 Til Sago & Nuts Ladoo || Til Sago Ladoo || sesame seeds, sago & nuts ladoo with step by step pics and tips. As Makara Sankranti is around we all prepare many varieties of til/ sesame seed recipes. Til in Hindi is also known as sesame seeds in English, nuvvulu in Telugu, ellu in Kannada & Tamil. Try this healthy, tasty, nutty and chewy taste ladoo's for Sankranti festival and enjoy with your friends and family. We regularly prepare til ladoo, once try this til sago & nuts ladoo surely you will love it. I made this ladoo healthy by adding different nuts.

 To prepare this sesame seed, sago & nuts ladoo I used sesame seeds, sago/sagubiyyam/sabudana as main ingredients. Also I added ground nuts, sunflower seeds and pumpkin seeds to make these ladoo's healthy.  Sago gives good nutty and chewy taste to ladoo.

                                   til, sago & nuts ladoo

Preparation time - 15 minutes
cook time : 20 min
Serves : 20 ladoo's

Recipe Cuisine: South Indian
Main ingredients : sesame seeds, sago

Ingredients 

Til / sesame seeds / nuvvulu - 1cup
sago - 1 cup
ground nuts - 1 cup
almonds - 1/2 cup
sunflower seeds - 1/4 cup
pumpkin seeds - 1/2 cup
brown sugar - 1 & 1/2 cup(adjust)
ghee - 3/4 cup
green cardamom - 5

Instructions

1) Dry fry groundnuts in a wide pan on medium flames till it changes color & take it into plate.



2) Now fry sesame seeds till it changes color and take it into plate.



3) Now dry fry sago till it becomes lite & fluffy on low flames. Sabudana turn white and crispy when it fried well, do not burn it.


4) Later fry almonds till you get crackles on it and take it into plate.


5) Now dry fry pumpkin seeds & sunflower seeds for few seconds and take it into plate.


6) Let the above fried ingredients cool to room temperature.

                                            

7) Keep some fried sesame seeds aside and take all remaining ingredients into mixer jar add cardamom seeds and brown sugar and grind it coarsely .


8) Take above coarsely prepared powder, 
remaining fried sesame seeds into wide bowl or in wide plate and mix all the ingredients well.

9) 
 Add little by little ghee and mold ladoo's. Repeat the same process and prepare ladoo's.  Instead of ghee you can also add some milk and mold ladoo's. (** check tips for more info)


That's it our sesame seeds, sago & nuts ladoo's are ready. Keep it in dry & air tight container. 


Enjoy this healthy, delicious and chewy til sago & nuts ladoo's with your friends, family & stay healthy.

Tips

** Fry all the ingredients on low to medium flames, do not burn any ingredient.

** Instead of brown sugar you can also use sugar or powdered jaggery.

** Instead of ghee you can use little(1/8 cup) milk to mold ladoo's or you can use 2 tsp of milk and ghee  to mold ladoo's.

** If pumpkin and sun flower seeds not available skip adding it.

** You can also add cashew nuts in it.

** You can also fry cashew nuts and raisins in ghee and mix in coarsely prepared powder.

Sweet corn soup || Sweet corn veggie soup

Sweet corn soup || Sweet corn vegetable soup with step by step pics and tips.  This sweet corn soup is very delicious, comfort and soothing to have anytime. I made this soup healthy by adding veggies along with sweet corn kernels. We can use vegetables of your choice, today I used carrot, beans, spring onions greens & sweet corn kernels to prepare this soup carrot soup and spring onion, carrot badam soup are my all time favorite soups. 



Event : Shhhhh Secretly cooking challenge

Taking this soulful and healthy sweet corn soup to "Shhhhh Secretly cooking challenge" fb group started by Priya, and taken further till date by Mayuri di, I bookmarked her tomato carrot soup to try soon. Do check her space for wonderful recipes. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it.

                              


          This month theme "HotPot" was suggested by "Priyer Iyer" who blogs at " thephotowali". She is very talented chef, I love all her recipes and photography a lot. I bookmarked her Indian style burgerGujarati bhakri pizza to try soon. Do check her space for more healthy, traditional and many innovative recipes from many regions. My partner for this theme is "Swaty Malik" who blogs at "foodtrails25". Do check her space for wonderful recipes, surely you will love it. Swaty gave butter and garlic as secret ingredients in return i gave cinnamon and green apple as secret ingredients. I bookmarked Swaty's  star breadchocolate mascarpone mousse soon. 

                                      Sweet Corn Soup

cook Time : 20 minutes
Serves : 2 people
Category : Soup
Recipe Cuisine: Indian 
Main ingredients : Sweet Corn

Ingredients

Sweet corn kernels - 1 cup
carrot - 1
beans - 4
spring onion greens - 1/2 cup
butter - 1 tsp
ginger pieces - 1 tsp
garlic pieces - 1 tsp
green chilli - 1
salt - as per taste
pepper powder - 2 tsp
corn flour - 1/2 tsp

Instructions

1) Grind half cup of sweet corn kernels to fine paste.



2) Wash veggies, cut into small pieces and take into plate


3)  Add 1 tsp of butter in pan, to this add ginger and garlic pieces, fry till you get nice aroma and starts changing color.4

4) Then add all the veggies and half portions of spring onion greens till veggies becomes smooth.

5) Later add sweet corn paste and 1 liter of water and mix everything well.(adjust water accordingly )


6) Add required amount of salt and pepper powder to the above and boil it on low to medium flames.


7)
Take 1/2 tsp of corn flour in a cup, add 1/2 cup of water and mix it well.


8) Add corn flour slurry into soup and mix everything well and  boil soup for few minutes. 

That's it our sweet corn veggie soup is ready to serve, garnish it with remaining spring onion greens and serve hot :)


Tips

** Adding veggies make this soup healthy.

** Adding corn flour gives good texture to soup.

** Adjust water as per veggies and sweet corn you used.

** You can also add 1/2 tsp of green chilli sauce in soup.

Nalla Karam Podi || Andhra Style Nalla Karam Podi || nalla karam podi for idli, dosa and rice

 Nalla Karam  podi || Andhra Nalla Karam is Andhra's popular podi variety. It is very tasty podi which is spicy, aromatic and nutty.  Andhra is famous for spice powders popularly called as "podi" and "pickles". We Andhra people prepare many podi recipes which taste different at each home. We can have these podi's as side dish for breakfasts like idli, dosaadaiupma, and these also taste yummy with rice. I just love to have these podi with hot steam rice and ghee. Today's podi nalla karam is prepared using coriander seeds and red chilies as main ingredient. It is very easy to prepare this podi in less time, so do not miss trying this podi.

Taking this spicy and tasty Nalla karam to FoodieMondayBloghop fb groups #278SpiceMixSecrets. By this time you are all aware that I am part of this lovely group where we bloggers share recipe for theme suggested by a person in alphabetical order every week. This week theme was suggested by me, waiting for different podi recipes from my blogger friends. 

                                              
                               Nalla Karam Podi 

Preparation time - 5 minutes
Cook Time - 15
Serves : approximately 250 grams of podi 
Category : Podi 
Recipe Cuisine: South Indian 
Main ingredients : coriander seeds and garlic

Ingredients

Coriander seeds - 1 cup
black urad dal - 3 tsp
chana dal - 1.5 tsp
cumin seeds - 2 tsp
red chillies - 10 (adjust **check tips)
curry leaves - 1/2 cup
garlic - 7
tamarind - small lemon size
salt - as per taste
oil - 2 tsp

Instructions

1) Dry fry coriander seeds in wide pan on low to medium flames till it changes color and you get nice aroma. Later take it into plate.

2) Now add 1/2 tsp of oil and fry black urad dal till you get nice aroma and take it into plate.

3) In the same pan fry chana dal till it changes color and take it into place

4) Now fry cumin seeds till you get nice aroma and take it into same plate.

5) Now add remaining oil and fry red chilli till it changes color and take into plate.

6) In the same pan add curry leaves fry till it becomes crisp and take it into another plate. You can also use dried curry leaves instead of curry leaves.

7) At last fry garlic in the same pan for few minute and take into curry leaves plate. You can use garlic without frying, in order to keep this podi fresh for long time we fry it. (** check tips)

8) Let all the above fried ingredients cool for room temperature.

9) Now take all fried ingredients other than curry leaves and garlic into mixer jar.

10) To this add tamarind and required amount of salt and grind coarsely. 

11) Now add fried curry leaves and garlic grind it coarsely.

That's is our "Nalla Karam podi" is ready.


 Spread this podi it into plate and let it cool for sometime. Later store it into dry air tight container, it will stay fresh for more than 2 months.


Tips

** Fry all the ingredients on low to medium flames carefully, do not burn it.

** If black urad not available then use normal urad dal, using black urad dal gives good taste to podi.

** Use red chilli according to your taste. Guntur red chillies are very spice in taste, add accordingly.

** You can use half Guntur red chilli and half Kashmiri/ byadigi variety red chilli as per your availability.

** You can also add 1/8 tsp of methi/ fenugreek seeds to get nice aroma to podi.

** You can use sun dried/ dried curry leaves. 

** Grind nalla karam coarsely, do not grind it too smooth.

** If you do not eat garlic, then skip adding it. Instead of garlic add asafoetida.

** Do not add red chilli all at once while grinding this podi.

Tomato bath || Karnataka style tomato pulao

Karnataka Style Tomato bath is one pot rice item which is very easy, tasty and filling. Today I am sharing Karnataka's popular tomato bath, we can call it as tomato rice or tomato bath or tomato pulao. I prepare this in 2 ways with and without adding masala's. Today I am sharing one of my favorite way, which is very aromatic with grounded masalas added in it. We can have this rice item as it is or with any raita like pomegranate raita(video). This tomato bath recipe saves many of  us when we have nothing to prepare at home and when you are in hurry or when you are back from journey's.

  Karnataka Style - Tomato Bath

Preparation time - 20 minutes
cook time : 10 min
Serves : 2 
Category : Rice Item / Regional 
Recipe Cuisine: South Indian
Main ingredients : Tomato, rice

Ingredients 

Rice - 1 cup
oil - 1 tsp
ghee - 1 tsp
mustard seeds - 1/2 tsp
cumin seeds - 1 tsp
curry leaves - 1 sprig
green chilli - 1
onion - 1
ripened tomatoes - 3 
red chilli powder - 1/2 tsp(adjust)
green peas - 1/4 cup(optional)
coriander leaves - 1 tsp
garam masala powder - 1/2 tsp

To grind 

coriander seeds - 1 tsp
fresh coconut - 1/2 cup
clove - 1
cinnamon stick - 1 inch
ginger - 1 tsp
garlic - 2 pods
red chillies -2
pudina - few strands (I did not added, as it is not available right now)

Instructions

1) Wash 1 cup of rice under water and soak it for 15 to 20 min.

2) In a small  mixer grind add all the ingredients mentioned "To grind" add some water and grind to fine paste. 

3)Now in a wide pressure cooker add 1 tsp of oil, 1 tsp of ghee when it heat then add mustard seeds. when it starts crackling add cumin seeds, later add curry leaves and fry well.

4) Then add green chillies fry well, later add finely chopped onions, salt and fry well.

5) When onions starts changing color then add fresh peas then fry it for few minutes. 

6) Now add finely chopped tomatoes cook it well on low to medium flames till it becomes mushy.

7) Now add red chilli powder, garam masala powder, adjust salt if need mix everything well.

8) Now add prepared masala paste and mix well.

9.a)If you are using normal rice -  add 2 glasses of water for 1 glass rice.  
9.b) If you are using basmati rice - add 1&1/2 glass of water for 1 glass basmati rice. 
Add water depending on the rice you are using.  boil the above  till you get bubbles on water.

10) Add soaked rice and finely chopped coriander leaves to the above mix. 

11.a) Cook rice for few seconds then close the pressure cooker and pressure cook it 3 whistles.
11.b) If you are using basmati rice pressure cook it for 1 whistle and reduced flames to low for a minute then switch off the flames. 

12) Let the pressure comes down naturally and then open the lid. mix everything well for once without breaking rice.

That's it our Karnataka Style tomato bath recipe is ready. Served it some raita and enjoy with your friends and family.

Tips:

** You can prepare this using sona masoori rice or using basmati rice, add water accordingly.

**Adding peas is optional, if available add it surely to get good taste.
