Hyderabadi kaddu ka dalcha || How to prepare vegetarian dalcha recipe

 Hyderabadi Dalcha - Hyderabadi kaddu ka dalcha is one of the popular dal/lentil based curry, this dalcha can be prepared by adding vegetables or by adding non veg. We can add veggies like bottle gourd, drumsticks, brinjal in dals like chana dal or by combining toor dal and chana dal or masoor dal/ red lentils to prepare this dalcha. We can prepare by adding garam masala and some spices or you can prepare it without too. Today I am sharing by adding spices.  In this kaddu ka dalcha is very popular and I  am sharing kaddu ka dalcha recipe. This is most requested recipe by my brother "Ajay Prabhu". Who d't like   Hyderbadi Dum Biryani recipe, I miss many Hyderabad days and family, friends I meet and I spent time with them. Hopefully I will meet all of them very soon 😍.  


 In our life journey we taste many food and it touch our heart, this is one such recipe. We even do not remember the person who treated us but the taste will remain on taste buds for long, what ??? you d't remember taste like that??? then you are not foodie like me 😉. This recipe is introduced by one of my friend/ bench mate  Anu  Hyderabad institute. When asked I her mom she gave recipe, which was in mind till date and yes that time I d't know cooking but I noted it😂. That day aunty was scolding my friend on phone he never asked recipe in her life and learn something from me 😎. When my Ajay anna asked to share this recipe I was excited and thought to share video soon. I thought to share video and blog at once but unfortunately every time something missing(some clips in my video)and I was not satisfied with output not taste.                              Hyderabadi Kaddu ka dalcha 

Preparation time  - 10 minutes
soak time - 30 minutes
cook Time : 20 minutes
Serves : 4

Main ingredients : chana dal, bottle gourd

Ingredients  

bottle gourd pieces - 1 cup
chana dal - 1/2 cup
toor dal - 1/2 cup
roughly chopped onions  - 1 cup
finely chopped tomatoes - 1/2 cup
ginger-garlic paste - 1 tsp 
tamarind - lemon size
green chillies -2 
curry leaves - 3 sprig
finely chopped coriander leaves - 1/4 cup
cumin seeds - 1 tsp  
coriander powder - 1 tsp
cumin powder - 1/2 tsp
red chilli powder - 1 tsp(adjust)
turmeric powder - 1/4 tsp
garam masala - 1 tsp
oil -2 tsp
ghee - 2tsp
cardamom/ elachi - 1
clove- 1
dalchini/ cinnamon stick - 1 inch 
bay leaf - 2
red chilli -2(optional)

Instructions

1) Wash and soak both dals in enough water for 30 min.
2) Also soak tamarind in hot water for 15 min, remove its pulp and keep it aside.
3) Pressure chana dal and toor dal for 5 whistles, let the pressure comes down naturally. Check the dal consistency, it must smooth paste. Otherwise grind it smoothly or mash it well.
4) Now pressure cook bottle gourd by adding 1/4 cup of water and little salt for 1 whistle. Let the pressure comes down naturally and then keep it aside. Do not through bottle gourd cooked water. 
5) Mean while heat ghee and oil in a kadai, then add cumin seeds fry till you get nice aroma.
6) Then add elachi, clove, dalchini and bay leaf fry till you get nice aroma.
7) Later add green chillies, curry leaves fry for few seconds. Then add onions, little salt fry till it changes color color, later add ginger & garlic paste to it and fry it well.
8) Now add tomatoes mix everything well and cook it by closing lid till tomatoes become mushy.
9) Meanwhile add tamarind pulp in cooked and mashed dal paste and mix everything well.
10) Now add turmeric poser, red chilli powder, coriander & cumin powders, salt and mix everything well.
11)Later add cooked bottle gourd in onion tomato gravy, mix everything well. Close the lid and cook it on low flames for 10 min till bottle gourd absorbs gravy.
12) Now add dal & tamarind mixture to the above bottle gourd gravy mix everything well. 
13) Add 1 cup of water adjust water consistency as per requirement, add salt if need. Also add finely chopped coriander leaves, 2 springs of curry leaves as it is.
14) Close the lid and cook it for 10 min on low flames.


That's it our kaddu ka dalcha is ready to serve. Taking it into serving bowl and add 1 tsp of ghee to get extra taste 😋😋.

Homemade Chocolate Syrup || Prepare chocolate syrup at home in 15 min using 4 ingredients

 Homemade Chocolate Syrup with 4 ingredients that to prepared in minimum 15 minutes. It is very delicious and most liked recipe by kids. Okay I know by this time you will be reading this angrily, "arey yaar Aruna is there any age limit for chocolates you are mentioning only kids" 😳Okay I agree now it is everyone's favorite 😍.  You are kids not drinking milk then prepare chocolate milk shake by adding fruit likes banana, sapota, mango, strawberry and using soaked dry fruits. Also we can use this chocolate syrup to drizzle our Bourbon biscuit cake, Rava chocolate cake , cupcakes. We can prepare hot chocolate, Stuffed chocolate pongalu / paniyarram / appeChocolate dry fruit lassi.                           Chocolate Syrup 

Preparation time  - 10 minutes
Serves : 200 ml 
Category : Beverages
Recipe Cuisine: Indian 
Main ingredients : cocoa powder

Ingredients 

cocoa powder - 1/4 cup
powdered sugar - 3/4 cup(adjust)
salt - 1/8 tsp or a pinch
vanilla extract - 1/2 tsp




Instructions

1) Sieve cocoa powder in a sauce pan .

2) Now sieve powdered sugar in the above bowl.

3) Mix cocoa powder and powdered sugar very well by adding salt in it. 

4) Add 3/4 cup of water mix everything well, make sure that the mixture is lumps free.

5) Now boil this on low to medium flames till it becomes thick and by continuously mixing the syrup. You will observe syrup consistency becoming thick on bottom of sauce pan. 

6) Now switch off the flames and add vanilla essence and mix everything well.

7) Let the syrup cool to room temperature. 

8) Later  store it in dry and air tight container.


Tips

** Add powdered sugar according to your taste.

** Do not add more water in cocoa powder & sugar mixture, as it takes lots of time to cook.

** Do not add cocoa powder in hot water as it will forms lumps.

** Store chocolate syrup when it is cool and in air tight container, also keep this is in fridge to increase its shell life.

Dates & Nuts Banana Smoothie || Delicious and energetic dates & nuts banana smoothie

 Dates & Nuts Banana smoothie is very tasty and energetic drink which is very creamy and delicious in taste. It is very easy to prepare and gives instant energy. This is my super drink which I always loves to have it after my walk, exercises. It is also perfect to have as simple breakfast in busy days, instead of giving your kids store bought energy powder with milk. Just give this dates & nuts banana smoothie before starting their evening studies. It gives good energy and filling too for them. I used soaked almonds and watermelon seeds, pumpkin seeds, raisins to prepare this smoothie, you can also soak cashew nuts in it if you are planning to give kids. You can use any variety banana, today chakkarakeli banana variety, this is very sweet banana with good smooth flesh, it is widely available in Coastal Andhra. Do checked out banana sheera recipe to get more information about red banana. As many of you I d't like the flavors of melon & pumpkin seeds in smoothie, so I added green cardamom. Do not use these seeds in more quantity, smoothie taste will change. Add seeds & nuts according to your taste and availability.                    Dates & Nuts Banana Smoothie 

Preparation time  - 10 minutes
Soak time - 30 min
Serves : 2 serving glasses
Category : Beverages
Recipe Cuisine: Indian 
Main ingredients : Dates

Ingredients 

Dates - 10
almonds - 15
cashew nuts - 10(I did not used)
watermelon seeds - 1 tsp
pumpkin seeds - 1 tsp
raisins - 10
banana - 2
milk - 2 glasses
elachi -2 

Instructions

1) Remove seeds from dates. Soak dates, almonds, watermelon seeds, pumpkin seeds, raisins, cashew nuts(if you are using) in 1/2 cup of hot water for 30 minutes to 1 hour.


2) Later grind all soaked ingredients other than raisins in a mixer jar to smooth paste.


3) Now add 2 glasses of milk, banana pieces, elachi  to the above paste and grind it smoothly. If you want you can also add ice cubes .



4) Later take it into bowl add some finely chopped dates, almonds and soaked raisins and take it into serving glasses. Finally garnish it with nuts, finely chopped almonds and dates. 


Tips

** If you do not like melon and pumpkin seeds taste skip it.

** As I used chakkarakeli variety banana and good amount of dates, I did not added any sweetener like honey or sugar. If you want you can add it.
** If you want to serve it cool add some ice cubes while grinding.
