Peanut & almond ladoo - no sugar no jaggery, వేరుసెనగ బాదం లడ్డూలను ఇలా చేసి చూడండి

No sugar no jaggery - peanut almonds ladoo is super tasty and delicious and can be prepared very quickly. And it's my Riddhesh's favourite ladoo. These ladoo's are prepared using 5 ingredients, 1 ingredient which I used is thick poha. Poha is used in small quantity, it gives good taste and texture to ladoo's. If you are not interested you can simply skip adding poha. I love different varieties of ladoo's like Flax seeds ladooOats & nuts ladoo you can watch this recipes in my YouTube. ** Besan Ladoo

** Wheat flour ladoo using milk solids of ghee

    Last month I came to my hometown Adoni, as Riddhesh stopped eating and my mom wanted to see him.We visited hospital too, Dr suggested to stay with family for few days inorder to improve his food habits and speech. Baby started talking "Amma, ba ba, ma ma, pa pa" and some other allien language which I can understand in some extend 😄. But no improvement in eating, trying many ways, wish he pass this phase soon. As we came home, many relatives suddenly visiting us mainly to see Riddhesh, now he became main person at home🤩. I prepared these peanut almond ladoo's for relatives in just 15 minutes as fried peanuts are already there in my kitchen.  

 My mom was talking with relatives and telling that Riddhesh not at all eating anything and I started serving ladoo's. Riddhesh came fastly, grabbed ladoo's from plate and
started eating it😄. My mom and I just stunned and everyone started laughing 😄. This is my peanut almond ladoo story ☺️. Try this healthy ladoo's for ur kids surely they will love it. 

Event : Shhhhh Secretly cooking challenge

Taking this super delicious and healthy ladoo's to shhhhh secretly cooking challange, this month theme "Healthy dessert" was suggested by Rafeeda . I am paired with Narmada who blogs at "nams corner". She gave almond and poha as secret ingredients in turn I gave her almonds and chocolate as secret ingredients, Narmada prepared healthy and tasty almond stuffed chocolate dates check out.

Peanut & almond ladoo

Preparation time : 20 minutes  

Serves : 10 + ladoo's

Category : dessert 

Recipe Cuisine: Indian

Main ingredients : peanut, almond 

Ingredients

Peanuts - 1 cup
Almonds - 1/2 cup
Thick poha - 2 tsp
Elachi - 3
Dates - 15 (adjust)

Process 

1) If you are using fried peanuts then skip this step. Fry peanuts on medium to low  flames till its changing color then take it into plate and let it cool to room temperature.

2) Now dry fry almonds on low to medium flames, when it starts popping take it into plate and let it cool.

3) Now dry fry poha on low flames as kadai will be hot. When poha starts changing color take it into plate and let it cool.

4) Let all the ingredients cool to room temperature.

5) Now take all fried ingredients in a mixer jar, to this add elachi deseeded dates and grind it bit coarsely.

6) Do not grind the ingredients too smooth or too coarsely.

7) Now take this mixture in a plate and start moulding ladoo's by applying ghee to your hands and take it into plate. (If we grind ingredients bit smooth coarse texture then no need to apply ghee)

 That's it our ladoo's are ready to serve. Store it in air tight container.

Note:

* These ladoo's stay fresh for 15 days outside.

* As dates contains moisture, its better to prepare these ladoo's freshly in batches. 

* As I won't get much time with baby to prepare ladoo's in batches, what I do is other than dates I coarsely grind other ingredients and store it in airtight container and keep it in refrigerator. Whenever I want I will grind by adding dates.

Makhana nd dry fruits namkeen

Makhana & dry fruit namkeen is super tasty, healthy and crispy snack. Makhana is also known as fox nuts,lotus seeds,gorgon seeds and widely known as phool makhana. It is very easy to prepare in less time. For evening snack or for long journeys I regularly prepare Masala murmura/ masala borugulu and Poha chivda at home. But this makhana and dry fruit mixture  added in my list few years back. From my childhood I don't like to have to tea or coffee, but now a days I like to have a small cup of masala tea with this snack. Trust me the spices added nd the crispy taste of dry fruits dt let you stop having it. Do try it once and let me know how much you liked this recipe in comment box.. 


Now a days I am not at all getting time to take fancy pics, full busy with my kid. Riddhesh started crawling and standing with support, now a days he is always in kitchen holding my legs😍. Sometimes I have this makhana namkeen as my breakfast with full glass  of  ragi malt as I dt get time to prepare breakfast. Makhana is the main ingredient, remaining ingredients you can add as per your taste and availability. 

Event : Shhhhh Secretly cooking challenge

Taking this tasty healthy namkeen recipe to "Shhhhh Secretly cooking challenge" fb group started by Priya, and taken further till date by Mayuri di ND Renu. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it.

      This month theme  "cook what you like" suggested by  Renu and Mayuri di. I am paired with Kalyani for this month, she gave me walnuts and red chilli powder as secret ingredients. In turn I gave mushroom and chilli flakes as secret ingredients. kalyani prepared yummy and tasty Vegan glass noodles soup, do check out. 
                                              

      Makhana & nuts namkeen

Preparation time :15 minutes  

Serves : 250+ gms 

Category : snacks 

Recipe Cuisine: Indian

Main ingredients : Makhana (fox nuts)

Ingredients

Phool makhana/ fox nuts - 1 cup
Cashew nuts - 1/2 cup
Almonds - 1/2 cup
Raisins - 1/4 cup
Walnuts - 1/4 cup
Pumpkin seeds - 1/4 cup
Red chilli powder - 1/2 tsp (adjust) 
Chaat masala - 1/4 tsp
Pepper powder - a pinch (optional) 
Ghee - 2 tsp
Salt - as per taste

Procedure

1) Take wide kadai heat ghee, to this add makhana fry it on low to medium flames till makhana becomes crispy. 

2) Take 1 makhana and press with fingers if it breaks in pieces it means makhana fried perfectly. Otherwise fry it for few more minutes. Later take it into plate and let it cool. 

3) now fry remaining dry fruits one after other till they become crisp and then take it bowl. 

4) now heat 1 tsp of ghee in kadai when it melts switch off the flames. And then add salt, red chilli powder, pepper powder, chaat masala nd mix well.

5) Now add all fried ingredients and mix everything well. Let everything cool to room temperature. 

That's it our healthy, crispy and lip smacking namkeen is ready, store it in dry and airtight container. 

Note:

* step 4: after frying nuts nd makhana you can sprinkle spices nd salt directly and mix it well. But adding fried ingredients in ghee spices mixture gives good masala coat to ingredients try it once.

*switch off the flames before adding spices in ghee in order to get good color and to avoid burning sensation, cough while mixing.

Khamang kakdi || Kakdi chi koshimbir || Maharashtrian cucumber salad

 Khamang kakdi is Maharashtrian cucumber salad also known as kakdi chi koshimbir. In Marathi Kakdi means cucumber, this cucumber salad is very tasty, creamy, crunchy and easy to prepare salad which goes well with any special rice item or roti's. I just love to have this salad as it is. Lentil based cucumber salad  and this khamang kakdi are two different cucumber salad recipes to try. We can prepare this salad in two different ways by adding lemon or by adding fresh hung curd. Today I'm using curd to prepare my salad as I like creamy salads a lot. If u want you can replace curd with lemon juice as per your choice. Crunchy taste of crushed peanuts, sweet and nutty taste of scrapped coconut gives superb taste to salad. Taking this creamy and tasty cucumber salad to "Shhhhh Secretly cooking challenge" fb group started by Priya, and taken further till date by Mayuri di ND Renu. I liked curried chickpea stuffed sweet potatoes recipe shared by Mayuri di. I also saved Renu's steamed broccoli vadi recipe to try soon. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it.


 This month theme "Maharashtrian Cuisine" was suggested by Poonam Bachhav. I love all her recipes mainly traditional recipes a lot. Do check out her Tondali masale bhat recipe. This month I'm paired with "Priya", using  shared secret ingredients- green chili and roasted gram Priya prepared this crispy and tasty patal poha chiwda. In turn I prepared this tasty cucumber salad by using the secret ingredients peanuts and mustard shared by Priya. I also loved her Macaroni mango kheer, will try to taste it before season ends.

               Khamang Kakdi 

Preparation time : 15 minutes
Cook Time : 5 minutes
Serves : 2 persons
Category : Raita/salad
Recipe Cuisine: Maharashtrian 
Main ingredients : cucumber 

Ingredients

Cucumber- 1
Roasted peanuts - 2 to 3 tsp
Scrapped or grated coconut- 3 tsp
Fresh hung curd - 2 tsp
Finely chopped coriander leaves- 1 tsp
Salt - as per taste

For tempering

Oil / ghee - 1 tsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1/2 tsp
Green chilli - 2
Curry leaves - 1 sprig 
Asafoetida/hing - 1  pinch

Instructions

1) Firstly  peel off cucumber skin, remove its seeds. Now cut cucumber into small pieces and add some salt.

2) Let it set aside for 5 to min. Meanwhile roast peanuts, remove its skin and crush it coarsely.

3) Now squeeze out excess water from cucumber pieces and take it into wide bowl.

4) To this add crushed peanuts, scrapped or grated coconut, fresh hung curd, finely chopped coriander leaves and mix everything well.

5) Heat ghee/oil in a pan to this add mustard seeds, when it starts crackling add cumin seeds, chopped green chili, curry leaves, hing and fry everything well till you get nice aroma.

6) Add prepared tempering in cucumber salad and mix everything well.

That's it our Maharashtrian Khamang kakdi is ready to serve. 

Note:

* Instead of curd you can use lemon.

* Use thick curd inorder to get texture to salad.

* Squeezing excess water from cucumber will gives good  texture. 

* Use fresh and thick curd to get creamy texture.

Poornam bobbatlu || Pooranam holigalu || puran poli || Poornam bakshalu

Poornam holigalu || Poornam bakshalu || Puran poli with pics and tips. Happy Diwali - 2021 to all friends and family 🎆🎇Poornam bakshalu is Indian flatbread prepared by using different stuffings. Puran poli is also popularly known as bobbatlu or bakshalu in Telugu, holige in Kannada and poli in Tamil. This is one of the main sweet recipe prepared on special occasions in South India. Mainly in my home town Adoni it is prepared on special occasions like Ganesh festival, Vara Lakshmi pooja,Diwali, Lakshmamavayya jathara, functions like marriages, naming ceremony etc.., We can prepare different varieties of poli like puran poli, coconut poli, vegetable poli, karam poli, sooji poli. In all these Puran poli is very popularly, which is prepared by using sweet dal stuffing called as poornam in Telugu. We can prepare dough using all purpose flour or wheat flour or chiroti rava. Today I am using chiroti rava to prepare dough instead of maida. Let's start recipe..

 



Event : Shhhhh Secretly cooking challenge

Taking this delicious puran poli  to "Shhhhh Secretly cooking challenge" fb group started by Priya, and taken further till date by Mayuri di. Do check her space for wonderful recipes. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it.

                                     

This month theme "Diwali Dhamaka" was suggested by admins Mayuri & Renu. I bookmarked Mayuri di's kalakand and Renu's milk powder chocolate ladoo  recipes to try for coming Diwali. I am paired with Kalyani who blogs at "Sizzlingtastebuds", do check her space for different varieties of recipes from different regions. I gave saunf and powdered sugar as secret ingredients, she prepared air fryer makhana chivda recipe.In turn Kalyani gave me chiroti rava and toor dal as secret ing, both ingredients helped me to get tasty bobbatlu.

                             Poornam Bobbatlu

Soak time : 3 to 4 hours 
Preparation time : 20 minutes
Cook Time : 30 minutes
Serves : 15 poli
Category :Sweets/ Desserts
Recipe Cuisine: Indian 
Main ingredients : Chiroti rava, dal & jaggery

Ingredients

For dough 

Chiroti rava - 2 cups

salt - 1 pinch

turmeric powder - 1/4 to 1/2 tsp

oil - 1/2 cup(adjust)

For stuffing 

toor dal - 1 cup

chana dal -  1 cup

grated jaggery - 1&1/2 cup to 2 cup(adjust as per your taste)

elachi powder - 2 tsp

 Others:

ghee - 1/2 cup to fry poli 

Instructions

Dough Preparation

1) Take chiroti rava in a wide bowl to this add salt, turmeric powder and mix everything well.

2) Now sprinkle water little by little and mix everything well till get smooth dough.

3) Now add 1/4 cup of oil and knead it well till dough absorbs oil, later add remaining oil and rest it for 2 to 4 hrs by closing lid.  


 

 Stuffing/ poornam preparation 

1) Wash & soak both toor dal and chana dal in enough water for 1 hr.

2) Now take dal in pressure cooker and add 4 cups of water(for 2 cups of dal add 4 cups of water )  and pressure cook it for 2 whistles.

3) Let the pressure comes down naturally, strain dal and remove water completely. Let it cool to room temperature and becomes bit dry .

4) Now grind cooked dal by adding jaggery to smooth paste and take it into bowl. 

5) If prepared poornam is thick then add elachi powder and mix everything well and keep it aside to cool.

6) Otherwise take prepared poornam/puran in kadai, cook it on low to medium flames by adding elachi powder till it becomes thick and then let it cool. 

7) Now pinch some dal mixture, mold it as round ball and keep it aside.

Poli preparation  

1) Take poli paper which we used to prepare poli or butter paper or banana leaf or any thick cover like oil covers. Add some ghee or oil on it and spread it well, also apply ghee or oil to your hands.

2) Now pinch lemon size dough, spread it like small poori. Then place prepared dal stuffing/puran/pooram and close it without having any pleats as shown.


3) Now press the above with your fingers all the corner and give it round shape as shown.

4) Take the above prepared poli cover in one hand and reverse it on our hand and then spread it on hot tawa. If you are using butter paper or banana leaf then directly place it on tawa leave it for a second and then remove banana leaf. 

5) Add ghee on and around poli and fry it for few seconds, later turn it other side and fry till it changes color both sides.

6) Puran poli is ready, take it into plate. Repeat the same process for remaining, serve it hot by adding lots of ghee on it 😋😍.
 

Tips

** Instead of chiroti rava you can also use maida.

** you can also use either toor dal or chana dal.

** Make sure that puran or poornam is thick.

**Inorder to get delicious bobbatlu use ghee to fry poli.
