Pudina Rice || Pudina Veg Pulao || Mint Rice, How to prepare pudina rice

"Happy Friendship Day" to all my friends.. Today's recipe is freshly aromatic, tasty and healthy Pudina Rice, Mint Rice or Pudina veg pulao. I prepared this pudina rice using basmati rice which enhances its taste, to make it more healthy i used veggies like carrot, beans, peas and potato. You can also pack this for lunch box with some cucumber and carrot slices. If you want to prepare something special for parties at home rather than regular veg rice then pudina pulao/rice is perfect rice items. Serve this with simple raita's like pomegranate raita, boondi raita. On hubby's demand i prepared potato matar/peas fry and masala raita,onions and lemon pieces with this pudina veg pulao. Instead of basmati rice you can also use regular rice and also cook in pressure cooker. I always prefer to cook pulao in kadai when using basamati rice, if you are facing problem in cooking basamati rice check out recipe and tips. There are number of variation in preparing this pudina rice, today i am sharing the recipe which i regularly prepare at home. Also check

                            Pudina Rice/ Pudina Veg Pulao
      
Soak time: 20 minutes
Preparation Time : 10 minutes
Cook Time : 20 minutes

Ingredients

For pudina paste:

pudina leaves- 1 cup
coriander leaves - 1/2 cup
fresh/desiccated coconut - 2 tsp
green chillies - 2 to 3(adjust)
ginger - 1 inch
garlic - 2 cloves

Veggies used:

carrot - 1
beans - 5
potato -1
fresh peas/matar -1/2 cup

others:

Basmati rice - 1 1/2 cup
water - 2 1/2 cup
ghee - 2 tsp + 1 tsp
vegetable oil - 1 1/2 tsp
elachi - 3
cloves - 3
star anise -2 
cinnamon stick - 1 inch
bay leaf - 2
pepper - 5 (option)
cashew nuts - 10
onion - 1
lemon juice - 5 drops 
salt as per taste

Instructions

1) Wash basmati rice under water for 2 times and soak it in enough water for 20 minutes.



2) Meanwhile chop veggies and prepare pudina paste. wash pudina/mint and coriander leaves well. Take all the ingredients in a mixer jar and grind it to smooth paste.





3) Now take a kadai add ghee + vegetable oil, let it heat for a second then add elachi,clove, cinnamon stick, pepper, bay leaf, star anise fry it for few seconds then add cashew nuts, fry till it changes color.




4) Now add onion and salt fry till it changes color.



5) Now add all veggies, mix everything well then close the lid and cook it for few minutes till the veggies cook a bit on low - medium flames.




6) Now add pudina paste to the above mix everything well without breaking rice.




7) Drain basmati rice from water and add to the above mix everything well then add 2 1/2 cups of water.



8) now add 2 1/2 cups of water to the above mixture with few lemon juice drops and let it cook for a minute on high flames, later close the lid and cook it on low flames.(** check tips)




9) open the lid in the middle mix everything well add 1 tsp of ghee close the lid and cook till rice cook well.



once pulao cook well, let it rest for some time before serving. That's it aromatic and tasty pudina veg pulao is ready to serve.



Tips 

** Instead of basmati rice you can use regular sona masuri rice.

** If you soak basmati rice for 20 minutes then add 21/2 cup water and cook for 2 whistle if cooking in  pressure cooker. To get perfect cooked non sticky texture of basmati rice add few drops of lemon juice.

** If you are using normal rice then use 3 glass of water and cook it for 3 whistles.

** Do not serve pulao immediately after cooking let it settle for few minutes, then you will get perfect texture of basmati rice.

** Use fresh mint and coriander leaves to get aromatic flavor and taste.

** You can also skip adding veggies to prepare plain pudina rice.

Milaga podi for Idli and Dosa, Tamil Nadu style Idli Dosa podi

Today's recipe is spicy, crunchy and aromatic Tamil Nadu style lentils powder called Milagai podi , it is also known as ulutham parappu milagai podi in Tamil or simply idli dosa podi. Idli, Dosa's are commonly prepared breakfast recipes in South Indian homes.  We prepare chutney's like Coconut Chutney
  Pudina coconut chutneyGreen chutney etc., But podi's are best accompaniment for breakfasts. These spicy  powders prepared differently in different regions. Like in Andhra we prepare gun powder for breakfasts and for meals using combination of  coriander seeds, ground nuts, tamarind etc., In Tamil Nadu they use sesame seeds in podi preparation. My aunt bought this milagai podi when she visited to my home, she gave me this podi recipe to me. Podi taste yummy when we add Ghee, or  any heated oil like sesame oil, ground nut oil (kachina nune in telugu) in podi. 



  Measurements and ingredients for this podi may vary as per interest. I am sharing the recipe which i prepare regularly given by my aunt. This podi tastes crunchy when it is fried on low flames. I always prefer to dry fry dal's and add a drop of oil to fry red chilies, in order to increase the shell life of podi. You can add small amount oil to fry dals. We can have this podi with idli, dosa, uttapams, upma, thalipeth. I even love to have it with hot steamed rice with dollop of ghee, or with roti's by adding 2 tsp of curd in podi 😍




                  Idli Dosa Milagai Podi

Preparation Time : 15 minutes
Cook Time : 10 minutes
Serves : 1 bottle

Main Ingredient : Urad dal

Ingredients

Urad dal - 1 small glass
Chana dal - 1/2 glass
Sesame seeds - 2 tsp
Curry leaves - 2 sprigs
Red chillies - 12
Hing - 1/4 tsp
Oil - 2 drops
Salt as per taste

Instructions

1)Add chana dal in a pan, dry fry it on low flames till changes color evenly and take it into plate.




2) Then add urad dal dry fry evenly on low flames till it changes color and get nice aroma. Take the fried dal into same plate.




3) If you feel the pan is too hot, then switch off the flames and add sesame seeds(nuvvulu, til). Or fry it low flames and take it into plate.(** check tips).




4) Now add 2 drops of oil in pan and fry red chillies on low flames till it changes color.



5) Now add fresh or dry curry leaves fry it well and take it into plate.



6) Let all the fried ingredients cool, later take it into mixer jar. Add hing and salt to it.





7) Grind the above to slightly coarse powder or coarse powder or smooth powder. I prefer to grind slight coarse powder which gives nutty taste.



That's it spicy, tasty, slight crunchy and aromatic milagai podi for idli and dosa's are ready. Let the podi cool, later store it in air tight container,  We can store it for 15 to 20 days



Note

* You can also add 1 tsp of cumin seeds / jeera.

Tips

** Adjust red chilies quantity according to the spicy of chili. If you do not have idea about the spicy of chilli then d't grind fried chillies all at once. 

** Dry frying lentils will increase the shell life of podi. 

** color of podi depends on the type of chillies we used.

** Sesame seeds fry quickly, so be careful while frying.

** Always fry ingredients on low flames, do not burn it. 

** Adding hing will gives nice aroma to the podi.

** You can also use dry curry leaves, if you are using fresh curry leaves then make sure to fry it without moist.

Raw banana masala fry, Aratikaya masal podi kura, How to prepare raw Banana Masala stir fry

Today's recipe raw banana masala fry is very aromatic, tasty fry. It is tasty side dish which goes well with dal rice, rasam rice, sambar rice and curd rice. We can prepare this masala fry in many ways, but the way which I explained today is very tasty. Today's recipe comes under "No Onion No Garlic" catogery. It will be dry fry if we want to prepare it as gravy we can add tamarind juice. But taste will vary, we can cut banana in circular or cubes. I had this fry with dal and hot steamed rice. Taste of fry depends on the masala we prepare. Aratikaya mudda koora, Banana stem curry  are tasty and healthy gravy curries which goes well steamed rice. 



         Raw Banana Masala Fry

Preparation Time : 5 minutes
Cook Time : 15 minutes

Ingredients

Raw banana - 1

For masala

Oil - 1/2 tsp
Urad dal - 1 tsp
Chana dal - 1 tsp
Red chilli - 2 
Curry leaves - 1 sprig
Dry coconut - 2 tsp

For tempering

Oil - 2 tsp
Mustard seeds - 1/2 tsp
Cumin seeds - 1 tsp
Hing - a pinch
Curry leaves - 1 sprig
Red chilli powder - 1 tsp
Turmeric powder - 1/4 tsp
Salt as per taste
Coriander leaves - 2 tsp(chopped)

Instructions

1) Heat oil in a Kadai, add Chana and urad dal 



2) Once dal starts changing color  add red chilli, dry coconut and curry leaves. 



3) Fry everything well and take it into plate and let it cool to grind. 



4) Clean raw banana and peel off the skin. 



5) Take water in a bowl cut raw banana into cubes and add it in water. (** check tips). 



6) Heat oil in a Kadai, add mustard seeds once it starts splutters add cumin seeds, curry leaves and hing and fry it well. 


7) Now add banana cubes to the above and mix it well. Close the lid and cook on medium to low flames. 



8) Now add salt and turmeric powder to the above and cook it. 



9)  Add fried masala into mixer jar and grind it into powder bit coarsely. 



9) Raw banana sticks to the Kadai, so no need to bother about that. Once banana cooked well then add powdered masala to it. 



10) Mix the above well  and also add red chilli powder and mix everything well. 



11) Mix everything well and fry it without closing the lid.  Cook till it mix well with raw banana. 



Flavourful, aromatic and tasty raw banana masala fry is ready garnish it coriander leaves. 



Have it as side dish in our meals. I had it with tomato dal and hot steamed rice. 



Note

* Adjust the quantity of urad and Chana dal masala according to the quantity of banana you use. 

Tips

** Keep raw banana in water after cutting. 

** Raw banana slightly sticks to the Kadai, so no need to worry.
