Batheeth - Emirati Dates crumble Batheeth

 Today's recipe Batheeth - Dates crumble from Emirati cuisine. This is very easy delicious recipe with zero added sugar. This recipe is prepared using wheat flour, dates paste as main ingredients with the flavors of cardamom and ginger powder added in it. Almonds and sesame seeds added in this gives good nutty taste. We can serve this as dates crumble or as balls or cookies that is rolled in sesame or almonds or pistachios(chopped). Today I am sharing the crumbled version, we can also mold it as balls too. Wheat flour is fried till it changes color which gives good nutty flavors to this Batheeth. I just like recipes that are prepared using dates, my daily routine drink dates and nuts ragi malt  is my all time favorite. As dates boots our energy, good for bone health, it promotes heart health and many more. The modern diet of the UAE is multi cultural,  it shares similarities from neighboring countries like Oman, Saudi, also Middle Eastern and Asian cuisines(info from wiki).

I checked this recipe here with some changes in ingredients.

Main ingredients : wheat flour, dates

Ingredients  

Wheat flour - 1cup
Dates paste - 1 cup(adjust as per your taste)
Butter - 1/2 cup
Cardamom powder/ elachi powder - 1 tsp
Ginger powder - 1/2 tsp
Almonds - 10
sesame seeds - 2 tsp

Instructions

1) Deseed dates and soak it in very little hot water for 15 min. Later mash it or grind it fine paste.


2) Dry fry wheat flour in a wide pan/ kadai on low flames till it changes color and you get nice aroma .



3) Now add dates paste in it mix everything well, you will get nice crumble texture. 



4) Add cardamom powder, ginger powder butter and mix everything well.



Finally add finely chopped almonds and sesame seeds, that's it our Emirati Batheeth is ready to serve.


Tips

* You can also add rose water and saffron in this.
* You can also prepare dates balls and roll it in almonds or pistachios or in sesame seeds. In order to prepare balls the dates & flour texture should be like dough. For this take 1 cup of dates paste and 1/2 cup of flour, adjust quantity accordingly.

Butterfly Pea Flower Tea || Blue Tea || How to prepare herbal blue tea || Sanku pushpam Tea || 4 varieties of Blue Tea

Butterfly Pea Flower Tea || Blue Tea with step by step pics and tips.  This blue tea is caffeine free herbal tea, it is very popular tea in  Asian countries like Thailand,Vietnam, Thailand, India and Malaysia. This butterfly pea flower is also known as Blue pea, Asian Piegonwings, Aparjita, Clitoria, Cordonfan pea. It is also known as sanku puvvu/ pushpam in telugu. Firstly i am not tea or coffee liking person, but i just love herbal tea's like green tea(youtube link), hibiscus tea and this butterfly pea flower tea or blue tea. The beauty of this flower is it changes blue color to purple color when we add lemon to it, isn't it interesting?? Involve your kids to prepare this color changing game tea. I did some experiments too, will share it here check out. "If you want you can remove green stem of flower, as you may feel bitter taste. If you are using dry flower add as it is.  I did not removed green stem as i like its taste, prepare according to your taste." Will share video in youtube soon.


We can use dried or fresh flowers to prepare this tea. Dried butterfly pea flowers are available online too. Luckily i have four colors - white, blue, dark blue with five petals and pink color butterfly pea plants at home. Pink color plant is small, eagerly waiting to see pink flowers 😍. This plant will grow easily in any soil, it is climbing plant and it is seed based. My mom gave these seeds to me, previously i had only white color plant. In my last visit to my mom's place i collected these seeds. If we do not pluck flower then seeds will form. I use some flowers to make small garland with these flower for pooja daily and remaining flowers i prepare tea evening. I & hubby love to have green tea and blue tea in alternate days.

 


How this tea taste
 
As it is herbal , butterfly pea tea taste woody and earthy flavor, like green tea not like normal tea. Many of us do not like this taste and flavor but after knowing the health benefits surely you will like to try this drink.

Main ingredients : Butterfly Pea Flower

Ingredients ( for 4 different varieties of tea adjust accorndingly)

* Butterfly pea flowers - 15( this to prepare 4 varieties of tea,                                                  take flowers accordingly)
* water - 4 glasses/cup(measure water in glasses/cups which you                    serve and some more water as it reduce when we boil)
* Honey - 1 tsp
* Lemon - 1 tsp
* Sugar - 1 tsp
* Brown Sugar - 1 tsp

Instructions

1) If you want you can remove green stem of fresh flower before boiling. 
2) Instead of boiling flowers in water, you can soak it in hot water till flowers leave color.
3) Boil 4 glasses/cups of water(measured as per serving glasses).


4) Add fresh butterfly pea flowers and boil it medium to high flames.


5) Boil till flowers leave color


see how flower color changed from blue to white after boiling..



6) Strain 1 glass of blue tea in glass.


That's it our plain Butterfly pea tea is ready to serve. This tea is dark blue in color.


7) Now add 1 tsp of honey in a glass


8) Pour 1 glass of  blue tea in it, mix well and squeeze lemon in it. You can see the color change from dark blue to purple color slowly.



  That's it plain and Lemon flavored butterfly pea flower tea is ready to serve.


  
9) Add 1 tsp of sugar in a glass/cup pour blue tea in it and mix well. Dark color quickly changes to light when sugar melts in blue tea. That's it our sugar added butterfly pea flower tea is ready to serve.


 10) Now add 1 tsp of brown sugar in remaining blue tea. Ready to see the magical color changing from dark blue to dark brown 😊.


   11) When brown sugar melt well, strain it into tea glass/cups                

That's it our sugar and brown sugar butterfly pea flower tea is ready to serve.

12) If you want to experiments like me then try this one, squeeze 1 tsp of lemon juice in brown sugar added butterfly pea flower tea see the magic..




See how dark brown color changed to purple color 😍. That's it our 4 varieties of butterfly pea flower tea is ready to serve. Enjoy this herbal Blue Tea hot or warm and stay healthy.


Tips

** I shared 4 varieties of Blue tea, try as per taste.

** Add water by measuring in the serving tea glasses/cups.

** If you want you can remove green stem of flower, as you may feel bitter taste. I do not feel that much bitter so i did not removed it.

** You can boil flowers in water or soak flowers in hot water,(soak in flask so that it will remain hot)

Pachai Sundakkai Thogayal || Diabetic friendly turkey berry thuvayal || Tamil Nadu popular Sundakkai Thogayal

 Pachai Sundakkai thogayal/ thuvayal with step by step pics and tips. It is popular thogayal recipe from Tamil Nadu cuisine. Sundakkai means turkey berries in English, usthikaya in Telugu and kudanekayi in Kannada. Thogayal or thuvayal is tasty appetizer which looks like chutney. We always confuse the difference between thogayal /thuvayal and chutney , thogayal / thuvayal  and chutney is different in taste and texture.

Difference between Thogayal / Thuvayal & chutney

*Thogayal is thick in one consistency, we can have it with plain rice or with curd rice. We use less water or no water while grinding. Ingredients like urad dal, red chillies, mustard and chillies are fried before grinding. Giving tempering to thogayal is optional. We call it as roti pachadi in Telugu. 

*Chutney is thin or running consistency, and mostly we have it with breakfast like idli, dosa or upma. We use water while grinding chutney. 

  Sundakkai taste bitter, but it has many health benefits, it controls diabetes, prevents gas trouble, strengthen bones and many more. I have turkey berry plant in my garden, I prepared this chutney few times, hubby loved it a lot. I experimented it in different ways, but loved this thogayal a lot. Fresh turkey taste bitter, thogayal which i am sharing is not much bitter in taste. Have this thogayal with hot steamed rice and dollop of ghee or with gingelly oil, surely you will love to have it again and again.

                                    Pachai Sundakkai Thogayal

Preparation time  - 10 minutes
cook Time : 15 minutes
Serves : 2

Recipe Cuisine: Tamil Nadu
Main ingredients : Pachai Sundakkai / Fresh turkey berry

Ingredients

Turkey berry - 50 grams

gingelly oil - 2 tsp

mustard seeds - 1/2 tsp

urad dal - 1 tsp

chana dal -1 tsp

curry leaves - 1 sprig (I dint used ** check tips)

red chilli - 3

green chilli -2

fresh coconut - 2 tsp

tamarind- small marble size

hing - 1 pinch

turmeric powder - 1/4 tsp

jaggery - 1/2 tsp

Instructions

1) Fresh turkey berry looks like this.

                               

2)Remove turkey berry heads and wash it well in water.



3) Heat 2 tsp of  gingelly oil or normal oil in a kadai. Gingelly oil gives very aroma and good taste to thogayal.

4) Add 1/2 tsp of mustard seeds fry it on low flames.


5) When mustard seeds starts crackling, add 2 tsp of urad dal fry till changes color. Then add methi seeds, red & green chilli fry well and take it into plate.




6) Crush fresh turkey berry in mortar pestle coarsely, then fry it in kadai on low flames.




7) When white layer formed on turkey berry then switch off the flames.


8) Take fried ingredients into mixer jar, add turmeric powder, hing, coconut pieces, tamarind, jaggery and grind it coarsely.



9) Now add fried turkey berry, salt in the above add some water and grind it finely.


That's it our healthy and tasty pachai sundakkai thogayal is ready to serve. Serve it with hot steamed rice, dollop of ghee and enjoy your meal.


Tips

** By adding fresh coconut and jaggery will reduce bitter taste. If you want thogayal bitter skip adding both.

** Chutney color depends on the variety of red chilli we are using. For video i used Kashmiri red chilli so thogayal color was red.



** crush turkey berry before frying, as it changes color quickly.

** You can also add onions, garlic by frying.

** Add less water to get thick consistency.
