Homemade chocolates - Diya and cracker shape homemade chocolates with yummy stuffing

 Homemade chocolate recipe - Diya, cracker and other shape stuffed homemade chocolate recipes. Who d't like chocolate, I think chocolates are only one food item that everyone loves to have it. If you are in good mood or sad mood or in angry chocolates are the best companion to lift our mood. Homemade chocolates are very special, that too when these chocolates stuffed with your kids favorite chocolate balls, gems and moms favorite dry fruits, they just taste heavenly. Today I am sharing diya, cracker and shape chocolates, we will get different shape chocolate molds in markets that too in less price. We can prepare chocolates using cocoa, chocolate powders or by using chocolate compounds. Today I am using dark, milk & white compound chocolates. I prepared these chocolates for last year Diwali festival, so I used diya and cracker shape molds you can use molds of your choice. Taking this Homemade chocolates to  FoodieMondayBloghop fb group's #296FamilyFavorite theme. By this time you are all aware that I am part of this lovely group where we bloggers share recipe for theme suggested by a person in alphabetical order every week. This week I got chance to suggest theme, I suggested to prepare any recipe that is our blogger friends family favorite. Waiting for their yummy yummy favorite recipes. Chocolates are my hubbies favorite, so I thought to share this recipe with you all, hope you all like it.

                          

                                      Homemade Chocolates

Preparation time - 10 minutes
cook time : 20 min
Serves : 30 + chocolates

Main ingredients : Compound chocolate

Ingredients

dark compound chocolate - 200gms
milk compound chocolate - 200gms
white compound chocolate - 150gms
chocolate shots - 10
gems - 15
color balls - 1/4 cup
chopped nuts - 1/4 cup (used cashews, almonds, black raisins)
Oil - 1 tsp(optional)

others

silicon molds
plastic molds -- use any shapes as per availability
cone bags -2 (for white & dark chocolates) or you can use spoon




Instructions

1) If you are using plastic molds grease it with oil or ghee, so that chocolates comes out easily.

2) Finely chop dark and milk chocolates in a bowl.

3) Now we have to start double boiling our compound chocolate, for this take container add water in it, make sure that water level does not touch chocolate bowl. 

4) Later place finely chopped compound chocolate bowl on it, boil water on medium flames, mix it continuously till chocolate melts.

5)When chocolate melts perfectly without any lumps, pour it in cone bag. For this take a tall glass, place cone bag in it and then pour melted compound chocolate in it, later tie it with rubber band. You can also use spoon to spread chocolate, but cone bags makes our work neat and easy. 

6) Now spread 1/2 portion of mold with melted  chocolate and then place any stuffing's like chopped dry fruits or gems or shots of your choice, later cover it with chocolate. If you want you can spread some color balls on it, to make chocolates more attractive.

7) Repeat the same process for white chocolate too. 

8) Keep these molds carefully in refrigerator for 1 hour or till they set. 

9) Later demold chocolates by tapping backside of mold, they will come out easily.

                                

10) That's it our homemade chocolates are ready, you can gift these chocolates by just wrapping it using silver foil or using any chocolate gift wrappers.



Tips

** You can use any shape molds to prepare chocolates.

** It is very easy to demold chocolates in silicon molds.

** You can melt chocolate in oven easily.

** If you d't have cone bag just use small covers or even spoon. Cone bags make our work easy and neat so I always prefer using cone bags.

** You can also prepare these chocolates without stuffing too.

** Add any stuffing of your choice and availability.

** Add heart shape sprinkles or color balls on it to attract kids.

Mango matka kulfi || Summer special mango matka kulfi without adding corn flour and condensed milk

 Mango matka kulfi is super delicious, creamy, rich frozen dessert. Summer means mango season, mangoes are favorite to almost everyone.  Kulfi is Indian ice cream that is prepared using cone shape molds. Kulfi that is prepared in matka - earthen pot is called matka kulfi. We can different varieties of kulfis & matka kulfi's, as summer started today I am mango matka kulfi without using condensed milk and cream. This is my version healthy  mango matka kulfi which my family loves a lot.  I did not used corn flour and condensed milk in today recipe. We can use corn corn flour or custard powder to get thickness to ice cream, do check out full recipe for my version. We prepare many recipes using raw mango and ripped mangoes. In that mango phirnimango ricealmonds mango sandeshmango cake are my all-time favorite recipes.



 
Event : Shhhhh Secretly cooking challenge

Taking this cool cool mango matka kulfi to "Shhhhh Secretly cooking challenge" fb group started by Priya, and taken further till date by Mayuri di, I bookmarked her baked apple to try soon. Do check her space for wonderful recipes. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it.

                              


This month theme was suggested by Pavani who blogs at "Pavaniskitchen", do check out her easy oreo ice cream recipe. My partner for this frozen treats theme is "Renu" who blogs at "cookwithrenu", do check out her space for wonderful recipes from different regions. Renu gave me sugar and milk as secret ingredients inturn i gave her kesar and milk. I bookmarked her no churn coffee almond ice cream, and her latest farali aloo sabudana papad recipes to try in this summer. 

                                Mango Matka Kulfi 

Preparation time : 10 minutes
Cook Time : 20 minutes
Serves : 6 matka kulfis
Category : Desserts
Recipe Cuisine: Indian
Main ingredients :Mango

Ingredients

Milk - 500 gms
Mangoes - 2 ( I used banaganapalli variety)
saffron/ kesar - 1/2 tsp
sugar - 1/2 cup
milk powder - 1/2 cup


*For grinding 

almonds - 15
cashews - 15
cardamom powder - 1 tsp
instant oats - 2 tsp

*to garnish 

finely chopped pistachios - 2 tsp
finely chopped almonds - 2 tsp

Instructions

1) Boil 1/2 liter full fat milk in a heavy bottomed pan on low flames, stir it middle till milk reduce to half.

 2) Mean while grind almonds, cashew nuts, oats and elachi to fine powder and take it into plate.

3) Add 2 to3 tsp of hot milk in saffron, mix it well and keep it aside.

4) Now add sugar, milk powder, above prepared powder in milk mix everything well without forming any lumps. When this mixture becomes thick switch off the flames and let it cool to room temperature.

5) When the above mixture becomes thick take it into mixture jar, to this add scooped or chopped mango pieces and grind it fine paste. 

6) Take this mango mixture in a wide bowl to this add saffron mixed milk and everything well. This mixture will be very creamy and thick. 

7) Now pour this mango cream in matka, garnish it with finely chopped pistachios and almonds. Now close the matka with silver foil or butter paper tightly by using rubber bands.

8) You can also pour mixture in kulfi molds too, if you do not have matka's or kulfi molds you can use any air tight containers too.

9) Now keep these earthen pots & kulfi mold or containers in refrigerator for 6 hrs. This time depends on your fridge check it before serving.

10) That's it our mango matka kulfi is ready, serve this immediately and enjoy with your friends and family. Hope You liked this recipe, do it try and share your views...

Pudina Rasam || Mint Rasam || Pudina charu is very healthy, tasty, refreshing and aromatic rasam. As this rasam contains mint leaves, cumin seeds, pepper and some other healthy ingredients, it gives good soothing effects to our throat. Now a days because of weather change many of us suffering from cough, cold, sour throat problems . This rasam is best remedy to cure common seasonal health issues. Pregnant ladies who are suffering from vomiting and  indigestion problems we feel refreshing & good after having this pudina rasam. This is South Indian rasam recipe which we can have it with hot steamed rice or as soup. I just love to have it with hot idli's and dollop of ghee, I know I sound crazy sometimes 😎. Trust me friends try idli and rasam combination, mainly mint rasam surely you will love it😋.  We south Indians love chutney's , podis and rasam recipes a lot. This mint rasam is one such variety which gives very refreshing taste and feel whenever you have it. We can prepare this rasam by adding cooked toor dal or without it too. Today I am sharing pudina rasam recipe without using cooked dal, it is quick version. I always keep some Rasam powder handy in my pantry, but I love to prepare fresh rasam powder if have time.

                                    Mint Rasam /Pudina Charu

Preparation time - 10 minutes
cook time : 20 min
Serves : 1 bowl
Category : Rasam
Recipe Cuisine: South Indian
Main ingredients : Mint/Pudina

Ingredients

*To Prepare Rasam powder

Toor dal - 1 tsp
cumin seeds - 1.5 tsp
black pepper corn - 1/2 tsp
red chilli - 2 
fenugreek seeds - 1/8 tsp or 1 small pinch(optional)

* To Prepare mint masala paste

Mint leaves - 3/4 cup or handful
tomato -1 
tamarind - small lemon size

*For tempering

ghee - 1 tsp
mustard seeds - 1/2 tsp
cumin seeds - 1 tsp
curry leaves - 1 sprig
red chilli -1 

*others

oil -1 tsp
salt - as per taste
coriander leaves - 1/4 cup (finely chopped)
tomato -1 
curry leaves - 1 sprig
turmeric powder - 1/4 tsp
water - 4 to 5 cups(adjust)

* For garnishing 

pudina leaves - 10(adjust)

Preparation 


1) Dry fry toor dal in a pan, when it just starts changing color add cumin seeds, pepper corn, red chilis, fenugreek seeds and fry well on low flames till you get nice aroma.

2) Take the above in a plate, let it dry to room temperature. Then grind it fine powder and take it into cup and keep it aside.

3) Now grind washed mint leaves, finely chopped 1 tomato, washed tamarind to fine paste(without adding water) and take it into cup.

4) Later heat 1 tsp of oil in a pan  to this add finely chopped 1 tomato fry till it becomes bit mushy.

5) Now add prepared mint tomato puree, turmeric powder, required amount of salt and cook it for few seconds.

6) Later add 4 to 5 cups of water, 2 tsp of prepared rasam powder, 1 sprig curry leaves, finely chopped coriander leaves and cook it on low to medium flames till you get nice foam on rasam(Do not over cook rasam). It may take 3 to 5 min(adjust water and rasam powder as per your consistency and taste). If you want this rasam spicy you can add 1/4 tsp of red chilli powder too. 

7) Mean while prepare tempering, for this heat ghee in a small pan to this add mustard seeds when starts crackling add cumin seeds. Fry it on low flames later add curry leaves, red chilli pieces fry it for few seconds.

8) At last add tempering on rasam and finally garnish it with some chopped fresh mint leaves on top.

That's is very refreshing, aromatic and healthy mint rasam / pudina charu is ready serve. Serve hot with some papads and enjoy. 

Tips 

** You can use rasam powder instead of preparing it freshly. Freshly prepared rasam powder gives good taste and aroma to rasam.

** Adding readymade rasam powder gives different taste to pudina rasam.

** You can also add toor dal cooked water (kattu in Telugu) along with some toor dal, it gives bit different taste and thick consistency to rasam .

**In order to enjoy aroma of mint, I did not added hing in rasam, if you want you can add it.

**As we added toor dal in rasam powder it gives thick consistency to rasam.

** Add rasam powder in small quantity, do not add all at once. As it makes your rasam so strong in taste and gives burning effect in your stomach. Save remaining rasam powder in air tight container , dry container &  use it later.

Onion Tomato Chutney || Ullipaya tomato pachadi || How to prepare onion tomato chutney for breakfast & rice

 Onion tomato chutney || ullipaya tomato pachadi is one of the favorite chutney recipe in tons of varieties of chutney's.  And it taste different in different house, though the ingredients used in it looks common, but cooking methods and tastes vary. Today I am sharing the recipe which I regularly prepare at my home. We Indians mainly South Indians need podi and chutney's for breakfast, for lunch and for dinner 😍. Are you thinking when you d't want it 😉, frankly we(I) want both podi or chutney in my plate all time. This onion tomato taste spicy and very taste, you can have it with breakfast like any variety idli, dosa, upma etc.. and also taste yummy with rice. This chutney texture will be coarse not too smooth. You can grind it in motar pestle or in mixer jar.

                                 Onion Tomato Chutney  

Preparation time - 10 minutes
cook time : 20 min
Serves : 250 gms
Category :Chutney 
Recipe Cuisine: Andhra
Main ingredients : Onion & tomato

Ingredients 

Onions - 4
Tomato - 2 
red chilli - 2
green chilli - 3
tamarind - small marble size
garlic - 4
coriander leaves - 1 tsp
turmeric powder - 1 pinch 
salt - as required
oil - 2 tsp

Tempering (optional i dint added)

oil- 2 tsp
mustard seeds - 1/2 tsp
red chilli -1 
curry leaves - 1 fig

Instructions

1) Heat  1 to 2 tsp of oil in a wide pan, to this add roughly chopped onions, salt, green and  red chillies.

2) Fry the above well for few seconds and then close the lid, cook this for a minute.

3) Now add roughly chopped onions, tamarind & garlic fry everything well.

4) Close the lid and cook till tomatoes becomes mushy.

5) Later add finely chopped coriander leaves, required amount of salt, turmeric powder mix everything. Close the lid cook few more minutes.

6) Let the above completely, then grind it coarsely without adding water.

7) Take the above in a bowl, to this you can add tempering. Tempering is optional, if you want to add tempering heat oil in pan to this add mustard seeds. When it starts crackling add red chillies curry leaves fry for few seconds and then add in chutney. 

That's it our chutney is ready to serve.
