Dates & nuts Ragi Malt with step by step pics, tips and youtube video . Hai friends how are you all doing? Hope you are all safe and healthy. Today's recipe is one of my favorite from my childhood, which i regularly prepare at home. We can prepare sweet and savory, today i am sharing the sweeter version. Ragi malt/ Ragi porridge is healthy drink that is prepared by boiling ragi in water or milk, it is very healthy for both kids and adults of any age.

Ragi is also known as finger millet, it increases bone strength, good for diabetic people, it is rich in iron, calcium and amino acids which is good for growing kids. It is very easy to prepare to this ragi malt using ragi powder, you can also prepare ragi powder by frying ragi and powdering it in mill. You can also prepare it with sprouted ragi flour. Will share how to prepare sprouted ragi flour recipe soon. Instead of giving your kids store bought drink powders, prepare ragi malt for you and your kids. It is very healthy for growing kids, it increase bone strength. My mom use to prepare this ragi malt daily in the morning and evening after coming schools.                                                             Dates & nuts Ragi Malt

Preparation time - 20 minutes
Serves : 2

Main ingredients : Ragi flour / finger millet flour , dates

Ingredients

Ragi flour - 2 tsp
dates - 7
cashew nuts - 10
almonds - 10
raisins - 5 to 10 (optional)
milk - 2 glasses
jaggery or brown sugar or sugar - 1/4 to 1/2 cup( add according your taste)
elachi powder - 1/2 tsp



Instructions

1) Boil 2 cups of milk, soak dates, cashew nuts/ kaju and badam/ almonds in hot milk for 10 milk or powder almonds, dates and soak dates in hot milk.


2) Grind the soaked dates, cashew nuts and badam coarsely(if you serving it to toddlers or elders(old age ppl you can prepare fine paste) and keep it aside.




3) Take 1/2 glass of water in a glass or cup, add 2 tsp of ragi flour in it. Mix it well without any lumps and keep it aside.



4) Boil 2 glasses of water in a pan or vessel, add above prepared ragi mixture in it and boil it on low flames till it becomes thick. Mix it continuously so that we will get smooth texture without any lumps. (** check tips)


5) Now add prepared dates and dry fruit paste,boiled milk, jaggery or sugar or brown sugar (add according to your taste), elachi powder and mix everything well.





6) Mix the above well without any lumps and boil it for 2 minutes on low flames.



7) That's it our ragi malt is ready decorate it with some chopped dates and dry fruits. You can serve it hot or cool, ragi malt turns thick after some time. Add boiled milk or boiled water and serve. I always serve hot with some chopped almonds and kismis/raisins on it.


Tips

**Do not add ragi flour directly while boiling water, it will becomes lumps and do not cook well.

** You can mix ragi flour and water and then boil it directly, but i prefer this method.

** Use jaggery or brown sugar or sugar according to your availability. Adding jaggery gives different taste when compared to sugar and brown sugar. I prefer adding brown sugar.

** Adjust sweetness according to your taste. 

** You can skip adding dry fruits,dates. You can prepare plain ragi malt too.

** Do not boil it high flames, keep mixing it while boiling to get smooth lumps free texture.

  2. This is a very filling and healthy drink.remember drinking this as a child . I prefer the savory version. But your sweet version of ragi malt looks delicious will try sometime soon

  3. When my daughter was studying in Bangalore, during the cold season hot ragi malt was what we would enjoy at night just before bed time. So warming, filling and also acted like a dessert. I like how you've added dates so I guess one could omit the sugar as dates tend to be sweet.

  6. A super healthy drink. I think dates and raisins will give enough sweetness so I don't need jaggery or brown sugar. Perfect for kids and adults both.

  8. That is actually a super healthy glass or I will say its a meal for my kid...she will not have anything else for at least 2-3 hours after this. superbly drafted recipe and lovely presentation.
