Aratikaya bajji, raw banana bajji, vazhakkai bajji

Aratikaya bajji is very popular on South indian streets as snacks. You can have it as evening snacks at tea time, or serve at lunch. It is very easy to prepare but consistency of batter plays main role to get cripsy bajji. Once i had this bajji in Tenali (my husbands place), they cut the bajji in middle and stuff finely chopped onions with salt+red chilli powder+fried groundnuts seeds in it. It states very yummy 😋.


                     Raw banana bajji

Preparation Time : 10 minutes

Cook Time : 20 minutes

Ingredients


Besan/gram flour - 1 cup
Rice flour - 1/4 cup
Raw banana - 1
Red chilli powder - 1tsp
Cooking soda - 1 pinch
Ajwain - 1/2 tsp
Oil to fry
Salt as per taste


 Method

1) Take a bowl add gram flour, rice flour, red chilli powder, salt, ajwain, soda .


2) Take a deep pan add enough oil for deep frying.

3) Mix all the above ingredients well by adding water . Do not add more water, the batter must be thick but pouring consistency. 


4) Wash and cut the raw banana into two pieces, now peel raw banana and slice into pieces by using knife or using slicer. Add sliced banana pieces into water.



5) check the oil by dropping some batter, if batter immediately floats, then oil is ready to fry.


6) Dip banan slices in batter, coat the banana with batter well, wipe out excess batter an drop it into oil.


7) Fry well both sides till changes to golden , take it into tissues or plate ,serve hot or warm.


Yummy, crispy and tasty Aratikaya bajji ready to serve😋😋

Note

◆ You can use food color to get bajji 's colorful as we get from hotel.

◆ You can slice banana into round pieces too.

◆ To get crispy bajji, the consistency of batter is important.

Stuffed capsicum, Potato & paneer stuffed capsicum

Today's stuffed capsicum is very easy and tasty recipe. You can use many forms of stuffing. Previously I prepared this recipe with potatoes, i had small paneer pieces in fridge. Thought to use for stuffing by combining both potatoes & paneer, trust me it came very yummy 😋😋. You can have it with rice or Roti's.
You can do stuffing in two ways:
1) By stuffing in full capsicum
2) By cutting into round pieces after stuffing.
           If you are serving for kids serve round pieces,they will enjoy it 🤗. For elders you can serve full stuffed capsicum. Keep the stuff ready and prepare recipe before serving, then you can feel the crispnesss outside capsicum. Capsicum does not take much time to cook.




                             Stuffed capsicum

Ingredients


Capsicum -3 to 4

Mashed Potatoe - 1 cup
Paneer - 1 cup
Green chilli -1 
Onion - 1 cup (finely chopped)
Coriander leaves - 1 tsp
Cumin seeds - 1 tsp
Red chilli powder - 1tsp
Coriander powder - 2 tsp
Cumin powder - 1 tsp (optional)
Turmeric powder - 1/2 tsp
Salt as per taste
Oil - 2 tsp

Preparation


For stuff


* Boil potatoes in a pressure cooker for 5 whistles. Remove the skin and mash it well.


* Crumble paneer pieces and keep it ready.


* Finely chopp onions and keep it ready.


For capsicum


Remove the stem and scoop out the sides carefully. Cut the capsicum base to set it while cooking.





Method


1) Take a pan add oil, let it heat for a second add cumin seeds fry it once, add green chillies, onions fry it till changes color.




2) Add mashed potatoes, salt, turmeric powder and mix it well. Now add paneer , coriander powder, cumin powder and mash everything well. Also add coriander leaves mix it well.




3)  Now stuff the curry in the capsicum, fill it properly. Cut few capsicums in one inch length after stuffing (2nd way for kids)




4) Add oil in a pan, place the capsicum in it.




5) close the lid and cook it in medium flame for 5 - 7 minutes. Change the position of capsicum in middle so that it will cook all sides well. Turn the capsicum pieces in middle, so that it wont burn.




Yummy stuffed capsicum is ready to serve 😋😋


Note


* You can skip paneer.


* Cutting capsicum shape depends on your interest.


* Roundly cutted stuffed capsicum pieces cook very fast. It will burn if you cook it long time.


* You can also add ginger-garlic paste to the curry.


Tips


◆  Fry fully stuffed capsicum and roundly cutted capsicum separately to avoid the mesh.

Crispy Jack fruit seeds snack, chat pata Jack fruit seeds

Jack fruit is also known as Panasa Pandu in Telugu, Halasina hannu in Kannada, Pala palam in Tamil. Jack fruit is very healthy and rich in vitamins, minerals, carbohydrates, fats etc., We can prepare number of recipes with Jack fruit, Jack fruit seeds and even with Jack fruit skin. Jack fruit biryani is famous, i tasted Jack fruit dosa many years back. My mom use jack fruit seeds in sambar 🤗. I will post all recipes and make you cook and stay healthy 😍🤗. Today's my recipe is simple,easy and crispy snack item using jack fruit seeds. We can also prepare this in many ways by deep frying jack fruit seeds etc., But I am preparing it just by boiling and frying. It tastes crispy outside and smooth inside 😋.  If you fry it for long time it will become very hard, and it is difficult to eat.




                  Crispy Jack fruit seeds 


Preparation Time : 10 minutes

Ingredients


Jack fruit seeds - 12

Salt as per taste
Oil - 1/2 tsp
Ghee - 1tsp
Red chilli powder - 1/2 tsp
Chaat masala - 1/2 tsp ( optional)

Preparation


*  Clean the jack fruit seeds in water once.




* Take jack fruit seeds in a pressure cooker add water just to dip the seeds, then add salt and pressure cook it for 4 whistles. Take it into cup.




* Peel jack fruit seeds skin ( it is stuff like nylon) , leaving the red skin intact, as it is rich in vitamins.





* Cut the seeds into two pieces, if the seed is big cut into 4 pieces.



Method


1) Take a pan add ghee and oil , then add boiled jack fruit seeds.


2) Fry it in medium flame till it turns crispy.




3) Once it become crispy turn off the flames and add red chilli powder and chat masala. Salt is already added while boiling, if it tastes less salt, add salt at last.




Crispy  out side and smooth inside jack fruit seeds snack is ready to serve 😍🤗


Note


* Quantity of oil/ghee, red chilli powder and salt adding depends on number of seeds you have taken.


* You can also boil it normally without using pressure cooker.


* If you fry it for long time it will become very hard. If you like to eat it hardly you can fry it.


* Take care while removing the skin from seed, it will be sharp and hurt your nails.

Kosambari, Moong dal (Yellow lentil ) cucumber salad

This is my 25th recipe, so I am sharing my favourite Kosambari, this is traditional Karnataka recipe. It is very healthy and tasty, you can have it as salad or you can have it as side salad with your meals. Kosambari is offered as prasadam to Lord Sri Rama on Sri Rama Navami 🙏 . I remember my childhood days, where we use togo temple on Rama Navami for lunch (oota in Kannada). I remember all the traditional food they offer like kosambari, Mandige, Hayagreeva,sweet mango chutney, sambar ....🤤😋😋. Those days never come back. Coming back to kosambari 😛 we  prepare kosambari in different ways. Today's my post is simple and easy using cucumber and coconut.

                 Cucumber Kosambari


Preparation Time : 10 minutes

Cook Time : 5  minute
Serves : 1 bowl

Ingredients


Moong dal(yellow lentils) - 1/2 cup

Cucumber - 1/2 cup ( chopped)
Scraped coconut - 1/2 cup
Coriander leaves -  2 tsp
Green chillies - 2
Lemon - 1/2 piece
Salt as per taste

For the seasoning


Oil - 1tsp

Mustard seeds - 1 tsp
Curry leaves - 1 spig
Hing - 1 pinch

Preparation


* Wash Moon dal well and soak it in water for 1 hour.





* Peel cucumber and cut into pieces


Method


1) Drain water and take the moong dal in a bowl.




2) Add cucumber, scraped coconut, coriander leaves, green chillies( missing in pic) to the moong dal.




3) Now squeeze lemon juice to the above mixture and mix it.




4)  Take a pan add oil, let it heat for a second. Now add mustard seeds once it splutters add curry leaves fry it for a second, switch off the flames and add hing.




5) Pour the seasoning into the kosambari and add salt, mix it well.




Yummy and healthy Cucumber Kosambari is ready to serve 😋😋


Note


* Add salt before serving as if added, cucumber leaves water.


* I prefer using scraped coconut instead of grated coconut. As it gives milky taste to the salad.


* Use fresh coriander leaves for good taste.


* You can increase/decrease lemon juice as per your taste.


* You can skip the seasoning.


* You can also use carrot, capsicum along with cucumber. I will post that recipe soon 🤗.


Tips


◆ If you are in hurry and no time to soak moong dal for 1 hour,then soak moong dal in hot water for 30 minutes. Or boil it in cooker, but it taste bit different.

Khova paneer, Mawa paneer, Kohya paneer

Paneer is Indian cottage cheese prepared from milk. We can prepare paneer at home or can buy from market. Paneer is my most favorite, of course everyone loves paneer😍. We can prepare many recipes with paneer. Today's kova paneer is very rich and delicious. Adding kova gives you sweet and rich taste to the gravy. I had this kova paneer in one marwadi function, from then it's one of my frequently prepared paneer recipe in my kitchen. Thanks to marwadi aunty for explaining recipe🤗.



          The main ingredient is unsweetened  khova, we can prepare it home or can buy from store. Khova is prepared with full fat milk, it is easy to prepare but need patience. If you donot have much milk to prepare khova, d't worry follow the trick, which I used today to prepare khova instantly using milk powder 😃 .





              Khova Paneer || Mawa paneer



Prep Time : 20 minutes
Cook Time : 15 minutes

Ingredients


For instant khova :


Milk - 1 cup

Milk powder - 3/4  cup
Ghee - 1 tsp

For curry :


Paneer - 1 cup

Onions - 1 cup
Tomato puree - 3/4 cup ( 2 tomatoes)
Kaju - 4 to 5 ( optional )
Cumin seeds - 1 tsp
Red chilli powder - 1 tsp
Coriander powder - 1tsp
Elachi - 4
Cinnamon - 1/2 inch
Cloves -3
Bay leaf - 2
Kasuri methi - 1 tsp
Ginger - 1 tsp
Butter - 1tsp
Oil - 2 tsp
Turmeric powder - 1 pinch
Salt as per taste
Green chilli - optional ( mentioned in pic but not added)



Preparation


For khova:


* Take a pan add ghee, add milk.




* Let  the milk boil by stirring in low flame, till it become thick.




* Add milk powder




* Stir it continuously in low flame , till the milk and powder mixed well and becomes thick.




* Collect all the khova and mash it well.




* Khova is ready to use in gravy, take it in a plate.




For curry:


* Finely  chopp onions, make tomato puree ready.


* Soak cashew nuts in hot water for 20 minutes and make it into paste. Using kaju paste is optional.





* Take a pan add butter and fry paneer pieces to golden brown or just it changes color. Fry it in medium, do not burn it.





Method


1) Take a pan/khadai , add oil let it heat for a second, now add cumin seeds, cardamom, Cinnamon,cloves,bay leaf, kasuri methi, ginger one by one fry it.


2) Add onions fry it till changes color, add tomato puree cashew nut paste fry it well. Now add chilli powder, coriander powder, turmeric powder, salt and mix well.




3) Add khova to the above mixture, mix it well. Mash khova before adding, if you forgot like me no problem 😉, mix it well without any lumps.





4) Add little water, mix it well and add paneer pieces.



5)  close the lid and cook it for 5-7 minutes on low flame.




6) Khova paneer is ready to serve 😋😋😋.




You can have this khova Paneer with veg rice, roti's and naan's. Khova paneer tastes sweet and spicy.





Note


◆ You can add ginger,garlic paste.


◆ You can skip using cashew nut paste, i like its richness.


◆ you can use home made paneer , khova or you can buy it from market.


◆ You can prepare khova without using milk powder, if you have milk.
