Schezwan Chutney || Indo- Chinese Schezwan chutney with step by step pics and tips, it is very spicy and tasty recipe. We all love schezwan sauce and chutney a lot, it is very easy to prepare at home with easily available ingredients. We use schezwan chutney in many recipes like noodles, fries and to prepare many rice items. We always confuse the difference between schezwan chutney and schezwan sauce. The main difference is in its texture, taste and some ingredients. Use less spicy variety like byadigi variety red chilli, if you use Guntur red chilli chutney tastes very spicy that we cannot eat. If you like chutney very spicy use 3/4 : 1/2 of byadigi : guntur red chillies. Do check many chutney recipes in my blog & youtube channel surely you will like it.

Taking this hot fiery Indo- Chinese schezwan chutney to "Shhhhh Secretly cooking challenge" fb group started by Priya, and taken further till date by Mayuri di, I bookmarked her baked apple to try soon. Do check her space for wonderful recipes. We completed recipes from all states from A to Z, so now admin team and members decided a new interesting way for monthly theme that is - one group member in alphabetical order will suggest theme. Later admin team will pair interested members, then we share 2 secret ingredients among us and prepare recipe using it and all other members will guess it.
This month theme was "Priya VJ" who blogs at "sweetspicytaste". Do check her space for wonderful and traditional recipes from TamilNadu cuisine. I bookmarked her Mexican bean rice recipe to try soon. This month I am paired with "Mayuri" who blogs at "Mayuris-jikoni", she is very talented chef, she is like my teacher who always guide me and inspiration to me. I love her write up a lot, for theme she gave ginger and oil as secret ingredients and in turn I gave garlic and cumin seeds, using these 2 ingredients, she prepared her mom's favorite Garlic and tomato chutney. Schezwan Chutney

Ingredients
Byadigi red chillies - 25
garlic finely chopped - 1/2 cup
ginger finely chopped - 2 tsp
coriander stalks - 1 tsp
oil - 1/2 cup (adjust more as per your taste)
sugar - 3/4 tsp
vinegar - 3 tsp
pepper powder -1 tsp
salt - as per taste
Instructions
1) Soak byadigi red chillies in 1 to 2 cups of hot water for 1 hour.
2) Mean while peel ginger and garlic skin. Chop both ginger, garlic finely and keep it aside. Also finely chop coriander stalks and keep it aside.
3) After soaking red chilli size will double and becomes smooth. If not then cook it on low flames till it becomes smooth and let it cool to room temperature. Later take red chillies in a mixer jar grind it slightly coarse paste without adding water. ( Save red chilli soaked water).
4) Heat 1 cup of oil in a wide pan, to this add finely chopped garlic and ginger fry it on low flames till it changes color.
5) Now add prepared red chilli paste,1/4 cup red chilli soaked water to the above and mix well.
6) Later add salt, sugar to the above and mix everything well. Close the lid cook in on low flames till oil oozes out.
7) Now add vinegar, soya sauce, pepper powder mix everything well. and cook this on low flames for 5 min.
8) Open the lid mix everything well, taste it once if need adjust salt. That's it our Schezwan chutney is ready, let it cool to room temperature. Later store it in dry and air tight container.
