Andhra Amla Rasam || Usirikaya charu || Indian gooseberry Rasam || Nellikai Rasam

Amla Rasam || Usirikaya rasam || Usirikaya charu || Nellikai Rasam is prepared using gooseberry. It is tangy, sweet and very healthy recipe which boosts our immunity system. We can prepare this Usirikaya charu with or without using dal. Rasam/ charu is one of the main recipe that is prepared in many South Indian houses. We can use cooked toor dal or cooked moong dal to prepare this usirikaya charu/rasam. Today I am sharing quick and instant rasam recipe without using any cooked dal and using fresh rasam powder. Like lemon rasam / nimmakaya charu , we also have usirikaya charu as a soup, it gives good refreshment to our throat.  In this particular period we all need to stay healthy by taking good food which helps to improve our immunity.

                                           Amla Rasam

Preparation time - 10 minutes
cook time : 20 min
Serves : 1 bowl

Main ingredients : Amla/gooseberry

Ingredients 

To prepare rasam powder 

cumin seeds - 1 tsp
pepper powder - 1 tsp
toor dal - 1/2 tsp(skip if you are using cooked toor dal)

To prepare amla paste

amla - 3(medium size)
green chilli - 1

other ingredients 

ghee- 1 tsp
mustard seeds - 1/2 tsp
red chilli - 1
curry leaves - 1 sprig
hing - 1 pinch
tomatoes - 1 (big )
turmeric powder - 1/2 tsp
powdered jaggery - 1/2 tsp
salt - as per taste

Instructions 

1) Dry fry cumin seeds, black pepper, toor dal till it changes color and take it into plate. 



2)Let it cool for sometime and then grind it to fine powder and keep it aside.


3) Wash gooseberry/amla, cut into pieces and remove its seeds. Take this amla pieces in a mixer jar, add green chilli, little water and grind it to fine paste and keep it aside. 



4) Add 1 tsp of ghee, to this add 1/2 tsp of mustard seeds when it starts crackling add red chilli, curry leaves, hing and fry everything well.


5) Add chopped tomatoes, salt to the above and fry till becomes mushy.

6) Now add amla paste to the above, mix everything well and cooked for few minutes.


7) Add water as per requirement, here I added 3 glasses of water. Also add turmeric powder and 1&1/2 tsp of prepared rasam powder and boil till u get foam on rasam.


8) Now add jaggery powder boil usirikaya rasam for a minute and switch off the flames. 


That's it our amla rasam / usirikaya charu is ready, garnish it with finely chopped coriander leaves. Serve this rasam hot with rice and some papads and enjoy the refreshing taste of amla. 


Tips

** Adding toor dal while frying spices is optional, it gives thick consistency to rasam. 

** You can also add cooked toor dal while boiling rasam( skip adding toor dal while frying, if you use cooked toor dal). 

** You can also use rasam powder instead of grinding powder, but the taste will vary.

** You can also add garlic before frying tomatoes.

** You can also skip adding tomatoes. Instead of frying tomatoes you can grind it with amla. 

** Spicy taste of usirikaya rasam is from green chilli and from the pepper we used.

** Add prepared rasam powder accordingly to the quantity of rasam you are preparing.

** Do not boil rasam for long time.

Chakkera Pongal || South Indian temple style Chakkera Pongal for Makara Sankranti/Pongal festival

Chakkera Pongal is south Indian Temple prasadam recipe. This is very delicious,aromatic and divine in taste. We prepare this chakkera pongal recipe during festivals like Makara Sankranti, Navaratri, Diwali, Vara Lakshmi Pooja and also on any special occasions at home. It is very easy to prepare in less time and with less ingredients.

We prepare different varieties of pongal like  Sweet Pongal, which is prepared using milk and texture of this Sweet Pongal will be thick, mushy and creamy. Texture of Chakkera Pongal which I am sharing today will be grainy. The main divine aroma and taste of this chakkera pongal is from edible camphor (pachakarpuram in telugu). So do not miss adding this edible camphor to get good aroma and taste, exactly which we get in temples.We also prepare many til/sesame seeds/nuvvulu recipes for pong al. Taking this delectable,aromatic and delicious Chakkera Pongal to  FoodieMondayBloghop fb groups #280SankrantiSpecial theme. By this time you are all aware that I am part of this lovely group where we bloggers share recipe for theme suggested by a person in alphabetical order every week. This week we group members decided to share Sankranti festival recipes. So here I am sharing my part  Chakkera Pongal recipe.

              Chakkera Pongal

Preparation time - 10 minutes
cook time : 20 min
Serves : 1 bowl
Category : Sweets / Festival
Recipe Cuisine: South Indian
Main ingredients : Rice, yellow moong dal

Ingredients 

Rice - 3/4 cup
Yellow moong dal/ pesara pappu - 1/4 cup
Jaggery - 3/4 cup
Sugar - 1/4 cup to 1/2 cup (adjust)
Ghee - 1/2 cup (adjust)
Cashew nuts - 12
Raisins - 12
Dry coconut pieces - 2 tsp
Edible camphor - 1  small pinch
Cardamom powder - 1 tsp

Instructions

1) Dry fry 1/4 cup of  moong dal in pressure cooker on low to medium flames till it changes color.

2) Switch off  the flames and add 3/4 cup of rice and mix everything well. 

3) Wash rice and moong dal in water twice and add 2 cups of water to it.

4) Pressure cook this for 3 whistles on medium flames, switch off the flames and keep it aside.

5) Now prepare jaggery syrup, for this take jaggery and sugar in a pan. To this add 1/4 cup of water and cook till you get 1 string consistency and keep it aside.

6) Open pressure cooker lid and mix cooked rice and dal well. Now strain jaggery syrup in cooked rice and mix everything well.(**check tips)

7) Cook this on low flames till rice absorbs jaggery syrup and becomes thick.

8) Now add cardamom/elachi powder , edible camphor, 2tsp of ghee and mix everything well. Mash edible camphor with ur finger and then add.

9) Pongal is almost ready, keep this aside. 

10) Add remaining ghee in pan, add cashew nuts, dried coconut pieces and fry it on low flames.

11) When above nuts and coconut pieces starts changing color then add raisins. Fry till raisins becomes fluffy.

12) Now add this in prepared pongal and mix everything well.
If you want you can add some more ghee. 

That's it our Chakkera Pongal is ready to serve.


Tips 

** Adjust ghee as per your taste. 

** You can skip adding sugar, but adding sugar gives good taste to this Chakkera Pongal.

** For 1 glass of rice and moong dal add 2 glasses of water.

** In order to get grainy texture we do not soak rice and dal.

** Adding coconut pieces gives good taste to pongal.

** Add only 1 small pinch of edible camphor to perfect taste, adding more will ruin pongal taste. So be careful while adding it.

 Til Sago & Nuts Ladoo || Til Sago Ladoo || sesame seeds, sago & nuts ladoo with step by step pics and tips. As Makara Sankranti is around we all prepare many varieties of til/ sesame seed recipes. Til in Hindi is also known as sesame seeds in English, nuvvulu in Telugu, ellu in Kannada & Tamil. Try this healthy, tasty, nutty and chewy taste ladoo's for Sankranti festival and enjoy with your friends and family. We regularly prepare til ladoo, once try this til sago & nuts ladoo surely you will love it. I made this ladoo healthy by adding different nuts.

 To prepare this sesame seed, sago & nuts ladoo I used sesame seeds, sago/sagubiyyam/sabudana as main ingredients. Also I added ground nuts, sunflower seeds and pumpkin seeds to make these ladoo's healthy.  Sago gives good nutty and chewy taste to ladoo.

Learning many things from her, I bookmarked her Italian sesame seed cookies & chilli avocado chocolate cake recipes to try soon. 

                          

                                   til, sago & nuts ladoo

Preparation time - 15 minutes
cook time : 20 min
Serves : 20 ladoo's
Category : Sweets / Festival
Recipe Cuisine: South Indian
Main ingredients : sesame seeds, sago

Ingredients 

Til / sesame seeds / nuvvulu - 1cup
sago - 1 cup
ground nuts - 1 cup
almonds - 1/2 cup
sunflower seeds - 1/4 cup
pumpkin seeds - 1/2 cup
brown sugar - 1 & 1/2 cup(adjust)
ghee - 3/4 cup
green cardamom - 5

Instructions

1) Dry fry groundnuts in a wide pan on medium flames till it changes color & take it into plate.



2) Now fry sesame seeds till it changes color and take it into plate.



3) Now dry fry sago till it becomes lite & fluffy on low flames. Sabudana turn white and crispy when it fried well, do not burn it.


4) Later fry almonds till you get crackles on it and take it into plate.


5) Now dry fry pumpkin seeds & sunflower seeds for few seconds and take it into plate.


6) Let the above fried ingredients cool to room temperature.

                                            

7) Keep some fried sesame seeds aside and take all remaining ingredients into mixer jar add cardamom seeds and brown sugar and grind it coarsely .


8) Take above coarsely prepared powder, 
remaining fried sesame seeds into wide bowl or in wide plate and mix all the ingredients well.

9) 
 Add little by little ghee and mold ladoo's. Repeat the same process and prepare ladoo's.  Instead of ghee you can also add some milk and mold ladoo's. (** check tips for more info)


That's it our sesame seeds, sago & nuts ladoo's are ready. Keep it in dry & air tight container. 


Enjoy this healthy, delicious and chewy til sago & nuts ladoo's with your friends, family & stay healthy.

Tips

** Fry all the ingredients on low to medium flames, do not burn any ingredient.

** Instead of brown sugar you can also use sugar or powdered jaggery.

** Instead of ghee you can use little(1/8 cup) milk to mold ladoo's or you can use 2 tsp of milk and ghee  to mold ladoo's.

** If pumpkin and sun flower seeds not available skip adding it.

** You can also add cashew nuts in it.

** You can also fry cashew nuts and raisins in ghee and mix in coarsely prepared powder.
