Corn Chaat || Corn Masala Chaat || Sweet Corn masala chaat with video, step by step pics and tips. Hai friends, how are you all doing? Hope you are all safe and healthy. Today's my recipe is corn chaat prepared using sweet corn, this is spicy, crispy with the flavors of butter and other spices, lemon juice adds zing taste to chaat.  Check out youtube link


Many of us like corn chaat that sells on streets, trust me it is very easy to prepare this corn chaat at home.  This chaat is bit spicy, kif you are serving it your kids then adjust masalas accordingly. Also check few related recipes

Preparation time  - 10 minutes
cook Time : 15 minutes
Serves :1 bowl

Ingredients

Sweet corn - 1 or sweet corn kernels - 1 bowl
butter - 2 tsp
red chilli powder - 1/2 tsp
pepper powder - 1/2 tsp
chaat masala - 1/4 tsp
lemon juice - 2 tsp
salt - as per taste

Instructions

1) Remove sweet corn kernels and cook it in enough water by adding pinch of salt.


2) Boil it 7 to 10 minutes on medium to high flames or till it becomes just smooth.


3) Now drain out water and take it into bowl.





4)Heat a pan add boiled sweet corn , 2 tsp of butter and fry till it becomes crisp.

                             

                              

 5) Take fried corn into bowl, now add salt, red chilli powder, pepper powder and chaat masala powder, saute everything well.


6) Now squeeze out lemon juice saute everything well.


That's it spicy, crispy and tasty masala corn chaat is ready to serve. Serve hot and enjoy with your friends and family.


  
Tips

** If you are using frozen corn then do not boil it for long time, just heat it in hot water.

** You can also add cumin powder, cheese powder.

** Adjust spices according to your taste.

Vangi bath || Karnataka special Vangi bath || Brinjal rice || వంకాయ అన్నం

Today's recipe is Karnataka special rice item Vangi bath. It is very tasty and aromatic rice item prepared using green variety long brinjal. if it is not available you can use purple or any variety brinjal. I also posted vangi bath youtube video, check it out



To prepare this rice we need vangi bath powder / podi, we can store this powder fresh for a month, check out my vangi bath podi youtube video 


It is very easy to prepare this rice item if vangi bath masala powder is ready. We can also use this vangi bath podi in curries like cluster beans, brinjal, mix veg curries etc. we can also pack this for lunch box as simple lunch or dinner. No need to prepare any curry, just fry some papads or fry yumms that's it. It's very easy na, then check out video for clear explanation.

Ingredients

Rice - 1 bowl
green brinjal long - 2
oil - 4 tsp
mustard seeds - 1/2 tsp
urad dal - 1 tsp
chana dal - 1 tsp
cumin seeds - 1 tsp
red chilli - 2
hing - a pinch
green chillies - 4
curry leaves - 1 sprig
Vangi bath powder - 3 to 4 tsp
tamarind juice - 2 tsp
jaggery - 1/2 tsp
turmeric powder - 1/4 tsp
coriander leaves - 2 tsp
salt - as per taste

Instructions

1) Prepare rice and spread it into plate.

2) Take water in a bowl add turmeric powder in it. Now cut brinjal and it in turmeric water.

3) heat a pan with one tsp of oil, fry ground nuts and take it into plate.

4) In the same pan add 3 tsp of oil, then add mustard seeds when starts crackling then add urad and chana dal. When they start changing color, add cumin seeds, fry well.

4) now add red chilli, hing fry well. Now add green chilli to it, fry everything well on low flames.

5) Add brinjal pieces fry well for a minute on medium flames , then add turmeric powder and salt mix well.

6) Close the lid and let brinjal fry for 2 to 3 minutes on low flames.

7) Add Vangi bath powder, jaggery and tamarind juice to the above cooked brinjal, mix once.

8) Add  fried ground nuts and cooked rice saute everything well.

9) At last add chopped coriander seeds mix everything well. 

Tasty, aromatic karnataka special vangi bath is ready to serve.

Tips

** If long green variety brinjal not available then use any brinjal that is avaialbe.

** ground nuts take time to fry, so we fry ground nuts first.

** you can also cashew nuts.

** adjust Vangi bath powder according to your taste.

Cold coffee with coffee jelly || How to prepare cold coffee with homemade coffee jelly

Cold coffee with coffee jelly with step by step pics, tips and video(will share tmw). Hai friends, how are you all doing? Hope you are all doing good. Stay home,stay safe, stay healthy and stay hygiene. I prepared this Japanese coffee jellies by using china grass. Firstly i d't like coffee or tea(but love detox green tea a lot ) but hubby and his entire family cannot live without coffee. But believe me i loved this cold coffee jelly a lot, it is chilled, tasty and creamy.

 Adding coffee jellies in it is the highlight. Some information about china grass or agar agar or Japanese isinglass(information from wiki)  is - it is a type of vegetable gelatin extracted from seaweed. This is natural thickener and it is used to prepare jellies, puddings,ice creams, puddings, desserts etc., It is available in the form of dried strands or in powder form. I used dried strands, it is soaked in hot water for 10 to 20 minutes then used. We can also powder the dried strand and use. It gives smooth and glassy look, it set easily on room temperature. And it does not melt when kept out at room temperature so we can use it easily, kids will love to have jellies.

Do check her blog for yummy food mesmerising pics. While checking recipes i saw this japanese coffee jelly recipe from wiki, with lots of modification i prepared this recipe.




  
    
                                                 Coffee Jelly in cold coffee

Preparation tie - 20 minutes
cook Time : 15 minutes
Serves : 3 glasses

Main ingredients : coffee, china grass

Ingredients

To prepare coffee jelly

china grass - 7 gms
water - 2 glasses + 1/2 glass
instant coffee powder - 2 tsp
( i used continental Xtra instant south blend coffee powder, it is very strong so it took 10 spoons of sugar, if you use bru or sunrise then it wont take much sugar. adjust sugar accordingly)
sugar - 6 to 10 tsp

To prepare cold coffee

instant coffee powder - 1 tsp
sugar - 4 tsp
Full fat milk - 2 large glasses
Chocolate syrup - for decoration(i did not used,optional)
ice cube - 4 to 6

Instructions

1) Heat 1/2 glass water, cut china grass and take it in a cup add hot water, mix well and keep it aside for 10 to 20 minutes.







2) Boil 2 glasses of water, add 2 stp of coffee powder and 10 tsp of sugar (Please add sugar according to your taste and type of coffee powder your using). now add soaked china grass and mix it well, cook it on low to medium flames till china grass dissolves in it.


3) Take it  into bowl and let it set in refrigerator for 2 hrs.  It can set easily at room temperature but we need chilled jelly so keep it in fridge.

4) After 2 hrs check it, coffee jelly will set properly with glassy, smooth and jelly texture. scratch side using knife, keep plate on bowl and reverse the jelly and cut it into pieces.





5) Now it's time to prepare cold coffee, in a cup take 1 tsp coffee powder. To that add 2 tsp of hot water and mix well. Take blender add ice cubes and prepared coffee mixture, 4 tsp of sugar(adjust according to your taste and coffee powder used).




6) Add chilled full fat milk to the above and blend till you get creamy foam.


7) Our cold coffee is ready, let serve this, we can serve cold coffee in many ways by decorating glasses with chocolate syrup, by adding cream or ice cream. Today i am sharing a simple version as i want to highlight coffee jellies. Take jellies in a serving glasses then pour prepared cold coffee.


Our cold coffee with coffee jelly is ready to serve, garnish cold coffee with foam. Enjoy your day with this cold coffee with coffee jelly.


Tips

** Main tip is quantity of sugar adding , it depend on the type of coffee powder your adding.

** jelly will set easily on room temperature, we want cold jellies so keep it in refrigerator.

** Garnish cold coffee as per your taste.
