Banana stem curry, Arati doota/daava koora, vazhaithandu poriyal

Banana stem is very nutritious with lots of medicinal values in it. Having banana stem in our food is good for kidneys. Banana stem juice dissolves kidney stones. Once a bunch of bananas harvested, the tree is cut away. outer layer of the banana stem is peeled away, till you get tender inner stem. The stem looks hard but after cooking it will be smooth. In some areas it is not easily available in market. I use to prepare this recipe regularly. It's preparation is difficult for beginners, but method is very easy. This curry goes well with rice. You can also prepare chutney, and in combination chickpeas etc.,

Arati doota/daava koora, Banana stem curry

Ingredients

Banana stem pieces - 1 cup
Onions - 1cup
Curry leaves - 1tsp
Mustard seeds - 1tsp
Cumin seeds - 1 tsp
Green chilli -1
Hing - 1 pinch
Turmeric powder - 1/2 tsp
Coriander leaves - 1 tsp ( for garnishing)

For grinding

Fresh coconut - few pieces
Ginger - 1tsp
Coriander leaves - 1 tsp
Green chillies -2


Preparation

* Remove the outer layer of banana stem and cut into circular discs.

* While cutting the discs, we have to take out the extra fiber, by taking it on to the right index finger and make circular movement of the finger, while holding the fiber.



Repeat this process with entire stem



* Take a bowl add diluted buttermilk. As buttermilk is not ready  today , i used water. Take a bowl add water and pinch turmeric powder.


* Now cut circular discs into small pieces and keep it water until you cook.

Method

1. Take a pan/kadai, add oil heat it for a second, add mustard seeds once splutters add cumin seeds, green chilli, curry leaves and hing.

2. Add onions and fry it well, by adding salt.

3. Now remove the banana stem  from water and add it to the pan.M ix it well and close the lid, cook it until the stem becomes soft.


4.Take a mixer jar add fresh coconut pieces, green chillies, ginger and coriander leaves and powder it .


 5. Add this coconut powder to the cooked banana stem, stir it well. Close the lid and cook it for 2 min. So that the coconut flavour adds to the curry.

6. Switch off the flame, take curry in a bowl and garnish with coriander leaves.


Yummy and healthy Banana stem curry is ready to serve😋😋.

Note

* You can also use butter milk instead of water to soak banana stem pieces.

* Donot keep the banana stem pieces out for long time, it will change color to black.

* As i soaked the banana stem pieces in turmeic water it turns yellow color.

* Do not grind coconut into smooth paste and do not water.

Tips

◆ Apply oil to your hands and knife while cutting .

◆  Use buttermilk to keep the pieces white.

Raw banana masala fry, Aratikaya masal podi kura, How to prepare raw Banana Masala stir fry

Today's recipe raw banana masala fry is very aromatic, tasty fry. It is tasty side dish which goes well with dal rice, rasam rice, sambar rice and curd rice. We can prepare this masala fry in many ways, but the way which I explained today is very tasty. Today's recipe comes under "No Onion No Garlic" catogery. It will be dry fry if we want to prepare it as gravy we can add tamarind juice. But taste will vary, we can cut banana in circular or cubes. I had this fry with dal and hot steamed rice. Taste of fry depends on the masala we prepare. Aratikaya mudda koora, Banana stem curry  are tasty and healthy gravy curries which goes well steamed rice. 



         Raw Banana Masala Fry

Ingredients

Raw banana - 1

For masala

Oil - 1/2 tsp
Urad dal - 1 tsp
Chana dal - 1 tsp
Red chilli - 2 
Curry leaves - 1 sprig
Dry coconut - 2 tsp

For tempering

Oil - 2 tsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1 tsp
Hing - a pinch
Curry leaves - 1 sprig
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Salt as per taste
Coriander leaves - 2 tsp(chopped)

Instructions

1) Heat oil in a Kadai, add Chana and urad dal 



2) Once dal starts changing color  add red chilli, dry coconut and curry leaves. 



3) Fry everything well and take it into plate and let it cool to grind. 



4) Clean raw banana and peel off the skin. 



5) Take water in a bowl cut raw banana into cubes and add it in water. (** check tips). 



6) Heat oil in a Kadai, add mustard seeds once it starts splutters add cumin seeds, curry leaves and hing and fry it well. 


7) Now add banana cubes to the above and mix it well. Close the lid and cook on medium to low flames. 



8) Now add salt and turmeric powder to the above and cook it. 



9)  Add fried masala into mixer jar and grind it into powder bit coarsely. 



9) Raw banana sticks to the Kadai, so no need to bother about that. Once banana cooked well then add powdered masala to it. 



10) Mix the above well  and also add red chilli powder and mix everything well. 



11) Mix everything well and fry it without closing the lid.  Cook till it mix well with raw banana. 



Flavourful, aromatic and tasty raw banana masala fry is ready garnish it coriander leaves. 



Have it as side dish in our meals. I had it with tomato dal and hot steamed rice. 



Note

* Adjust the quantity of urad and Chana dal masala according to the quantity of banana you use. 

Tips

** Keep raw banana in water after cutting. 

** Raw banana slightly sticks to the Kadai, so no need to worry.

Raw plantain(banana) curry || Aratikay mudda Koora || Valakkai thenga curry

Raw banana recipes are south Indians favourite food. Not only raw banana we like recipes done with banana stem,flower too. And it gives a heavenly feeling when you eat hot rice with ghee and all items in banana leaf 😋😋😋. Talking about calories 105 calories in 1 medium banana. I usually prepare raw banana fry(Aratikaya fry), bajji,instant chips,pulusu,aratikaya manchiga pulusu ,ava pettina aratikay koora🤗. Today i am posting aratikaya mudda koora (Raw banna curry).It come as gravy , we can serve rice and roti's.




Raw Banana Curry-Aratikaya mudda koora


 Prep Time : 10 mins

   Ingredients needed:


Raw plantain-1 big size

Onion -1 cup (roughly sliced)
Green chillies-3
Garlic - 4 to 5 cloves
Mustard -1tsp
Cumin seeds -1 tsp
Urad & chana dal -1 tsp
Curry leaves -1 sprig
Coriander leaves- 2 tsp
Salt as per taste
Oil- 3tsp
Water as per cooking




Process:


*Wash banana and cut it 3 pieces.  Take a pressure cooker place raw banana pieces and pour water until it dip. Add salt,pinch tumeric powder and cook it for 4 whistles.




*Take boiled bananas in a plate cool it for sometime and then peel the skin.cut the boiled raw banana into pieces or mash it .


Method:


1.Take a pan/kadai add 1 tsp oil. Add garlic cloves fry until brown (so that the raw smell goes) and keep it aside.


2.Now add mustard seeds,when it splutters add cumin seeds along with urad dal,chana dal nd curry leaves, green chillies one by one. Fry it until dal changes to golden brown.


3.Add roughly sliced onions and salt and fry it for few seconds.Cook until it changes to pink color.




4.Now add mashed or  pieces of  raw banana, red chilli powder, fried garlic and fry it. Add 1 small glass of water or per required to curry. Mix all the ingredients well and close the lid for 5-10 minutes in medium flame to get good gravy. Stir the curry in-between, otherwise it stick to the bottom of the pan and taste also changes.


5.Once the curry cooks as gravy, stop the flame. Take raw banna gravy in a bowl and garnish with coriander leaves.





Notes:


*You can also add ginger, and squeeze lemon in the curry. When you use these 2 ingredients use hing instead of garlic.


*Instead of using pressure cooker to boil plantain,You can also cook directly by peeling  the raw banana into pieces and add enough water to dip,add turmeric powder then cook until the pieces boil.when you are in hurry you can use pressure cooker to save time.


Tips:


◆ Apply cooking oil to your hands and knife lightly so that raw banana won't stick to ur hands and knife.


◆ Inorder to maintain the color of banana add 1/2 tsp turmeric powder in water and then dip raw banana pieces until you cook.
