Almond Mango sandesh, how to prepare almond mango sandesh

Sandesh is traditional and delicious Bengali dessert. As mango season started thought to prepare mango sandesh and at end I gave twist by adding almond powder 🤗. Yes, I am going crazy 😉, believe me it melts in mouth with mango flavour and using almond is also healthy. It is very easy to prepare with milk, mango and almonds as main ingredient. We can prepare it using chenna or fresh moist paneer. Fresh mango puree gives good taste instead of using canned mango puree.

    I prepared sandesh recipe once, when we are in Odisha , it came very tasty and delicious. It inspired me to prepare this Almond Mango sandesh. You can add  many flavours and shapes to sandesh. Flavours like saffron, rose, pineapple, strawberry etc., We will get different shape mould in market. You can also prepare chocolate sandesh using cocoa or chocolate powder. I will try to post all flavoured sandesh soon.





              Almonds Mango sandesh


Preparation Time : 30 mintes

Cook Time : 20 minutes

Ingredients


Milk - 1 litre

Lemon - 2 tsp
Mango puree - 3/4 cup
Sugar - 1/2 cup
Milk powder -  1/4 cup (optional)
Almond powder - 1 cup
Cardamom powder - 1 tsp
Pistachios & almonds for garnishing



Preparation


1) Heat milk in a heavy bottom pan. 




2) Add lemon juice into boiling milk.




3)  Milk starts crudling.




4)  filter the above mixture in muslin cloth and wash it under running tap so that lemon smell goes out. Tie the cloth and keep it aside for an hour.




5) Cheena is ready





6) Take cheena into plate and mash it with your palm well.




7) Now add milk powder, powdered sugar, elachi powder to the chenna mix everything well and mash.




8) Add mango puree in a pan mix it thoroughly in low flame.




9) Now add mashed cheena in mango puree.




10) Mix it continuously so that it would burn. Once the cheena and mango combined well and become thick,

( Dough consistency) take it into plate when it is heat.



11) Now add almond powder to the above dough and mix it well. Pinch a small part of dough and mould it to round shape and press in the middle to give it sandesh shape. At last garnish it with pistachios and almonds .




Mouth melting and delicious Almond Mango sandesh is ready to serve 😋😋.


  As I said early I prepared sandesh few year back, I am sharing that pic with you 😍. I prepared this recipe for my hubby's birthday 😍🤗.




Note


◆ Mix the chenna and mango puree well to dough consistency, otherwise it will stick and you cannot mould sandesh.


◆ you can also use moist paneer which is ready at home.


◆ Adding milk powder is optional.


Tips


● Full fat milk gives good amount of chenna.


● If in case the dough is too thin and not able to mould it means that the chenna and mango puree did not mixed well. You stir the mixture again on pan. Still your facing the same problem, then add almond powder and give it dough consistency.

Corn flakes chivda, how to prepare corn flakes chivda recipe

Corn flakes chivda/chudva || makai chivda || mokkajonna rekula chivda is a popular snack item. It can be prepared very easily in less time. You can pack it for long journeys or as snacks for kids. It will stay crispy and tasty for long time.
   
       Today I used dried yellow color corn flakes. You can get it from any grocery shop. You need to deep fry this dried corn flakes to prepare chivda. You can also use ready to eat cereal corn flakes, no need to deep fry these flakes, but just need to fry lightly in oil.  This chivda is sweet and spicy with dry fruits. you can add any dry fruit available at home. I deep fried the nuts today, you can also shallow fry it. This corn flake chivda is sweet, spicy with nuts, dry fruits & taste very yummy 😋😋.

Preparation Time : 5 minutes

Cook Time : 20 minute

Ingredients


Corn flakes - 2 cups

Ground nuts - 1 small cup
Roasted peanuts - 1/2 cup
Cashew nuts - 12
Raisins - 12
Curry leaves - 2 spigs
Red chilli powder - 11/2 tsp
Chat masala - 1/2 tsp
Sugar - 2tsp
Oil - to deep fry
Salt as per taste







Instructions


1) Take a pan add oil and let it heat on low flame. Once oil gets heat add small amount of dried corn flakes and fry till it expands. Do not burn it.




2) Fry corn flakes batch wise and take it in a bowl.




3) Now add ground nuts fry it in low flame till it changes color. And take it into tissue paper or bowl.




4) Now fry roasted roasted chana dal for a second and take it into plate. And add curry leaves fry it till become roast & take it into bowl.






4) Now fry cashew nuts till changes golden brown color.




5) Then add raisins fry it till becomes fulffy.




6) Frying part completed, now add all fried items into fried corn flakes along with red chilli powder, salt, sugar, chat masala.




7) Saute all the ingredients well so that the masala will apply to corn flakes. Atlast add fried curry leaves.




Crispy, spicy and sweet corn flakes chivda is ready to eat 😋😋😋.


Let everything to cool (room temperature) then store it in tight container . So that the chivda stay crispy & tasty for long time.




Enjoy this sweet and savory corn flakes chivda with your loved once 😍🤗.




Note


◆ You can shallow fry ground nuts, roasted chana dal, cashew nuts, raisins instead of deep fry.


◆  Fry corn flakes batch wise so that flakes fry evenly.


◆ Curry leaves and corn flakes must be deep fried.


◆ You can add any other dry fruits and also increase or decrease the quantity of ingredients.


◆ Instead of crystal sugar or sugar powder. If you do not want sweetness you skip adding sugar.


Tips


● Use dry container to store prepared chivda.


● Take care while deep frying nuts and curry leaves.


● Do not mix all the ingredients (step-3) with hands or any ladle. Just saute it by holding the edges of bowl. So that corn flakes would not break.

Stuffed Bitter Gourd, how to prepare stuffed Bitter Gourd using ground nut masala powder


Stuffed Bitter Gourd is famous recipe for all Bitter Gourd liking people. It is also called as Bharwan karela in hindi and very popular dish in north side. I use to hate Bitter Gourd when I was kid, do not know how i started liking it 🤔. We can prepare many varieties with bitter gourd like curry, deep fry, chips, chutney etc.,

       Bitter Gourd which I prepared came crisp outside when i prepared and became smooth after some time. If you  deep fry bitter gourd before filling masala it taste good and stay crisp for long time. As I got big size bitter gourd in market so I did not deep fried. You can use small size bitter gourds for this recipe. You can deep fry the bitter gourd to get crispnesss. And coming to filling its different in different regions and every home 😊. Today i am using ground nuts masala powder for filling. You can also fill vulli karam(onion masala) , kobari karam ( dry coconut masala), roasted chanadal masala(putnala karam),  fried onions etc., It depend on the taste  how we like and ingredients present at home at that time. Will post all the varieties soon 🤗.

Stuffed Bitter Gourd using ground nut masala


Preparation Time : 20 minutes

Ingredients


Bitter Gourd - 4

Salt to rub bitter gourd

For filling


Fried groundnuts - 1 cup

Roasted chana dal - 1/2 cup
Garlic - 10 cloves
Dry coconut - 1 tsp( you can increase quantity)
Red chilli powder - 2 tsp
Coriander powder - 2 tsp
Cumin powder - 1 tsp
Turmeric powder - 1/4 tsp
Curry leaves - 1 spig
Oil - 4 tsp ( you can increase quantity)
Salt as per taste

Other thing


Thread to tie bitter gourd after filling.


Instructions


1) Fry groundnuts and remove the skin. Skip you have roasted ground nuts.


2) cut the edges of bitter gourd and scrape/ peel the rough part of bitter gourd. Its optional you can also use without peeling. You can also cut only one edge of bitter gourd.




3) Slit the middle part and remove the seeds. Rub ample salt both inside and outside and keep it aside for 20 minutes and start preparation for filling.





4) Take a mixer jar add roasted ground nuts, fried chandalam dal, dry coconut and make it powder. Now add garlic and grind it once. Take the powder in plate.




5) Take a pan add oil, once it heat add curry leaves and fry it well.





6) Now add red chilli powder, turmeric powder, coriander powder, cumin powder, salt, prepared ground nut powder one by one and fry it on low flame.



7) Take fried masala in plate for filling.




8) Wash the salt coated bitter gourd with water and fill the masala in bitter gourd.





9) Tie the masala filled bitter gourd with thread tightly so that the masala do not separate from it. You can also skip this step, but preferred.



10) Add oil 4 tsp of oil in pan, place the bitter gourd in it. Close the lid for 3 minutes.






11) Open the lid and change the sides, so that the bitter gourd cook well all sides. cook it on low without closing lid as already bitter gourd became smooth.



12) Once bitter gourd cooked well, add the remaining masala powder( Its optional).





13) Take stuffed bitter gourd into plate, and garnish with coriander leaves. Do not forgot to remove the thread.




Stuffed bitter gourd is ready to serve 😋😋




 Stuffed bitter gourd goes well with steamed rice and as side dish for rasam rice or with soft chapathi's. I prefer to have this with hot rice by adding melted ghee 😋😋. Today i had it as side dish for drumstick rasam and rice.




Note


◆ Peeling the bitter gourd is optional.


◆ You can use the bitter gourd seeds in stuffing. After adding curry leaves add bitter gourd seeds fry it well and then add remaining masala(in step 5).


◆ You can also cut bitter gourd half or small size and fill the stuffing. As shown below but do not slit in middle, masala will come out while frying.




Tips


● Select small size bitter gourds.


● Deep fry bitter gourds to get crispness (before adding masala). But it consume more oil.
