Sweet corn pulao

 Sweet corn pulao is one of the tasty pulao recipe which is very easy to prepare and perfect for lunch box and parties. I made it healthy by adding veggies like carrot and beans. You can also add peas in this pulao or simply you can skip adding veggies. Who d't like pulao's and biryani's ?? kabuli chana pulaoHyderabd dum biryani are my favorite rice items. I made this sweet corn pulao bit spicy by adding freshly prepared masala mix, as corn taste sweet. And I prepared this pulao in electric cooker which I recently purchased, pulao came out very tasty with perfect texture.  We can pair this corn pulao with raita like pomegranate raita or simple cucumber onion raita. We can also have it with kabuli chana curry , Kaddu ka dalcha or with any paneer gravies.

Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it.

                                     


This month theme is "Exotic Biryani & Pulao suggested by Swaty, I bookmarked her Lucknow veg dum biryani to try soon . This month I am paired with Seema, she gave cloves and cumin seeds as secret ingredients. In turn I gave her yogurt and mint. She prepared very tasty and healthy South Indian one pot mushroom biryani using those secret ingredients. Do check out her space "mildlyindian" for yummy and tasty recipes.                                  Sweet corn pulao

Preparation time : 15 minutes
Cook Time : 20 minutes
Serves : 2 persons
Category : Biryani/ Pulao
Recipe Cuisine: Indian 
Main ingredients : sweet corn

Ingredients

Sweet corn kernels - 1 cup
rice - 1&1/2 cup
onions roughly chopped - 1 cup
carrot - 1
beans - 5
oil - 2 tsp
ghee -2 tsp
cloves - 2
cinnamon stick - 1 inch
cardamom - 1
star anise - 2
cumin seeds - 1 tsp
biryani powder - 1/2 tsp
salt - as per taste
coriander leaves - 1 tsp(finely chopped)

For grinding

green chilli - 3
ginger chopped - 1 tsp
garlic - 5
black pepper corn - 1/2 tsp 

Instructions

1) Rinse basmati rice twice in water and soak it for 30 min in enough water.

2) Heat wide pan with oil and ghee to this add cashew nuts, fry till it changes color and then take it into plate.

3) Now add cardamom, cloves, cinnamon stick, star anise and cumin seeds and fry till you get nice aroma.

4) Now add roughly chopped onions and pinch of salt, fry it on medium flames till it changes color. 

5) Mean while grind all the ingredients mentioned in "For grinding" in ingredient list to coarse paste with out adding any water and keep it aside.

6) when onions starts changing  color then add sweet corn kernels, chopped carrot and beans fry it once. Close the lid and cook it for few minutes.

7) Now add prepared masala paste to the above and mix everything well, let it cook till its raw smell goes away.

8) Now add required amount of salt, biryani masala powder and mix well. 

9) Now transfer the above mixture in electric cooker bowl, to this add 2 glasses of water. Close the lid and press electric cooker button to cook mode.

10) It will take minimum 15 min to cook, when electric cooker button comes to keep warm mode switch of the cooker.

11) Let it set for sometime later add 1 tsp of ghee, finely chopped coriander leaves and fried cashew nuts and mix everything well gently.

That's it our sweet corn pulao is ready to serve :)

Tips

** If you are using basmati rice, for eg 1 glass of basmati rice then use 1&1/2 glass of water for cooking and d't forgot to soak it for 30 min.

** If you are cooking in pressure cooker, pressure cook it for 3 whistles for normal rice.

** As we are using green chilli and pepper corn paste, pulao tastes spicy so add biryani masala powder accordingly or skip adding pepper corn.

** You can skip adding veggies.

Paneer vegetable kebabs

Paneer vegetable kebab  is very tasty snack or appetizer which is perfect as evening snacks, as starter and perfect for parties and get togethers. Kebabs are popular Middle Eastern food made by meat, vegetables which are skewered with chunks meat or veggies grilled over an open flames. Today I am sharing kebab recipe by adding paneer and veggies like carrot, beans, sweet corn and potatoes. Instead deep frying I pan fried it like tikki's as I used boiled veggies. They tasted crispy from outside and smooth from inside. You can deep fry or shallow fry these kebabs as per your choice. We can have these kebabs with green chutney, ketchups of your choice.

This month theme is "Kebab Time" suggested by Sujata di, she is very talented and senior chef, recently I bookmarked Veg galouti kabab and  hazelnut chocolate sandesh to try some time. And this month my paired with Jaya Shree di, I like her Karnataka recipes a lot. I gave potato and ginger as secret ingredients, she prepared tasty and yummy veg shami kebabs. In turn she gave coriander powder and ginger chillies using those as few of main ingredients I prepared these kebabs.

                                 Paneer vegetable kebab 

Preparation time : 10 minutes
Cook Time : 20 minutes
Serves : 10 kebabs

Recipe Cuisine: Indian version
Main ingredients : paneer

Ingredients

Shredded paneer - 1 cup
potatoes - 2
carrot - 1
beans - 4
sweet corn kernels - 1/4 cups
green chillies - 2 tsp (finely chopped)
finely chopped coriander leaves - 2 tsp
coriander powder -1/2 tsp
cumin powder - 1/2 tsp
black pepper powder - 1/2 tsp
red chilli powder - 1/2 tsp(adjust)
corn flour - 3 tsp
Bread crumbs - optional (I dint used)
salt - as per taste
oil - to pan fry

Instructions

1) Boil all the veggies for 4 whistles by adding 1/2 cup of water and 1/2 tsp of salt.

2) Let the pressure comes down naturally then removes veggies out and let it outside for 15 min, so that veggies become bit dry. (** this is important step, if veggies are wet then you do not get shape to kebabs and they becomes very smooth)

3) Now mash all veggies finely, later add all the spices, salt, corn flour, green chillies, coriander leaves, shredded paneer and mix everything well in a bowl.

4) If you feel above dough very smooth then you can add 1/4 cup of bread crumbs for binding.

5) Now apply some oil to your hands pinch some dough and give it tikki's shape.

6) Heat pan by adding 2 to 3 tsp of oil of fry these kebabs on low to medium flames till they changes color on both sides.

7) Repeat the same process for remaining and take it into plate. 

That's it our paneer vegetable kebabs are ready, serve hot with cup of tea and enjoy with your family :)

Masala maramaralu || karam borugulu || spicy puffed rice

 Masala maramaralu || karam borugulu || spicy puffed rice is very popular snack in Andhra and in many places of India and called with different names like masala murmura in Hindi, masala mandakki in Kannada and masala pori in Tamil. It is very easy to prepare with easily available ingredients. It is perfect tea time snack and popular snack for journey's and picnics. We can also add some onions, grated carrot, cucumber and lemon in masala puffed rice while serving, which is also called churumuri in Kannada, Jhal muri in Hindi. I am big fan of Jhal muri which we get in trains mainly while travelling North side. As they use mustard oil in it, that flavors makes you feel hungry while travelling, will share that recipe soon 😊. I loved my friend Kalyani's  microwaved masala peanuts which is also perfect snack for journey's and picnics. 

              Masala Borugulu

Preparation time - 10minutes
cook time : 15 min
Serves : 2 persons

Recipe Cuisine: Indian
Main ingredients : Puffed rice

Ingredients

puffed rice - 2 bowls
oil - 3 tsp
mustard seeds - 1/2 tsp
cumin seeds - 1 tsp
groundnuts - 2 tsp
roasted chana dal / putnalu - 2 tsp
dry shredded coconut pieces - 2 tsp
curry leaves - 2 sprigs
red chilli - 3
green chilli - 5
turmeric powder - 1/2 tsp
red chilli powder - 1 tsp
salt - as per taste
garlic - 5(optional, I did not used)

Instructions

1) Heat wide bowl add 2 TSP of  oil, 1/4 tsp of turmeric powder and puffed rice for a minute on medium flames till it becomes crispy and take it into bowl.

2) Now heat 3 tsp of oil and then fry groundnuts till it changes color and then take it into cup.

3) Now add  crushed garlic (if you want to use) fry till it changes color then add mustard seeds. When it starts crackling add cumin seeds and fry till you get nice aroma.

4) Later add green chillies, red chillies, curry leaves and fry it well. 

5) later add fried chana dal, fried ground nuts, shredded coconut pieces and fry it well. 

6) Switch off the flames and add red chilli powder, salt and mix everything.

7) Now add this mixture in fried puffed rice and mix everything well.(** If need add some boiled oil )

Tips

** Fry green chillies well so that they do not taste spicy while eating and also increase its shell life.

** Adding garlic is optional but it gives nice aroma and taste.

** If you want you can also add sev/omapodifried corn flakesfried dalmooth, my uncle also loves to add some masala peanuts in it. 

** As we already added green and red chillies, add red chilli powder accordingly.

** Let the mixture cool to room temperature and then store it in air tight container so that puffed rice stay crispy for long time.

** Do not over fry puffed rice, as they become more crispy and thick.

** In order to keep this mixture crispy for long time frying puffed rice is important.

Thuthuvalai rasam || Tamil Nadu popular - Thuthuvalai rasam

 Thuthuvalai rasam is very healthy and tasty rasam recipe prepared using thuthuvalai. Thuthuvalai  is ancient herb used in many siddha and Ayurvedic medicine. Thuthuvalai is a creeper plant first time I saw in our neighbor "Bharath Paati" house. I saw purple color flower and red color fruit creeper plant in front of their house. When asked, paati told that they are thuthuvali flowers and these flowers are offered to Lord Shiva and also it contains many medicinal health benefits. So I too use to collect some flowers from their place, one day paati's daughter Kanchana akka shared and Bharath paati shared this rasam recipe. About Thuthuvalai plant

 As I said early its creeper plant grow widely with purple color flowers and red fruits. Be careful while taking leaves as it contains lots of thorn which may hurt your hands. Use scissor to cut leaves. Thuthuvalai in Tamil is also known as "purple fruited pea egg plant or Thai night shade in English", tutavalam in Malayalam, alarkapatramu, mullamusti,షధ  in Telugu and popularly known by its botanical name Solanum Trilobatum.

Health benefits of Thuthuvalai 

Thuthuvalai soup / Rasam / powder is used to cure cold, cough, blocked nose, chest congestion, anti bacterial, anti diabetic, best medicine to cure asthma.

In turn I gave ginger and onions as secret ingredients to Anu.

                              Thuthuvalai Rasam

Preparation time : 10 minutes
Cook Time : 20 minutes
Serves : 4
Category : Dal/Sambar/Rasam/Pulusu/kuzhambu/pulusu
Recipe Cuisine: Tamil Nadu
Main ingredients : Thuthuvalai

Ingredients

To grind 
thuthuvalai leaves - 1 cup
cumin seeds - 1 tsp
black pepper corn - 1/2 to 3/4 tsp(adjust)
red chilli - 1
garlic - 3

others 
tamarind - small lemon size
sesame oil or vegetable oil - 1 tsp
ghee - 1 tsp
mustard seeds - 1 tsp
cumin seeds - 1 tsp
red chilli - 1
green chilli - 2
curry leaves - 1 sprig
garlic - 5
small onions - 10
tomato -1 
coriander leaves - 2 tsp

Instructions

1) Wash thuthuvalai leaves in water and remove its hard thorns. Also soak tamarind in 1/2 cup of water later extract its juice and keep it aside.

2) Roughly grind cumin seeds, pepper corns, garlic, red chilli and garlic and then add thuthuvali leaves and grind it to coarse paste.



3) Take this mixture in a cup and keep it aside.

4) Heat 1 tsp of sesame oil and 1 tsp of ghee then add mustard seeds, when it starts crackling add garlic, red chilli, green chilli, garlic, curry leaves and fry it well.

5) Later add small onions, pinch of salt and fry everything well till onions changes color.

Note: Green and red chilli I used is not spicy, adjust both chillies quantity according to your taste.


6) Now add finely chopped tomatoes cook it on low flames by closing lid till tomatoes become mushy. 


7) Now add tamarind extract, 2 cups of water(adjust) and boil it on low flames.


8) Now add red chilli powder, turmeric powder and boil it on low flames for 5 minutes.


9) Finally add finely chopped coriander leaves .


That's it our thuthuvalai rasam is ready, I served this rasam with hot steamed rice, broad beans curry, banana chips.
