Mor Kali || Mor Koozh || Tamil Nadu traditional Mor Kali recipe

Mor Kali / Mor Koozh with step by step pics and tips(will share youtube video soon). It is traditional Tamil Nadu recipe. It is very soft, melt in mouth and very tasty recipe which can be prepared in less time with less ingredients. Rice flour / rice batter and sour curd are 2 main ingredients to prepare this mor kali. Use bit sour curd to get good taste. We add sun dried chillies/ majjiga mirapakayalu in telugu/ mor molaga in Tamil/ majjigi menishinakayi in Kannada in this mor kali. It adds good taste to it. We can have it as breakfast or snack, i love to have it anytime.

We can prepare mor kali using rice flour or rice batter which is prepared by soaking rice for 2 hours and then grinding it to fine paste. Today i am using rice flour to prepare this mor kali, it tasted very yummy. Do try it once, surely you will love it. You can have it as it or with any pickle, chutney or with any podi. Taking this easy and tasty Mor Kali to FoodieMondayBloghop fb group's #255DahiDelights theme. By this time you are all aware that i am part of this lovely group where we bloggers share recipe for theme suggested by a person in alphabetical order every week. This week theme was suggested by one of my fav food blogger "Poonam Bachhav". She suggested two themes, in that any curd based recipes got high votes, so we bloggers are sharing recipes in which curd is the main ingredient.Today is her birthday "Many more happy returns of the day Poonam🎂".                                                                                   Mor Kali 

Preparation time - 10 minutes
cook time : 10 min
Serves : 2 
Category : Breakfast/snack
Recipe Cuisine: Tamil Nadu
Main ingredients : Rice flour, sour curd

Ingredients

Sour curd - 2 cup
rice flour - 1 cup
salt - as per taste

for tempering

Sesame seed oil  -  2+1 tsp( i used normal sunflower oil as sesame oil not available right now)
mustard seeds - 1/2 tsp
urad dal -1 tsp
curry leaves - 1 sprig
green chili - 3
red chili - 1
sun dried chili - 2+1
hing - 1 pinch

Instructions

1) Take sour curd in bowl, whisk it well. Add 2 cups of water and prepare buttermilk .


2) Take rice flour in a bowl, add whisked curd little by little and mix it well without any lumps. At last add remaining buttermilk and mix well. 




3) Rice + buttermilk mixture should be mixed without any lumps, batter should be very thin.

                                                

4) Take a square or round plate(i used my rectangle cake tin) add 1 tsp of oil, spread it well and keep it aside.


5) Heat oil in a pan, add all the ingredients mentioned in tempering and fry it well.


6) Now add prepared rice & buttermilk batter and mix it well.



7) Mix the above well on low flames by mixing continuously. Batter should become thick quickly, do remember to mix it well without any lumps. Do check the below pics..



8) When the batter starts leaving pan and become thick then switch off the flames.


9) Now transfer the above to previously greased plate /bowl and spread it equally. You can serve as it is or you can serve by cutting it into pieces.


10) Let the above cool for 10 min, apply oil to spoon or flat ladle, press it lightly on the top to get clear texture and cut it into pieces.


Take mor kali pieces out carefully, that's it our Mor Kali is ready to serve. Serve it with any pickle, podi or chutney and enjoy your day.


Tips

** Use sour curd to get good taste.

** If sun dried chili not available skip it.

** Serve it hot as it is or by cutting it into cubes.

Veggie and dry fruit salad with yogurt dressing || Vegetable & dry fruit salad with lemon yogurt dressing

Veggie and dry fruit salad with yogurt dressing recipe with step by step pics, youtube video and tips. Vegetable and dry fruit salad is one of our favorite salad at home. It is creamy, nutty and aromatic with the flavors of Indian spices in it. Believe me it is very filling, nutritious and gives cooling effect to your tummy instantly, i surely can say that you will love to have it regularly after tasting it once.

Whenever i feel my morning breakfast or even my lunch is heavy i prepare this salad. And not only that i love to have it anytime with or without yogurt dressing. We you prepare different salad dressings , yogurt dressing is one of my all time favorite and no need to tell how yummy it taste during summer sizzling hot times. This veggies and dry fruit salad includes different veggies like carrot,cucumber, bell pepper/ capsicum,cabbage, onion, tomato(you can include other veggies of your choice). Dry fruits which i used are just almonds, dry apricot and raisins. You can also add walnuts as per availability, fried peanuts added in it gives good crunchy taste and aroma. Coming to yogurt dressing, i added pepper powder and cumin powder . You can herbs, even olive oil for extra taste. We use all raw veggies in this salad, you do not feel raw kind of taste because of yogurt creamy texture. Taking this healthy, tasty and nutritious vegetable and dry fruit salad with yogurt dressing to Shhhhh Secretly Cooking Challenge fb group started by Priya of Priyas Versatile Recipes and taken further till date by Mayuri di who blogs at Mayuris jikoni. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we both share 2 secret ingredients among us and prepare recipe using it and all other members will guess it. This month theme suggested by Kalyani Sri, who blogs at Sizzlingtastebuds, do check her space for wonderful recipes, bookmarked her sugar free lemon iced tea to try soon. This month i am paired with Priya VijayaKrishnan who blogs at "SweetSpicyTasty", do check her space for traditiaonal tamil nadu recipes and recipes from different regions. Bookmarked her jain falafel recipe to try soon. Priya gave me coriander leaves and peanuts as two secret ingredients, with which i prepared this salad recipe. Both the ingredients added good taste and aroma to my salad. In turn i gave her pepper powder and lemon juice, Priya prepared sweet corn salad - vegan recipe. Do check her space for tasty recipes.

                          Vegetable and dry fruit salad with yogurt dressing 

Preparation time : 20 min
Cook Time : 15 minutes
Serves : 1 bowl
Category : Salad 
Recipe Cuisine: Indian 
Main ingredient: vegetables, dry fruits and yogurt

Ingredients

Onion - 1
tomato - 1
carrot -1 
cucumber - 1 
cabbage - 1/2 cup
capsicum - 3/4 (you can use red , yellow bell pepper's if available)
sweet corn - 1/2 cup
lemon juice - 2 tsp 
Almonds - 10
dry apricot - 4
kismis - 10
peanuts - 1/4 cup


For yogurt dressing

yogurt - 1 cup
salt as per taste
pepper powder - 1 tsp(adjust)
roasted cumin powder - 1/2 tsp
honey - 1 & 1/2 tsp

Instructions

1) Take a cotton cloth or muslin cloth pour yogurt/curd tie it and hang it for 30 minutes to removes excess water from curd.


                   

2) Boil sweet corn in excess water for few minute. Do not overcook, sweetcorn taste well when it is crunchy.



3) Take a pan fry 1.4 cup of ground nuts till it changes and keep it aside.



4) clean veggies in water, cut all the veggies into thin equal strips(julienne cut) and take it into bowl. Add pinch of salt and lemon juice saute everything well, close the lid and keep it aside.

                                     





5) finely chop almonds,dry apricot and keep it aside.



6) remove groundnuts skin and crush it coarsely and keep it aside.


7) Yogurt will be thick now, remove it from cloth and take it into bowl. Add pepper powder, roasted cumin powder, salt, honey and mix everything well.


8) Add chopped dry fruits(almonds, dry apricot, raisins) mix well.


9) Now add finely chopped vegetables, saute everything well. 

                                       

10) Adjust pepper powder and salt according to your taste. At last add crushed peanut and finely saute everything well. 


Our salad is ready, keep salad in fridge for an hour and serve chilled. Decorate salad as per your taste and enjoy.


Tips

** Add veggies according to your taste and availability.

**You can skip dry fruits of your choice, you can also add walnuts .

** Use thick and sweet curd to get creamy texture and good taste.

** You can skip adding honey.

** Serve it cool or as it. 

** You can also add Italian herbs, red chili flakes in it.

Dates and Nuts Ragi malt || Ragi Porridge recipe || Healthy dates and nuts finger millet drink

Dates & nuts Ragi Malt with step by step pics, tips and youtube video . Hai friends how are you all doing? Hope you are all safe and healthy. Today's recipe is one of my favorite from my childhood, which i regularly prepare at home. We can prepare sweet and savory, today i am sharing the sweeter version. Ragi malt/ Ragi porridge is healthy drink that is prepared by boiling ragi in water or milk, it is very healthy for both kids and adults of any age.

Ragi is also known as finger millet, it increases bone strength, good for diabetic people, it is rich in iron, calcium and amino acids which is good for growing kids. It is very easy to prepare to this ragi malt using ragi powder, you can also prepare ragi powder by frying ragi and powdering it in mill. You can also prepare it with sprouted ragi flour. Will share how to prepare sprouted ragi flour recipe soon. Instead of giving your kids store bought drink powders, prepare ragi malt for you and your kids. It is very healthy for growing kids, it increase bone strength. My mom use to prepare this ragi malt daily in the morning and evening after coming schools.                                                             Dates & nuts Ragi Malt

Preparation time - 20 minutes
Serves : 2 
Category : Beverage
Recipe Cuisine: Indian 
Main ingredients : Ragi flour / finger millet flour , dates

Ingredients

Ragi flour - 2 tsp
dates - 7
cashew nuts - 10
almonds - 10
raisins - 5 to 10 (optional)
milk - 2 glasses
jaggery or brown sugar or sugar - 1/4 to 1/2 cup( add according your taste)
elachi powder - 1/2 tsp



Instructions

1) Boil 2 cups of milk, soak dates, cashew nuts/ kaju and badam/ almonds in hot milk for 10 milk or powder almonds, dates and soak dates in hot milk.


2) Grind the soaked dates, cashew nuts and badam coarsely(if you serving it to toddlers or elders(old age ppl you can prepare fine paste) and keep it aside.




3) Take 1/2 glass of water in a glass or cup, add 2 tsp of ragi flour in it. Mix it well without any lumps and keep it aside.



4) Boil 2 glasses of water in a pan or vessel, add above prepared ragi mixture in it and boil it on low flames till it becomes thick. Mix it continuously so that we will get smooth texture without any lumps. (** check tips)


5) Now add prepared dates and dry fruit paste,boiled milk, jaggery or sugar or brown sugar (add according to your taste), elachi powder and mix everything well.





6) Mix the above well without any lumps and boil it for 2 minutes on low flames.



7) That's it our ragi malt is ready decorate it with some chopped dates and dry fruits. You can serve it hot or cool, ragi malt turns thick after some time. Add boiled milk or boiled water and serve. I always serve hot with some chopped almonds and kismis/raisins on it.


Tips

**Do not add ragi flour directly while boiling water, it will becomes lumps and do not cook well.

** You can mix ragi flour and water and then boil it directly, but i prefer this method.

** Use jaggery or brown sugar or sugar according to your availability. Adding jaggery gives different taste when compared to sugar and brown sugar. I prefer adding brown sugar.

** Adjust sweetness according to your taste. 

** You can skip adding dry fruits,dates. You can prepare plain ragi malt too.

** Do not boil it high flames, keep mixing it while boiling to get smooth lumps free texture.
