.


5) Add some oil in the same pan and fry red chillies, garlic and curry leaves and take it into plate, add fried groundnut seeds and tamarind and let it cool.



6) Now squeeze water from bitter gourd, add 2 tsp of oil in the same pan and fry grated and squeezed bitter gourd on low to medium flames till it changes green to brown color. (** check tips)




7) Let the above cool, grind other fried ingredients coarsely by adding salt. Do not add all red chillies at once, until unless you know about its spicy.


8) Now add fried bitter gourd and jaggery powder and grind it corasley. 


9) After grinding spread podi in plate for some time and store it in airtight container.


That's it very aromatic, healthy, spicy, tasty and diabetic friendly kakarakaya karam podi is ready to serve. Surely try this karam podi at home and make your family healthy.




Tips

** Adjust quantity of ingredients depends on the quantity of bitter gourd you are using.

** Fry all the ingredients in low to medium flames.

** Instead of grating bitter gourd you can also chop it into fine pieces and fry it, but grating bitter gourd will fry evenly and gives good taste.

** Make sure that you fried bitter gourd without any moist, then only we can store it for long time.

** I did not added sesame seeds/ nuvvulu / til you can fry it while frying dals.

** You can skip adding jaggery.

** Instead of garlic you can add hing.

** Keep powder out for some time and then store it in airtight container.

Vegetable Fried Rice - Chinese Style Veg Fried Rice

Today's recipe is vegetable fried rice - chinese style veg fried rice. Now a days almost everyone love chinese recipes like fried rice, manchurians, noodles, spring rolls etc., and i am also big fan of all these as you all. The recipe which i am sharing one of big hit at home. I love fried rice prepared using basmati rice, because of its aroma and taste. We can prepare this veg fried rice with regular sona masoori rice in 5  to 10 minutes, if rice is cooked readily. And we can also prepare this with left over rice too, your kids surely love to have it when you serve this at evening times when they come from school.  Today i used carrot, beans and spring onion greens(home grown) to prepare this, you can add different color capsicum, mushroom and cabbage as per your wish and availability. Generally for street style and Indo Chinese version veg fried rice we add green and red chilli sauces and tomato ketchups. For Chinese authentic Fried rice we use only soya sauce, the spicy taste is from pepper and green chillies we used. Will post street style veg fried rice soon..




This year 2020, Chinese celebrating first day New year on 25 January, initiating the "Year of the Rat", generally referred as Lunar New Year globally. Chinese New year celebration features dragon and Lion dances. Main Chinese New Year activities include decorating, eating reunion dinner on New Year's Eve with family, fireworks and fire crackers, giving red envelopes and other gifts. Some common gifts includes fruits,cakes, chocolates and candies. Wishing all a happy Chinese New Year " Gong Xi Fa Cai" means wishing you to be prosperous in the coming new year :) (gathered information from wiki).

I bookmarked many of her many recipes to try, in that pistachio coated dry fruits seeds ball is my favorite. Also liked her latest steamed eggplant chinese style recipe, which is very tempting.

               

  



                           Vegetable fried rice - Chinese Veg Fried Rice 

Preparation time - 10 minutes
Soak time - 20 minutes
Cook Time : 10 minutes
Serves : 1 bowl / 2 people

Ingredients


To Prepare rice

Basmati rice - 1 cup
water - 4 cups
salt - 1 pinch
lemon - 1/2
oil - 1/2 tsp

Veggies, sauce and others

sesame oil / vegetable oil - 2 to 3 tsp (adjust)
onions - 2
green chilli -2 
garlic cloves - 6 to 7
carrot  - 1 
beans - 6
spring onion greens - 1/2 cup (finely chopped)
soya sauce - 2 tsp
black pepper powder/crushed - 1 to 1 and 1/2 tsp (adjust)
white vinegar - 3/4 tsp or lemon juice - 1/2 tsp
red chilli paste - 1/2 tsp ( If you are planning to prepare Indo Chinese fried rice then you can add
Green chili sauce - 1 tsp
red chilli sauce - 1 tsp)
salt as per taste(remember sauce contains salt so add          accordingly)

Instructions

1) wash basmati rice gently under water and soak it for 15 to 20 minutes in water. Later heat 4 cups of water by adding salt, lemon juice and 1/2 tsp of oil then add rice and cook it on high flames till rice cook , it  take 5 to 7 minutes. Check it by taking 2 to 3 rice grains by pressing with your fingers. If it mash easily then rice cooked well.






2) Then switch flames drain water in strainer and wash it once in cold water and spread it in plate by adding some oil on it. Let it cool and dry by keeping it under fan. Make sure that you drained water completely.





3) Finely chop all the veggies and keep it aside.


4) Heat a wide heavy bottomed pan with oil then add garlic fry it for a second on high flames.



5) then add onions, green chillies fry till it changes color then add carrot and beans. Fry them on high flames by stirring continuously, no need to  cook it completely.



6) Now add half portion of finely chopped spring onion greens and mix everything well.

7) make centre and add salt, 1/2 tsp of black pepper powder , red chilli paste mix everything well.



8) Now add boiled rice, soya sauce, black pepper powder and vinegar. saute everything well without breaking rice. Let it for a minute and switch off the flames. 




Chinese Style veg fried rice is ready to serve, serve hot by garnishing with remaining spring onion greens and enjoy with your family.

Tips

** Instead of basmati rice you can prepare it with regular rice.

** You can also prepare it with left over rice.

** You can also add other veggies like cabbage, different colors of capsicum , mushrooms, green peas as per your availability. 

** Do not overcook vegetables, it must be crunchy then only fried rice tastes yummy.

** For Chinese authentic Fried rice we use only soya sauce, the spicy taste is from pepper and green chillies we used. If you want more spicy you can add red chilli paste or sauce as per your taste.

** Adjust spices quantity according to your taste.

** Cook basmati rice perfectly then only you will get perfect fried rice.

** I like fried rice bit spicy so i added some red chilli paste you can add red or green chilli sauces to make it more spicy.

Oats Ven Pongal || Oats Pongal

Happy Makara Sankranti to all friends and family. Hope everyone enjoying Sankranti festival holidays with your family. Today i am sharing Oats Ven Pongal - Ven Pongal prepared using oats. Regularly we prepare pongal with rice and moong dal/ pesara pappu, here i am replacing rice with oats. I had as it is without any chutney, it taste very delicious and goes in smoothly. It is easy to prepare, if you are planning for weight loss this recipe will helps you. For Makara Sankranti we prepare many sweets and snack recipes, in that katte pongal / ven pongal and sweet pongal are prepared commonly in all 
regions. 



Makara Sankranti is celebrated to mark the beginning of the harvest season in India, and this festival is dedicated to Lord Surya and also marks the beginning of Uttarayana . This festival is celebrated in India with different names. In Andhra we celebrate this festival for four days - Bhogi, Makara Sankranti(Pedda Panduga), kanuma and mukanumma. All family members gathers for this festival, i use to love this festival a lot in my childhood because we use to get 10 days holidays in school 😂😍. Bhogi mantalu,Bhogi pallu, color muggulu / rangoli, kodi pandem / cock fighting  are some main rituals during Sankranti festival. We draw beautiful rangoli / kolam with many different colors and patterns with cow dung balls called as gobbemmalu with flowers and different kinds of grains.

                                                            Oats Ven Pongal
                           
Preparation time - 5 minutes
cook Time : 15 minutes
Serves : 1 bowl
Category : Breakfast / Festive
Recipe Cuisine: Indian 
Main ingredients : Oats, Moong dal

Ingredients

Oats - 1 cup (I used Lion brand)
moong dal / pesara pappu - 1/4 cup
oil - few drops

For tempering

ghee - 2 to 3 tsp
cumin seeds - 3/4 tsp
black pepper cor - 5 to 7
ginger - 1 inch (chopped)
curry leaves - 1 sprig
cashew nuts - 7 
hing - small pinch
salt as per taste 

Instructions

1) Dry fry moong dal till you get nice aroma then wash it under water twice. Add 1 glass water and few drops of oil and pressure cook it for 3 whistles, once pressure comes down lightly mash cooked moong dal.







2) Dry fry oats till it starts changing color and take it into plate. 




3) Add 4 glasses of water and salt in a pan, let it boil then add fried oats. Cook till oats becomes smooth it won't take much time.



4) Then add cooked and mashed moong dal to it and mix everything well. (if need add some water)




5) Heat ghee in a pan, then add cumin seeds, ginger, cashew nuts, lightly crushed peppercorn, curry leaves and hing one after other and fry it.



6) Add tempering into oats pongal with extra ghee.




That's it Oats Ven Pongal is ready to serve.




Tips

** If you want it spicy then you can add green chilies in tempering.

** Add ghee according to your taste or you can skip it if you planning it in out weight loss diet.

** Adjust water accordingly, oats taste good when it is hot.
